CHOCOLATE CHIP ORANGE OATMEAL COOKIES

You might call these Slightly Adult cookies as they have a taste that is a bit more sophisticated. I made 3 batches for neighbors Welcome Home Tea (She has been in the hospital). The 4 kids seemed to think they were ok and preferred other items while the adults cleaned up the tray. I used Bittersweet chocolate.

1 cup old fashioned oats
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup packed brown sugar
3/8 cup unsalted butter, melted and cooled
1 large egg
1/2 teaspoon vanilla
3/4 teaspoon finely grated fresh orange zest
1/2 cup semi-sweet chocolate chips (not more than 60% cacao) or 1/2 cup chopped bittersweet chocolate (not more than 60% cacao)

Steps:

  • Put oven rack in middle position and preheat oven to 375°F Butter a large baking sheet.
  • Stir together oats, flour, baking soda, and salt in a bowl to combine.
  • Whisk together brown sugar, butter, egg, vanilla, and zest in another bowl.
  • Stir egg mixture into flour mixture until just combined. Stir in chocolate chips.
  • Make 12 mounds of batter 1 1/2 inches apart on baking sheet. Bake until cookies are golden and edges are crisp, about 15 minutes.
  • Transfer cookies to a rack to cool.

They may only be off the back of the Sultana Bran cereal box...but they're great! I LIKE them. Sometimes the best things in life are found in simplicity. Note: It's a Kellogg's recipe, but I'm sure any brand of sultana bran-type cereal would work. Also, I've had these with chunky chocolate squares mixed in, which was definitely a welcome touch.

150 g low-sodium margarine
2 cups sultana natural bran
1/4 teaspoon bicarbonate of soda
1/2 cup brown sugar or 1/2 cup raw sugar
1 cup self raising flour, sifted
1/2 cup orange juice
1 orange, rind of, grated
1 cup white lily self-rising flour, sifted

Steps:

  • Melt the margarine in a saucepan over low heat or microwave.
  • Mix all ingredients in mixing bowl until well combined.
  • Spoon mixture onto non-stick baking sheets and press down lightly with a fork.
  • Bake at 180 deg. C for 10-15 minutes or until golden brown.
  • Cool on baking sheets before transferring to wire cooling tray.

This is a wonderful cookie recipe for those who love oatmeal cookies and also orange-flavored cookies. They are chewy, not crispy, and are fairly quick-cooking!

1/2 cup butter
1 cup light brown sugar, firmly packed
1 large egg
1 1/2 teaspoons freshly grated orange zest
1/4 cup fresh orange juice
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 cups rolled oats

Steps:

  • In large bowl of mixer, cream butter and sugar until fluffy; beat in egg, orange zest and juice.
  • Gradually beat in flour, baking powder, soda, salt and nutmeg until mixed.
  • Add oats (I used quick-cooking oats, but I think that old-fashioned or rolled oats would improve the texture.).
  • Drop by heaping teaspoonfuls on greased cookie sheets.
  • Bake in 350° oven until golden around edges.

I got this from COLES summer mag. I've tried it several times and its so easy. You can opt not to put the muesli if you're not particularly fond of it or its texture. Just follow the recipe without it and you'll find it still tastes great without it! Enjoy!

1 cup self raising flour
1 cup toasted muesli (optional)
1 cup sultana (Sunbeam or any brand you have)
3/4 cup rolled oats (Uncle Toby's or any brand you have)
1/2 cup brown sugar
125 g butter, melted
1 egg, lightly beaten
1 tablespoon honey

Steps:

  • Preheat oven to 190 degrees C or 170 degrees C fan. Line two baking trays with baking paper.
  • Place dry ingredients in a large bowl and toss to combine.
  • Combine butter, egg and honey an add to dry ingredients. Mix well.
  • Drop 2 tbsp mixture onto prepared trays. Press lightly with the back of a fork.
  • Bake for 10-12 min, until golden. Cool on trays before storing in an airtight container.

115 g butter, at room temperature (or Spectrum Spread)
1 egg (or substitute)
40 g mashed ripe bananas (about 1/2 a banana)
1 teaspoon vanilla extract
100 g light brown sugar
1 1/2 teaspoons orange rind (grated)
125 g whole wheat flour
1/4 teaspoon salt
1 teaspoon baking powder
120 g rolled oats
20 g desiccated coconut
60 g chopped walnuts
75 g sultanas (OR 90 g dark chocolate chips)

Steps:

  • Preheat oven to 180 degrees.
  • Cream butter and egg together until well blended and smooth. Gradually beat in the banana, vanilla extract, and brown sugar. Add the orange zest. Mix well with a wooden spoon until all the ingredients are thoroughly blended.
  • In a large bowl mix the flour, slat, baking powder, oats, coconut, walnuts, and sultanas or chocolate chips. Use a wooden spoon to combine dry ingredients until they are evenly mixed. Stir the dry ingredients into the wet ingredients and mix thoroughly until there is no sign of dryness.
  • Grease or line a baking sheet. Drop heaping tablespoonsful of the dough onto the greased baking sheet, leaving 5cm (2 inches) space around each one, and press down to lightly flatten. Bake for 20 minutes or until lightly browned. Cool on a wire rack.
