THE ORIGINAL TACO DIP

The Original Taco Dip image

A warm spicy cheese, bean and beef mixture that is best served in a mini-crock pot to keep it warm. Served with tortilla chips.

Provided by Old Man Cooking

Categories     Cheese

Time 20m

Yield 3 quarts

Number Of Ingredients 7

2 (8 ounce) packages light cream cheese or 2 (8 ounce) packages fat free cream cheese
1 lb Velveeta cheese or 1 lb Velveeta reduced fat cheese product
1 (15 ounce) can refried beans or 1 (15 ounce) can fat-free refried beans
1 lb ground beef
1 taco seasoning mix
5 -6 jalapeno peppers, with
2 -3 tablespoons jalapeno juice, from jar

Steps:

  • Brown ground beef, and then add taco seasoning and water following instructions on the Taco Seasoning packet.
  • Mince jalapeño peppers with some of juice from jar in blender or food processor and set aside.
  • While ground beef is browning, put cream cheese and Velveeta in a 3 quart or larger microwave safe container and microwave on 70% power for 5 minutes. At this point the cheeses may not be melted entirely, but this is OK.
  • After 5 minutes, add the refried beans and minced jalapeño peppers to the cheese mixture. Stir cheese, beans and peppers to combine and return to the microwave for an additional 3 to 5 minutes at 70% power.
  • After the cheese/bean/pepper mixture is completely melted, add the prepared taco meat. Fold in meat and stir until all ingredients are well blended.
  • Serve warm with tortilla chips.
  • Note: 5 to 6 peppers gives dip a nice bite, but you can adjust to your taste. Just remember that this recipe makes a lot of dip, but trust me you will need every bit of it. Leftovers (if any) can be frozen for later consumption.

TACO DIP I

Taco Dip I image

This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

TACO DIP

Taco Dip image

This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 11

1 tablespoon vegetable oil
1 1/2 pounds ground beef
Half a 1.25-ounce packet taco seasoning mix, or 3 tablespoons homemade taco seasoning
2 tablespoons tomato paste
One 14.5-ounce can black beans, drained and rinsed
2 cups sour cream
2 cups shredded sharp Cheddar
1 large tomato, chopped
2 cups shredded iceberg lettuce
Sliced black olives and/or pickled jalapenos, optional
Tortilla chips, for serving

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
  • Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

TOUCHDOWN TACO DIP

Touchdown Taco Dip image

This is a dip that I like to bring tailgating because when asked how to make it -- it's easy enough that my football pals can even remember it while usually a little lightheaded from other beverages. :) Serve with your favorite taco dipping chips. Truthfully, put it in a bowl and stir.
