CARROT OSSO BUCCO
In Richard Blais's playful vegan take on osso buco (braised veal shanks), he braises very large pieces of carrots in red wine and mushroom broth until tender. Ground dried porcini mushrooms give the dish rich, meaty flavor. This recipe comes from a F&W email.

- Preheat the oven to 350°. In a large, deep ovenproof skillet, bring 1 inch of water to a boil. Add the pearl onions and cook for 1 minute. Drain and trim the onions, then peel them. Wipe out the skillet.
- Return the skillet to the heat and add 1 tablespoon of the oil. Add the carrots in a single layer, season with salt and pepper and cook over moderate heat, turning, until browned, about 5 minutes per side. Add the pearl onions, sprinkle with the curry powder and cook, stirring a few times, until fragrant, about 1 minute. Add the wine and simmer over moderately high heat for 3 minutes. Add the porcini powder and mushroom broth and bring to a boil. Transfer the skillet to the oven and braise the carrots for 1 hour and 15 minutes, turning once, until tender.
- Season the sauce with salt and pepper. Spoon the carrots, onions and sauce into shallow bowls. In a bowl, toss the parsley with the lemon juice and the remaining 1 teaspoon of oil and season with salt and pepper. Scatter the parsley leaves over the carrots and serve.
- MAKE AHEAD The Carrot Osso Buco can be refrigerated overnight. Reheat gently. SERVE WITH Soft polenta or celery root puree.

TRADITIONAL OSSO BUCO
This recipe is a traditional but simple way of cooking Osso Buco (veal shanks). The white wine is a must in this dish.

- Dust the veal shanks lightly with flour. Melt the butter in a large skillet over medium to medium-high heat. Add the veal, and cook until browned on the outside. Remove to a bowl, and keep warm. Add two cloves of crushed garlic and onion to the skillet; cook and stir until onion is tender. Return the veal to the pan and mix in the carrot and wine. Simmer for 10 minutes.
- Pour in the tomatoes and beef stock, and season with salt and pepper. Cover, and simmer over low heat for 1 1/2 hours, basting the veal every 15 minutes or so. The meat should be tender, but not falling off the bone.
- In a small bowl, mix together the parsley, 1 clove of garlic and lemon zest. Sprinkle the gremolata over the veal just before serving.

Steps:
- Peel and wash the carrots but leave them whole Melt 80g of the butter in a frying pan and saute the carrots until brown, turning regularly.
- This will take 10-15 minutes.
- Take the carrots out of the pan and add the onion and half of the remaining butter.
- Saute for a couple minutes and then add the passata, celery, garlic and the bouquet garni.
- Reduce the heat and simmer gently for a couple minutes, then add the orange.
- Season with salt and pepper and simmer for 30 minutes.
- Return the carrots to the pan and cook, covered, on the lowest heat possible for an hour and a half.
- Stir occasionally.
- When they are easily pierced with a sharp knife, remove the carrots and set aside.
- Reduce the sauce until thick.
- Stir in the remaining butter and then pour all the sauce over the carrots and sprinkle with parsley.
- Serve immediately.

AMARETTO AMARONE OSSO BUCCO POT ROAST

- For the osso buco: Put the flour in a large shallow platter and season it with a fair amount of salt and pepper. Get in the habit of always tasting your flour; once it coats the veal it is harder to adjust the seasoning. Dredge the veal shanks in the seasoned flour and then tap off the excess (extra flour will burn and make the dish off-tasting).
- Heat a large Dutch oven over medium heat and hit it with a 3-count drizzle of oil. Add the butter and swirl it around the pan to melt. Sear the veal shanks, turning carefully with tongs, until all sides are a rich brown caramel color. Drizzle with a little more oil, if needed. (Do this in batches if the shanks are big and look crowded in the pot.) Remove the browned veal shanks to a side plate. There will be a lot of flavor left over in the bottom of the pot. You''re going to use that to create your sauce.
- Preheat the oven to 375 degrees F.
- Using the same pot, sautee the onion, celery, carrots, lemon zest, garlic, bay leaves, and parsley over medium heat. Cook the vegetables down until they start to get some color and develop a deep, rich aroma. Season with salt and pepper; add a little oil if needed. Nestle the veal shanks back in the pot. Pour in the amarone wine and let it simmer down for 20 minutes, until the wine has reduced by half. Reducing is key for intense flavor. Add the beef broth and tomatoes and stir everything together. Cover the pot and put it in the oven. Braise for 1 and a 1/2 hours. Then remove the cover and continue to cook for another 30 minutes. The sauce should be thick and the veal tender and nearly falling off the bone.
- Remove bay leaves.
- For the gremolata: F, finely chop and smashe the anchovy fillet roughly chop the pine nuts, dried cranberries and combine.anchovy, Combine this with the and garlic together in a mini chopper or with a mortar and pestle. Fold that into the orange zest and parsley. Scatter the gremolata over the Osso Bucco before serving.

