FROZEN STRAWBERRY MARGARITA PIE

Steps:
- Make crust:
- Put oven rack in middle position and preheat oven to 350°F.
- Stir together graham cracker crumbs, sugar, and butter in a bowl with a fork until combined well, then press mixture evenly onto bottom and up side of a buttered 9-inch metal or glass pie plate (4-cup capacity).
- Bake 10 minutes, then cool in pie plate on a rack, about 30 minutes.
- Make filling:
- Purée strawberries, zest, lime juice, condensed milk, tequila, and liqueur in a blender until just smooth, then transfer to a large bowl.
- Beat cream in another bowl with an electric mixer at medium speed until it just holds stiff peaks. Fold one third of cream into strawberry mixture gently but thoroughly to lighten, then fold in remainder in 2 batches.
- Pour filling into crust, mounding it slightly, and freeze, uncovered, until firm, about 4 hours. Remove from freezer and let soften in refrigerator, about 40 minutes, before serving (pie should be semisoft).

- Combine the cookie crumbs, sugar and butter; press into a 7-in. pie plate. Bake at 375° for 8 minutes. Cool completely on a wire rack. , In a small bowl, beat the cream cheese, sugar and vanilla until smooth. Stir in the strawberries. In another small bowl, beat cream until it begins to thicken., Gradually add confectioners' sugar, beating until stiff peaks form. Fold into the cream cheese mixture. Spoon into the crust. Refrigerate for 4 hours or overnight.

This is a quick and easy pie to make, for your convenience you can use fresh or frozen strawberries and already made oreo crumb crusts. what could be easier...topped with a nice drizzle of your favourite chocolate sauce....yummy!

Steps:
- Combine cookie crumbs and melted butter. Press into a 8" pie plate and put in freezer.
- Wash, hull and puree pint of strawberries with 2 tbsp sugar and reserve.
- Beat egg whites with remaining 4 tbsps of sugar until stiff. Refrigerate.
- Whip the cream with vanilla extract until smooth and creamy, removing 1/2 cup for garnish.
- Fold the strawberry puree and egg whites into the whipping cream.
- Pour into prepared crust and freeze until hard.
- Just before serving decorate top of frozen pie with the reserved whipped cream and sliced strawberries, then drizzle with chocolate sauce and enjoy.

- If using a store-bought crust, prebake it according to package directions and let it cool.
- Refrigerate crust until needed.
- In a bowl, beat the cream cheese and condensed milk together using an electric mixer on med-high speed until smooth and fluffy (about 2 minutes).
- Add in the lemon juice and continue beating for 1 minute.
- Blend in the vanilla; scrape mixture into the chilled pie crust; smooth the top with the back of a spoon.
- Cover with loosely tented foil and refrigerate for at least 2 hours but preferably longer and up to overnight.
- Shortly before ready to serve, scatter the raspberries evenly over the pie.
- Using a chilled bowl and chilled beaters, beat the cream until it holds soft peaks.
- Add in the powdered sugar and continue to beat until stiff but not grainy.
