Orange peel joins classic caraway seed and raisins to flavor Irish soda bread. Serve this round quick loaf for breakfast or as a dinner bread.

3-1/2 cups flour
1/2 cup plus 2 Tbsp. creamy wheat (enriched farina) hot cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked, divided
3 Tbsp. sugar
1 Tbsp. baking powder
3/4 tsp. baking soda
1/4 cup oil
1 cup raisins
1 Tbsp. caraway seed
1-1/4 cups buttermilk
2 eggs
1 Tbsp. grated orange zest

Steps:

  • Mix flour, 1/2 cup of the cereal, sugar, baking powder and baking soda in medium bowl until well blended. Gradually add oil, stirring until mixture forms fine crumbs. Add raisins and caraway seed; mix well.
  • Place buttermilk, eggs and orange zest in large bowl; beat with wire whisk until well blended. Add flour mixture; stir just until moistened.
  • Place dough on floured surface; knead 10 times. Shape into ball; place on greased baking sheet which has been sprinkled with remaining 2 Tbsp. cereal. Flatten to 7-inch round loaf; cut 1/4-inch-deep 4-inch-long "X" in center of loaf.
  • Bake at 350°F for 40 to 45 minutes or until golden brown. Cool on wire rack.

Steps:

  • Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl with wire whisk. Add milk, orange juice, orange zest and oil; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.
  • Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake at 350°F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

1/2 cup orange juice
1 teaspoon vanilla extract
2 cups all-purpose flour

1 cup seedless raisin
1/2 cup boiling water

Steps:

  • Pour 1/2 a cup boiling water of the raisins, add the rind of 1 orange. Let cool.
  • Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend.
  • Stir in cooled raisin mixture. Pour into prepared bread pan and bake 1 hour at 350.

Best-Ever Raisin-Orange Bread image

Number Of Ingredients 12

5 cups bread flour
2 active dry yeast
1 cup milk
½ cup sugar
½ cup butter
¼ cup water
1 orange peel, freshly shredded
1 teaspoon ground ginger
1 ½ teaspoons salt
2 eggs (at room temperature)
1 ½ cups raisins
Walnut Glaze (see recipe below)

Steps:

  • In a large mixer bowl, combine 2 cups of the flour and the yeast.
  • In a saucepan, heat together milk, sugar, butter, water, orange peel, ginger, and salt just until warm (120 degree F), stirring constantly. Add to flour mixture; add eggs. Beat on low speed for 30 seconds, scraping bowl. Beat on high speed for 3 minutes. Add raisins.
  • Using a spoon, stir in as much of the remaining flour as you can. On floured surface, knead in enough remaining flour to make a moderately stiff dough that's smooth and elastic (6 to 8 minutes). Shape into a ball and place in greased bowl; turn once.
  • Cover dough; let rise in warm place until doubled (about 1-1/4 hours). Punch down. Turn out onto a floured surface; knead 1 minute. Cover; let rest for 15 minutes. Divide into 2 portions. Press each into a flat oval (9x7 inches); fold in half. Pinch seam closed. Pat to fit 2 greased 8-1/2x4-1/2x2-inch loaf pans.
  • Place dough in prepared pans. Make three 1/4-inch-deep diagonal slashes across top of each loaf. Cover with waxed paper; let rise in a warm place until doubled (3/4 to 1 hour). Remove waxed paper and bake in a 375 degree F oven for 45 to 50 minutes or until done. (Cover loaves with foil after 20 minutes to prevent overbrowning.)
  • Spread Walnut Glaze over cooled loaves. Makes 2 loaves (32 servings).

3/4 cup golden raisins
2 3/4 cups all-purpose flour
3/4 cup cake flour
1/2 cup semolina flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons cream of tartar
1/8 teaspoon fine sea salt
2 tablespoons sugar
3 tablespoons very cold unsalted butter, cut into small pieces, plus 2 tablespoons melted
1 tablespoon roasted, salted fennel seeds or regular fennel seeds
2 teaspoons finely grated orange zest
1 1/2 cups very cold buttermilk
1/2 cup cold buttermilk
2 teaspoons finely grated orange zest
2 sticks unsalted butter, slightly chilled
Pinch sea salt

Steps:

