ORANGE-PECAN SALMON FOR TWO

- In a small bowl, combine the first five ingredients. Pour 1/2 cup marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for up to 30 minutes. Set aside remaining marinade. , Drain and discard marinade from salmon. Place salmon in a greased 11x7-in. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork., In a small saucepan, bring reserved marinade to a boil; cook until liquid is reduced to 1/3 cup. Serve with salmon.

ORANGE PECAN BAKED SALMON

Steps:
- Preheat the oven to 350° F. Combine all ingredients except for the nuts and salmon in a large bowl.
- Pour half of the mixture into a container with the salmon and marinate for 30 minutes. Discard the marinade.
- Pour the other half of the mixture into a small sauce pan set over medium high heat and bring to a boil. Stirring frequently, reduce the mixture until it thickens into a glaze but is still pourable. This will take about 5 - 8 minutes. Stir in the nuts.
- Place the salmon on a foil lined pan. Baked for 15 - 20 minutes, or until salmon flakes easily with a fork.
- Pour the reduced sauce with nuts over the cooked salmon and serve.

- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.
- Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 degrees F (220 degrees C).
- Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center. Season with the remaining half of the herb mixture. Whisk together the orange juice, lemon juice and honey in a small bowl. Pour evenly over the salmon.
- Bake for 12 to 15 minutes in the preheated oven, or until the salmon is opaque in the center. Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

ROASTED PECAN AND HERB-CRUSTED SALMON
Steps:
- Preheat oven to 400 degrees F.
- To make the vegetable mixture: Combine all of the ingredients in shallow roasting pan and toss to mix. Spread the mixture out to form a bed for the salmon.
- To make the salmon: In a small bowl, mix the fronds, basil, mustard, salt, and pepper. Rub each salmon fillet with the mixture and arrange them over the top of the vegetables. Drizzle the fillets with the vermouth and lemon juice.
- Combine the melted butter and pecans in a small bowl, and top each fillet with the mixture. Roast the salmon until just cooked thorough and the vegetables are tender, about 15 to 17 minutes. Serve immediately.

- I like to take a fork and poke a few holes in the fish to let the orange juice soak inches.
- Then, take half the orange and squeeze over the salmon to cover with juice. Coat generously with brown sugar and sprinkle with salt and pepper.
- Next, slice remaining orange half into thin slices and put in oven at 350 for about 10-15 minutes. Remove orange slices and continue to cook until done to satisfaction, maybe 10-15 minutes.
- Remove and squeeze orange slices over fillets. Serve and watch the smiles.
