Orzo With Spinach, Tomatoes and Lemon image

An easy orzo side dish to serve with grilled fish or chicken. Or just serve it as is for a simple, light pasta salad.

Number Of Ingredients 9

1 cup orzo pasta
1 (5 ounce) bag baby spinach leaves
2 garlic cloves
1 cup cherry tomatoes
1 tablespoon lemon zest
3 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook Orzo according to package directions, until just al dente.
  • Mince garlic, add to lemon juice, salt and pepper in small bowl.
  • Whisk olive oil into lemon juice mixture.
  • Drain orzo, place in large bowl.
  • Add spinach leaves and cherry tomaotes to orzo, toss.
  • Add olive oil/lemon juice dressing and toss to coat.
  • Serve immediately or chill for later.

A tiny rice-shaped variety of pasta makes this dish almost like risotto. It's quick, healthy, filling and suitable for vegetarians

400g orzo pasta
2 tbsp olive oil
1 celery heart, chopped
1 red onion , chopped
3 garlic cloves , chopped
2 x 400g cans cherry tomato
250g baby spinach
10 black olives , halved
small handful dill , chopped
small handful mint , chopped

Steps:

  • Cook the orzo following pack instructions. Drain, rinse under cold water, drain again and toss with half the olive oil.
  • Meanwhile, heat the remaining oil in a large sauté pan. Add the celery, onion and some seasoning, and cook for 8 mins until soft. Add the garlic, cook for 1 min, then tip in the cherry tomatoes and simmer for 10 mins. Add the spinach, cover with a lid to wilt the leaves, then add the orzo, olives, dill and mint. Season and serve.

10 ounces spinach
1 pint cherry tomatoes, halved
2 lemons, zest of
1 1/2 cups orzo pasta, cooked
1 tablespoon olive oil
24 basil leaves, thinly sliced
salt and pepper

Steps:

  • Working in small piles, shred the spinach into ribbons.
  • Place in the bottom of a medium sized mixing bowl.
  • Add the tomatoes, along with the lemon zest.
  • Add the hot orzo to the bowl.
  • The heat of the pasta will wilt the spinach and warm the tomatoes.
  • It will also release the flavor and oils from the lemon zest.
  • Drizzle olive oil over the pasta and toss to combine.
  • Add the basil, salt and pepper and toss again.
