Orecchiette with Chicken Sausage and Broccoli Rabe image

We cut calories in this Italian dish by reducing the amount of pasta, but bumped up the flavor by using extra-virgin olive oil, vinegar, and a generous amount of broccoli rabe.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 35m

Number Of Ingredients 7

Coarse salt and ground pepper
2 bunches (2 pounds total) broccoli rabe, cut into 1/2-inch pieces
8 ounces orecchiette or other short pasta
2 precooked Italian chicken or turkey sausages (6 ounces total), cut into 1/4-inch slices
2 tablespoons white-wine vinegar
1 garlic clove, minced
1 tablespoon extra-virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add broccoli rabe, and cook until bright green, about 1 minute. Using a wire skimmer or small sieve, transfer to a colander set over a bowl to catch drips (a few bits may remain in cooking water); set aside. Return water to a boil. Add pasta, and cook until al dente, according to package instructions. Drain and return to pot.
  • Heat a large skillet over medium-high. Add sausage; cook, without turning, until browned, about 4 minutes. Add broccoli rabe, vinegar, and garlic. Cook until broccoli rabe is tender, scraping up browned bits in skillet, 2 to 3 minutes.
  • Add pasta and oil to broccoli rabe mixture. Season with salt and pepper; toss to combine. Serve.

Orecchiette with Sausage and Broccoli Rabe Recipe image

Provided by Phil Torre

Time 35m

Number Of Ingredients 7

1 pound of sweet Italian sausage
1 bunch of broccoli rabe
1/4 cup extra-virgin olive oil
3 large garlic cloves, sliced thin
salt & pepper to taste
1 pound orecchiette pasta
grated parmagiano-reggiano cheese for serving

Steps:

  • In a large saute pan or skillet, heat the olive oil over medium-high heat. Add the crumbled sausage and cook stirring and breaking up the sausage until cooked through and lightly browned.
  • Using a slotted spoon remove the cooked sausage from the pan and set aside, leaving as much oil behind as possible to saute the garlic and broccoli rabe in, if needed add an extra tablespoon of olive oil.
  • Drop the broccoli rabe into to the pot of boiling water.
  • At the same time add the garlic to the saute pan and cook until lightly browned, about 1-2 minutes.
  • Immediately remove the broccoli rabe from the pot using a mesh strainer or tongs (do not strain the whole pot, because you will be cooking the pasta in the same boiling water), shake excess water out and add to the pan with the garlic. Season with Salt and pepper. Cook stirring until broccoli rabe is tender, 3-5 minutes.
  • Add the sausage back into the pan and toss to combine. Remove pan from the heat.
  • Meanwhile add the orecchiette to the pot of boiling water that the broccoli rabe was cooked in. Cook until pasta is al dente, and strain.
  • Place the pan with the broccoli rabe and sausage back over medium-high heat, and add the oricchiete. Toss together until well combined.
  • Dish out the pasta to warm plates and serve with cheese on the side for sprinkling.

ORECCHIETTE WITH SAUSAGE & BROCCOLI RABE

Orecchiette with Sausage & Broccoli Rabe image

This recipe showcases one of our favorite time-saving stove- top tricks: cooking pasta and veggies together in the same bubbling pot. Here, the pleasing bitterness of chopped broccoli rabe lends balance to the savory flavors of Italian sausage and sharp cheese, while tomatoes come through with brightness and tang. With its concave shape, orecchiette pasta catches the full range of flavors in every bite.

Categories     Dinner

Time 35m

Yield 6 servings

Number Of Ingredients 9

0.5 tsp Table salt plus more for salting water
8 oz Uncooked orecchiette pasta
1.25 pound(s) Uncooked broccoli rabe (about 1 large bunch), trimmed and very coarsely chopped
12 oz Uncooked sweet Italian turkey sausage
2 medium clove(s) Garlic clove(s) chopped
0.5 tsp Crushed red pepper flakes
1 cup(s) Grape tomatoes halved
2 Tbsp White wine vinegar
6 Tbsp Grated Pecorino Romano cheese

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook for 4 minutes. Add the broccoli rabe and cook until the pasta is al dente and the greens are just tender, about 5 minutes more. Drain the pasta and broccoli rabe, reserving ¼ cup of the cooking water.
  • Meanwhile, in a large nonstick skillet, cook the sausage over medium heat, stirring and breaking up the meat with a wooden spoon, until no longer pink, about 4 minutes. Add the garlic and crushed red pepper and cook until fragrant, about 30 seconds, stirring frequently. Add the tomatoes, vinegar, salt, and reserved pasta cooking water. Cook, stirring to scrape up any browned bits from the bottom of the pan, until the tomatoes begin to soften, about 1 minute.

2 bunches broccoli rabe (approximately 1½-2 pounds, trimmed and washed)
1 pound orecchiette pasta (1 package (454 grams))
1 tablespoon olive oil (extra virgin )
½ pound Italian sausage (spicy or sweet, casings removed, crumbled)
1 french shallot (finely chopped)
4-6 garlic cloves (roughly chopped)

  • In the same large pot of boiling water, slowly add 1 pound of orecchiette pasta and stir continuously for one minute. Cook according to package directions until almost al dente.

ORECCHIETTE WITH BROCCOLI RABE AND SAUSAGE

Orecchiette With Broccoli Rabe and Sausage image

This is from "Lidia's Italian Table: Italian American Favorites" by Lidia Matticchio Bastianich, author and host of the PBS television series of the same name. The shape of the pasta (orecchiette means "little ears" ) soaks up the flavorful sauce. This is a one-dish meal, very hearty and very satisfying. Serve with lots of crusty bread to soak up the sauce.

Yield 4

Number Of Ingredients 7

2 lbs of sausage (hot and sweet sausage each)
2 bunches of broccoli rabe
2 tablespoons of minced garlic
1 can of diced tomato
1 lb of orecchiette pasta
Olive oil
Salt, pepper, parmesan and red pepper flakes as you like

Steps:

  • Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
  • Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
  • Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
  • Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.
