With fresh herbs, chopped vegetables and chickpeas, this Middle Eastern-style bulgur salad is like a bulked-up tabbouleh.

1 cup bulgur
1½ teaspoons salt, divided
⅓ cup diced red onion
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice, from 2 lemons
1 large garlic clove, finely minced
1 teaspoon cumin
1 teaspoon sugar
½ teaspoon freshly ground black pepper
1 red bell pepper, diced
1 small English (or hothouse) cucumber, seeded and diced
½ cup finely chopped fresh dill
⅓ cup finely chopped fresh parsley
1 15-ounce can chickpeas, drained and rinsed

Steps:

  • Bring a kettle of water to a boil. Place the bulgur in a large bowl with ½ teaspoon salt and 1¼ cups boiling water. Cover the bowl tightly with saran wrap and let sit for 15-30 minutes, or until all of the water is absorbed. Let cool, then fluff with a fork.
  • Meanwhile, to soften the bite of the raw onions, place them in a small bowl and cover with cold water. Let sit for ten minutes, and then drain. (Feel free to skip this step if you don't mind the strong taste of raw onions.)
  • In a large bowl, whisk together the oil, lemon juice, garlic, cumin, sugar, pepper, and remaining 1 teaspoon salt. Add the cooled bulgur, onion, bell pepper, cucumber, dill, parsley, and chick peas. Toss well, then taste and adjust seasoning if necessary. Chill until ready to serve or up to two days. Serve cold or room temperature.

1/2 cup bulgur
1 cup diced cucumber (1 small-to-medium)
1 cup diced tomato* (1 large)
1 teaspoon fine sea salt, divided
3 medium bunches curly parsley
1/3 cup (2/3 ounce) chopped fresh mint (optional but recommended-you can chop it in the food processor with the parsley)
1/3 cup thinly sliced green onion
1/3 cup extra-virgin olive oil
3 to 4 tablespoons lemon juice, to taste
1 medium clove garlic, pressed or minced

Steps:

  • Cook or soak the bulgur until tender according to package directions. Drain off any excess water, and set aside to cool.
  • Meanwhile, combine the diced cucumber and tomato in a medium bowl with 1/2 teaspoon of the salt. Stir, and let the mixture rest for at least 10 minutes, or until you're ready to mix the salad.
  • To prepare the parsley, cut off the thick stems. Then, finely chop the parsley and remaining stems-you can do this by hand, but it's much easier in a food processor with the standard "S" blade. Process 1 bunch at a time (it should yield about 1 cup chopped), transferring the chopped parsley to a large serving bowl before proceeding with the next.
  • Add the cooled bulgur, chopped fresh mint (if using) and green onion to the bowl of parsley. Strain off and discard the cucumber and tomato juice that has accumulated in the bottom of the bowl (this ensures that your tabbouleh isn't too watery). Add the strained cucumber and tomato to the bowl.
  • In a small measuring cup or bowl, whisk together the olive oil, 3 tablespoons lemon juice, garlic, and remaining 1/2 teaspoon salt. Pour it into the salad and stir to combine. Taste, and adjust if necessary-add another tablespoon of lemon juice for zing, or salt for more overall flavor.
  • If you have the time, let the salad rest for 15 minutes before serving to let the flavors mingle. Otherwise, you can serve it immediately or chill it for later. Tabbouleh will keep well in the refrigerator, covered, for up to 4 days.

1 1/2 cups cooked long-grain rice
1/2 cup thinly sliced celery
1/2 cup corasely grated carrot
1/2 cup sliced green pepper
1/4 cup dried cranberries
1/4 cup minced fresh parsley
1/4 cup rice vinegar
2 tablespoons olive oil
1 tablespoon finely chopped onion
1 tablespoon water
1 teaspoon sesame oil
1 teaspoon honey
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon Chinese five spice powder
1/4 teaspoon pepper
9 cups torn mixed salsg greens (Baby greens are nice)

Steps:

  • Place bulgur in a bowl.
  • Stir in boiling water.
  • Cover and let stand 30 minutes or until most of the liquid is absorbed.
  • Drain and squeeze dry.
  • In a bowl combine the rice, celery, carrot, green pepper, cranberries, and bulgur.
  • In a jar with a tight-fitting lid, combine the parsley, vinegar, olive oil, onion, water, sesame oil, honey, garlic and seasonings; SHAKE WELL.
  • Pour over rice mixture; toss gently to coat.
  • Arrange greens on salad plates.
  • Top with rice mixture; sprinkle with almonds.