  • For the soda bread: Put the raisins in a bowl and cover with hot water. Set aside until softened, about 30 minutes. Drain and pat dry.
  • Preheat the oven to 375 degrees F.
  • Sift the all-purpose, cake and semolina flours, and the baking soda, cream of tartar and salt into a large bowl; stir in the sugar. Cut the 3 tablespoons butter into the flour until it resembles a coarse meal. Stir in the fennel seeds and the soaked raisins.
  • In a small bowl, stir the orange zest into the buttermilk, and then add to the flour mixture, stirring with a fork just until a dough comes together. Turn the dough onto a work surface and knead briefly until the loose flour is just moistened; the dough should look shaggy and uneven.
  • Form the dough into a 6-inch round and place in a 10-inch cast-iron skillet. Using a very sharp knife, score a deep cross into the top of the loaf. Bake until nicely browned and a skewer inserted into the center of the loaf comes out clean, 40 to 45 minutes. Remove from oven and brush with the 2 tablespoons melted butter. Cool for at least 30 minutes before slicing.
  • While the bread bakes, make the buttermilk-orange butter: Whisk together the buttermilk and orange zest in a small bowl. Put the butter and salt in a stand mixer fitted with the paddle attachment and beat until smooth. Slowly pour in the buttermilk mixture and continue beating until just incorporated. Spread into a ramekin, cover, and refrigerate for at least 1 hour and up to 24 hours to allow the flavors to meld.
  • Serve slices of warm or toasted semolina soda bread with the orange butter.

You can use any white bread recipe to make any swirl breads listed below. The cinnamon raisin version is a classic, inspired by a recipe from James Beard. The sherry gives an unusual complexity to the sweet raisins and brown sugar, and most of the alcohol is cooked off while the mixture simmers. Feel free to use apple cider instead. This recipe makes two loaves, one to eat right away, preferably warm from the oven, or toasted and buttered the next day. Freeze the other loaf and use it to make what is arguably the best French toast imaginable.

1 1/2 cups/355 grams lukewarm milk
1/3 cup/67 grams granulated sugar
1 tablespoon/15 grams kosher salt
3 tablespoons/43 grams butter, melted, more for greasing bowl and pans
2 eggs
5 to 6 cups/625 grams to 750 grams all-purpose flour
1/3 cup/79 milliliters dry sherry or apple cider
1 1/2 cups/225 grams raisins
4 tablespoons/57 grams butter, melted
1/2 cup/100 grams dark brown sugar
1 tablespoon/8 grams cinnamon
Cinnamon sugar, for dusting (optional)

Steps:

  • Make the dough: In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
  • Grease a large bowl with butter and turn dough out into the bowl. Flip dough over so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 11/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
  • Meanwhile, make the filling: In a small pot, bring sherry to a low boil and simmer until reduced by half, about 8 to 10 minutes. Add raisins, cover and let sit until needed for filling.
  • When dough has doubled in size, turn dough out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
  • Press down dough with your hand to expel the air. Divide dough in half and roll one half into a 16-x-8-inch rectangle. Brush with some of the melted butter. Drain raisins and mix with sugar and cinnamon; scatter half of the mixture over the dough and, starting with the shorter side, roll up tightly into an 8-inch log, tucking the ends under. Place roll seam-side down in a loaf pan and brush top with melted butter; dust with cinnamon sugar if desired. Repeat with second dough half.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Meanwhile, heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

  • Day 1 (around midday), feed the levain. Before refreshing your mother starter, set aside 20-30 grams of the unfed starter and to it add equal amounts flour and water to end up with 80 grams of levain required in this recipe. For example, if you use 20 grams of unfed starter, add 30 grams each of flour and water to get 80 grams levain. Set aside until at peak rise (about 4 hours; longer on cold days. In winter I store the levain inside the oven, turned off with the light on.)
  • Day 1 ("Autolyse": See Note). Stir in the fed starter and orange peel with the water in a bowl. Once the starter has been evenly distributed in the water add the flour. Cover the bowl with a kitchen towel or plastic wrap and let sit for thirty minutes to one hour.
  • Day 1 (evening), add the soaked and drained raisins and kosher salt to the mixture in the bowl. Combine the dough using a wet hand and folding the dough over from the bottom to top. Then Ken Forkish employs what he calls the "pincer" method to make sure all the ingredients are fully incorporated. Imagining your hand as a lobster claw (my description), cut through the dough pinching a few times, mixing, then pinching again. If you're using the caraway seeds at them at this step.
  • Day 1 (evening), fold the dough. Pick up one portion of the dough (without taking it out of the bowl) and fold it over. Repeat this folding step a few times, inverting the dough with the folds at the bottom of the bowl when done. This folding step should be done three to four times before the dough rests overnight over a period of one to two hours. I fold every thirty minutes in the space of two hours before the overnight rest. After folding, cover the bowl with a towel or plastic wrap and let it rest overnight.