- Place the rosemary, thyme, bay leaf and cloves into cheesecloth and secure with twine. This will be your bouquet garni.
- For the veal shanks, pat dry with paper towels to remove any excess moisture. Veal shanks will brown better when they are dry. Secure the meat to the bone with the kitchen twine. Season each shank with salt and freshly ground pepper. Dredge the shanks in flour, shaking off excess.
- In a large Dutch oven pot, heat vegetable oil until smoking. Add tied veal shanks to the hot pan and brown all sides, about 3 minutes per side. Remove browned shanks and reserve.
- In the same pot, add the onion, carrot and celery. Season with salt at this point to help draw out the moisture from the vegetables. Saute until soft and translucent, about 8 minutes. Add the tomato paste and mix well. Return browned shanks to the pan and add the white wine and reduce liquid by half, about 5 minutes. Add the bouquet garni and 2 cups of the chicken stock and bring to a boil. Reduce heat to low, cover pan and simmer for about 1 1/2 hours or until the meat is falling off the bone. Check every 15 minutes, turning shanks and adding more chicken stock as necessary. The level of cooking liquid should always be about 3/4 the way up the shank.
- Carefully remove the cooked shanks from the pot and place in decorative serving platter. Cut off the kitchen twine and discard.
- Remove and discard bouquet garni from the pot.
- Pour all the juices and sauce from the pot over the shanks. Garnish with chopped parsley and lemon zest.
LAMB BRASATO OSSOBUCO
Steps:
- In a large stainless steel bowl, coat lamb shanks with some oil, salt and pepper. Bring the remaining blended oil to 385 degrees F in a rondo or Dutch oven. Preheat the oven to 275 degrees F.
- Sear both sides of the lamb shanks until dark golden brown. Add carrots, celery and onions and cook until caramelized. Add garlic and cook for 10 more minutes. Deglaze the pan with red wine, adding it and stirring with a wooden spoon to scrape the bottom of the rondo. Cook, letting the alcohol evaporate, about 8 minutes. Add the crushed tomatoes, veal demi and chicken stock. Salt and pepper to taste.
- Place lamb shanks in a roasting pan, then add vegetable mix over top. Add bay leaves. Cover with a layer of parchment paper and then a layer of aluminum foil. Bake for 2 1/2 hours. Let it rest, covered, for 30 minutes, then strain the sauce with a fine chinois.
- Place 1 ladle of the Risotto in the center of a plate. With the back of the ladle, press down to create space for plating lamb shank vertically. Plate lamb shank. Ladle the braised lamb sauce around the Risotto. Finish with a drizzle of 1 tablespoon Gremolata over top of lamb. Repeat to make 3 more plates.
- Start by making saffron stock, combining chicken stock with 1 sachet saffron in a pot. Bring to a simmer, then turn off the heat and set aside for later.
- On medium-high heat, using a copper risotto pan, add half of the butter and the rice. The goal here is to toast outer shell of rice, but not brown it. This technique allows rice to have a more al dente texture when the cooking process is complete. Using a wooden spoon, stir the rice around the pot, keeping it moving at all times. Add onion and cook until they turn translucent and fragrant. Your rice should be seared but not browned. Deglaze with white wine and cook off alcohol. Add saffron stock 1 cup at a time. Cook, constantly stirring the risotto with a wooden spoon and scraping the bottom of the pot so nothing sticks to it. (The idea behind constant stirring is so all the rice cooks evenly; otherwise the rice at the bottom of the pan is at a hotter temperature and higher humidity, thus, it will cook faster than the rice on the surface of the pot. Add stock as needed. You want your risotto to be al dente, so make sure that when it comes to al dente you have as little liquid in the mix as possible.) The consistency you are looking for is that the risotto will barely run off the end of the wooden spoon. When the saffron stock is absorbed, finish with the Italian technique called "manteca" ...meaning to finish with remaining butter and Parmesan.
- Heat up a saucepan on low heat and add oil. Stir in garlic and simmer for 1 minute. Remove from heat and stir in parsley, lemon and orange zests. Season with salt and pepper.
OSSOBUCCO

- Soak the porcini for at least 15 minutes in 200ml/7fl oz boiling water. Don't remove the membrane that holds the veal together, but trim off any obviously fatty or lumpy bits. Dust both sides of the meat with the seasoned flour.
- Heat the butter and oil in a very large flameproof sauté pan or casserole over a medium-high heat. When the sizzling stops, put in the veal and fry the slices for 2-3 minutes on each side until golden brown. Transfer the meat to a plate.
- Replace the pan over a low to medium heat and tip in the carrot and celery. Gently fry for 5 minutes until the vegetables have slightly softened, then raise the heat and pour in the wine. Bubble the wine furiously for 2 minutes, then remove the pan from the heat.
- Fish the softened porcini out of the soaking liquid, squeeze out the excess moisture and reserve it. Chop the porcini roughly and add to the sauté pan, together with the soaking liquid. Add the sugocasa or passata and stock, then stir.
- Put the veal back into the pan in a single layer, cover and bring to the boil. Immediately reduce the heat and simmer very gently for 2 hours, turning the veal slices halfway, until the meat is very soft. The liquid should reduce to a thickish sauce, but if it's still thin after 1¼ -1½ hours, half remove the lid to allow evaporation. Serve with the grain 'risotto' (see link, right).

- 4 hours before cooking or the night before rub the French Dry Rub into the shanks, both sides.
- In a large dutch oven over medium high heat add the oil and sear the shanks on both sides.
- Reduce heat to medium and add the carrots, celery, and onions and cook, as is, for 5 minutes.
- Now add the tomatoes, broth, wine and pepper and fresh herbs.
- Bring to a boil, cover and reduce to a simmer for 30 minutes.
- When done remove shanks to individual plates along with the vegetables and over high heat quickly reduce the liquid.
- Pour this over top.
- I serve this with a Cesar Salad, Garlic Bread and roasted potatoes.
- Don't forget the wine!
