Steps:
- Cook pasta according to package directions until al dente (tender but still firm). Drain.
- Toss with 1/2 teaspoon olive oil; set aside.
- Heat remaining 3 tablespoons olive oil in large skillet over medium heat until hot. Add garlic; cook and stir 2 to 3 minutes or until golden.
- Add shrimp; cook and stir 3 to 5 minutes or until shrimp are opaque (do not overcook).
- Stir in pasta, tomatoes, cilantro, parsley and lemon juice continue to cook until all is heated through.
- Sprinkle with feta cheese. Season to taste and serve.

Our favorite pasta salad chock-full of things we love! Can be made without the shrimp, but with the shrimp you've only got to add a loaf of crusty bread for a perfect make-ahead summer meal. Cooking time includes 1 hour cooling and 1 hour chilling time.

Steps:
- Blend first 5 ingredients in a blender or food processor briefly, just until the sun-dried tomatoes are coarsely chopped.
- Add this dressing to the drained HOT pasta in a large bowl.
- Toss to coat well.
- Cool, stirring occasionally.
- Add remaining ingredients.
- Salt and pepper to taste.
- Cover and chill.
CREAMY ORZO W/FETA & SUN-DRIED TOMATOES

- Bring broth to a boil in a small saucepan and stir in orzo.
- Return liquid to a boil.
- Cook orzo, uncovered, stirring occasionally until liquid is absorbed, approximately 9 minutes.
- Remove saucepan from heat.
- Stir tomatoes and feta into orzo, mixing until feta melts slightly.

- Convection Oven Preparation Pre-heat Oven to 350 degrees on any setting. (If roasting meat or poultry, use whatever function the meat uses, if cooking alone, you may use bake) Use an oven and stove top proof pan (Dutch Oven). Heat Olive Oil in pan over medium heat...saute onions and garlic until just soft. Add 1/2 cup of liquid, pasta and seasoning...stir over medium heat for about 5 minutes. Add rest of ingredients and bring to a boil. Cover and cook in oven for 30 minutes...uncover and stir at 25 minutes...continue cooking uncovered. Remove from oven and fluff with a fork...be sure liquid has been absorbed...add garnish if desired.

- 1. Cook orzo according to package directions. Rinse and set aside.
- 2. In a large bowl, toss orzo, spinach, sun-dried tomatoes, onion olives and artichoke.
- 3. Pour 1/2 of the artichoke liquid over the salad, season with salt and pepper, toss again. (You can add more liquid to taste.).
- 4. Sprinkle feta over salad and lightly toss.

CREAMY ORZO WITH SPINACH AND SHRIMP
A nice alternative to the traditional risotto, and much easier too! It was so easy to make with any add-in's you have on hand.

Steps:
- Melt butter in a large skillet.
- Add garlic and sauté for 2 minutes.
- Add orzo and sauté for 3 minutes, stirring occasionally.
- Add chicken broth and water, bring to a boil.
- Once at a boil reduce heat to a simmer uncovered.
- Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
- Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
- Let this simmer for another 5 minutes then add the spinach and stir.
- Cook until the liquid is fully absorbed (about another 15 minutes).
- In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
- Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!
MEDITERRANEAN PASTA WITH SHRIMP
I love this because it has so many of the things I like best about Mediterranean food in it. It makes for a great meal.

- Peel shrimp and devein; keep chilled until needed.
- Chop sun-dried tomatoes into small pieces; place in a heat-proof bowl and cover with boiling water; allow to rest until softened, 15-30 minutes.
- Cook pasta until al dente, 8-10 minutes, or according to package directions; start to prepare vegetables and shrimp just as pasta cooks.
- Drain softened sun-dried tomatoes from water and reserve the soaking liquid (you may need this later).
- In a large deep skillet, heat olive oil on medium heat, and add garlic, pepper flakes (if using), and oregano, just until fragrant.
- Add the artichokes, sliced red peppers, chopped olives, and softened tomatoes; season with salt and pepper.
- Add the wine, reduce heat to low, and cook, stirring occasionally, for 3-5 mintes.
- Check your pasta, taste it to see if it is al dente; drain when ready, and toss with a little extra virgin olive oil if desired.
- Add the shrimp and the feta to the pan, and cook over moderate heat until the shrimp curl and turn pink, several minutes.
- Sprinkle the dish with parsley and add the juice of the lemon, being careful not to add the seeds.
- Fold in the cooked pasta, tossing to mix, until everything is evenly blended.
- Add some of the reserved cooking liquid from the sun-dried tomatoes if the pasta seems too dry, use your own judgement as to how much you like to add.
- Serve hot, with other foods if desired.
ORZO WITH SUN-DRIED TOMATOES AND FETA CHEESE
This makes a nice side dish, lunch, or cold salad to bring to a picnic or potluck. I had some "tri-colored" orzo on hand when I made this, which added alot of nice color to this already flavorful dish. I think this tastes great warm, cold, or at room temp.

- I like whole sundried tomatoes that are NOT packed in olive oil.
- To"plump" the tomatoes, bring 1/4- 1/2 cup water to a boil, add tomatoes, and let steep for about 10 minutes.
- Drain any excess water, and chop tomatoes into bite size pieces.
- Cook orzo according to package directions, drain, and toss in a large bowl with a drizzle of extra virgin oilve oil, garlic and oregano.
- Let orzo cool for a bit before adding other ingredients.
- Next add sundried tomatoes, black olives, roasted red peppers, salt, pepper and feta cheese.
- Combine well.
- Garnish with parsley, if using, and serve at room temperature.

- In a large serving bowl add the marinated artichokes, sun-dried tomatoes, tomato paste, basil, and 2 Tbs olive oil, mix until combined
- Bring a large pot of salted water to a boil, add the orzo and cook according to “al dente” directions (about 9 minutes). When the orzo is cook reserve 1/4 cup of the pasta water and add in to the bowl of artichokes and other ingredients.
- Drain the Orzo and add it to the serving bowl with the rest of the ingredients. Gently toss to combine. Cover with a lid and let marinate until the shrimp are cooked.
- Heat a large skillet on medium-high heat. Add the 2 Tbs olive oil and garlic. Add the shrimp one at a time (without overcrowding the pan or they will boil). You may cook them in two batches
