SPICED ORANGE PECANS
This is a wonderful and very easy recipe for the holidays! I found it in Taste of Home Magazine. If you decide to prepare a double batch, please make sure you spread in only a single layer on the baking sheet. It is important that these pecans dry as they bake to become crispy. I hope you enjoy this recipe. I think it is a real treat!

Steps:
- In a large bowl, combine the egg whites and orange juice.
- Add pecan halves and toss to coat; drain well.
- In another large bowl, combine the remaining ingredients.
- Add pecans halves and toss to coat.
- Spread in a single layer in a greased 15" x 10" baking pan.
- Bake at 250 degrees for 30-35 minutes, or until dry and lightly browned.
- Cool completely.
- Store in an airtight container.
- Yield: 5 cups.
ORANGE AND CINNAMON CRUSTED PECANS

Steps:
- In a deep saucepan, combine the sugar, water, orange zest, and cinnamon and bring to a boil. Add the pecans and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque, and crystallize as the water cooks away.
- When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.)

- Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper. Cool completely. Separate pecans if necessary. (Can be prepared up to 1 week ahead. Store in airtight container.)
ORANGE PECAN STICKY BUNS
A friend of mine gave me this recipe. I am not sure where I she got it from but these sticky buns are delicious and very simple. The refrigerated biscuits really cut back alot of time. I have posted some pictures to demonstrate the forming of the buns. I always sprinkle a couple of extra pecans on top of the buns before baking just because I like the little extra crunch.

Steps:
- Heat oven to 400.
- In small bowl, combine margarine, 1 tablespoon chopped pecans, orange zest and honey; mix well. Sprinkle remaining 2 tablespoons chopped pecans in bottom of 8 or 9 in square baking pan.
- Separate dough into ten biscuits.
- Separate each biscuit into 2 layers.
- Spread top of 10 biscuit halves with 1 teaspoon of orange honey mixture.
- Top each with remaining biscuit halves and press together to form 10 filled biscuits. Seal edges.
- In a gentle manner, pull then twist each biscuit with your hands about 4-5 times to form 3 1/2 inch twisted rope (kind of like wringing out wet clothes but in a gentle way). Once this is done, wrap the rope around your finger and place formed rolls in baking pan.
- In a small saucepan, combine sugar, orange juice and vanilla.
- Cook over high hear until sugar is melted and syrup begins to boil, stirring constantly. Spoon over rolls.
- Bake about 20 minutes or until golden brown.
- Cool in pan 2 minutes, invert onto serving plate. serve warm.

- In a large heavy saucepan, combine the sugar, water and orange juice concentrate. Cook over medium-high heat, without stirring, until a candy thermometer reads 238° (soft-ball stage). ORANGE PECAN WAFFLES
Orange flavored waffles. I found this recipe in a Round Waffle Bakers leaflet. I have not tried this recipe, but I'm posting this for safe keeping. This recipe did not give serving size or cook time. When I made this recipe I used Splenda in place of the sugar, the butter, I only used the grated zest of one orange, I also added 1 scoop of protein powder. I thought these were a bit heavy, so is the batter and when I scooped out the batter due to it being so thick I had to spread it. When I made these waffles I got 6 square waffles. Overall I thought these had great flavor.

- Preheat oven to 300 degrees F (150 degrees C). Heavily butter a large metal baking sheet.
- Beat egg whites and water together in the bowl of a stand mixer until stiff peaks form. Add orange extract and vanilla extract; beat until incorporated, 1 minute.
- Mix sugar, cinnamon, salt, and black pepper together in a separate bowl; fold sugar mixture into egg white mixture until just incorporated. Fold in rosemary and tangerine zest until evenly mixed. PECAN CRANBERRY SPREAD
I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

- Cream butter; gradually add 3/4 cup sugar, beating well. Add the beaten eggs and grated orange rind; mix well. Combine flour, baking powder and salt; add to creamed mixture alternately with 3/4 cup orange juice, beginning and ending with flour mixture. Mix well after each addition. Stir in pecans.
