- Heat 2 minced garlic cloves, 2 or 3 strips lemon zest and 3 tablespoons olive oil in a skillet over medium heat, 3 minutes. Meanwhile, cook 1 head broccoli florets and 1 sliced carrot in boiling salted water, 3 minutes. Drain and toss with the lemon oil, a squeeze of lemon juice, and salt and pepper.

- Wash and cut broccoli into florets.
- Bring about 1 cup of water to boil in a saucepan over high heat.
- Add broccoli florets, reduce heat to medium and cover.
- Cook until broccoli is crisp-tender and still bright green. About 5 minutes.
- Drain and return broccoli to pan.
- Add butter, orange juice, orange zest, salt and pepper.
- Toss together and heat through.
- Serve.

- Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks.