2 tablespoons butter or 2 tablespoons margarine
1 cup bulgur
1 cup long-grain rice
1 quart chicken broth
6 tablespoons clarified butter
4 teaspoons black mustard seeds
1 1/2 teaspoons turmeric
1 teaspoon salt
1/4 cup fresh lemon juice

Steps:

  • Melt 2 tablespoons butter in heavy saucepan over medium heat. Add bulgur and rice and stir for 5 minutes or until rice browns slightly.
  • Mix in broth and bring to a boil. Reduce heat to low, cover and cook for 20 minutes or until liquid is absorbed.
  • Heat clarified butter in heavy skillet over medium heat. Add mustard seed and cook until mustard seeds begin to pop.
  • Add turmeric and salt, then the bulgur/rice mixture. Stir until hot. Stir in lemon juice.
  • Serve immediately.

6 cups boiling water
1 1/2 cups reduced-sodium chicken broth
3/4 cup wild rice, rinsed
2 large tomatoes, diced
1 cup fresh parsley, chopped

1/2 cup Greek salad dressing

Steps:

  • Pour water over bulgur; water level will be much higher than bulgur. Soak for one hour and drain excess water.
  • Bring stock and wild rice to a boil. Reduce heat, cover and simmer for 45 minutes or until rice is tender. Let cool.
  • In a salad bowl. mix bulgur, rice, tomato, parsley, green onion and salad dressing.

200g bulgur wheat
150g frozen edamame (podded)
2 Romano peppers , sliced into rounds, seeds removed
150g radishes , finely sliced
75g whole blanched almonds
small bunch mint , finely chopped
small bunch parsley , finely chopped
2 oranges
3 tbsp olive oil

Steps:

  • Cook the bulgur following pack instructions, then drain and tip into a large serving bowl to cool. Meanwhile, put the edamame beans in a small bowl, pour over boiling water, leave for 1 min, then drain. Put in a serving bowl with the peppers, radishes, almonds, mint and parsley.
  • Peel one orange, carefully cut away the segments and add to the bowl. Squeeze the juice of the other into a jam jar with the oil. Season well and shake to emulsify. If you're following our Healthy Diet Plan - separate the salad into four bowls or lunchboxes, pour half of the dressing onto the two portions being eaten today and store the remainder in the fridge for a later day. The salad will keep in the fridge for 2 days.

This non traditional salad recipe has been given out to my company more times than I can count. It is great for a pot luck, as you can almost be assured that there will not be doubles.

1 cup frozen peas
2 cups cooked rice, according to directions
1 1/2 cups diced ham or 1 (6 ounce) can small shrimp
1 1/2 cups celery, chopped
1/4 cup green onion, chopped
1/2 cup salad oil
3 tablespoons soy sauce
1 tablespoon curry powder
2 tablespoons vinegar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 cup white sugar (or 2 Splenda quick packs)
1/4 cup toasted slivered almonds
1/2 teaspoon Accent seasoning, if desired (msg)

Steps:

  • Be careful not to overcook rice.
  • I have used both minute rice and long grain.
  • Toss salad ingredients together and refrigerate long enough to let peas thaw.
  • Beginning with salad oil ingredient, mix all dressing ingredients and let sit for an hour at room temperature or longer.
  • Stir dressing well and dress salad just before serving, mix well.
  • Serve cold.

This is a nice light salad for hot days. This salad is very similar to couscous, but the main ingredient is bulgur and here the sour taste is given by pomegranate molasses.

160 g bulgur
250 ml boiling water (salted)
2 green onions, chopped
1 garlic clove, minced
1/2 red onion, minced
1 tablespoon tomato paste
1 red bell pepper, minced
2 tablespoons pomegranate molasses
1 -2 teaspoon of fresh mint, chopped
1/2 cup parsley, chopped
1 teaspoon paprika
4 tablespoons olive oil

Steps:

  • Poor boiling water over bulgur, cover and let soak for 15 minutes.
  • In the meanwhile prepare all the other ingredients.
  • Transfer bulgur in a cold bowl and add tomato paste to bulgur and mix well with the fork until incorporated.
  • Add red peppers and let cool down at least 10 minutes.
  • Add all remaining ingredients mix with the fork.
  • Taste the bulgur and add more pepper, salt or molasses if you want some more.
  • Serve cold or chilled.
  • Note: Feel free to add more ingredients like olives, tomato cubes, cucumber, and/or what your like.

1 cup red cabbage, thinly sliced
1 cup carrot, peeled and coarsely grated
1 cup red seedless grapes

1/3 cup rice vinegar
2 tablespoons peanut oil
1 tablespoon soy sauce
1 tablespoon sesame oil, oriental type

  • Bring 2 cups of water to a boil in a 1 quart saucepan, stir in bulgur, cover pan, remove from heat, and let stand until the bulgur is softened, at least 15 minutes.

  • For the dressing, place dressing ingredients in a blender and blend until smooth.
  • Pour over salad and toss to coat.
  • Cover and refrigerate until well chilled.
  • Can be made a day ahead, keep refrigerated.
