MAPLE ORANGE BOURBON GLAZED HAM



Maple Orange Bourbon Glazed Ham image

One 7- to 8-pound bone-in spiral cut ham
1 cup orange marmalade
1/2 cup bourbon
1/2 cup maple syrup
2 tablespoons unsalted butter
Pinch ground cinnamon
Pinch ground cloves
Nonstick cooking spray, for the foil

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a small knife to lightly score the fat in a crosshatch pattern, taking care not to cut into the meat. Add about 1 cup of water to the bottom of the pan. Bake the ham for 45 minutes.
  • Meanwhile, make the glaze. Combine the marmalade, bourbon, maple syrup, butter, cinnamon and cloves in a small saucepan over medium-low heat. Cook, stirring often, until the glaze is thick and syrupy, 20 to 25 minutes.
  • Brush the ham with about half of the glaze and return to the oven. Roast, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 45 minutes to 1 hour more. (The ham will get very brown, but if the glaze starts to burn, tent with a piece of foil greased with cooking spray. Let rest, tented with a piece of greased foil, for about 10 minutes before carving.

One 16- to 18-pound turkey
1 large yellow onion, quartered
1 orange, quartered
4 tablespoons (1/2 stick) salted butter, softened
Kosher salt and freshly ground black pepper
1 cup orange juice
1 cup maple syrup
2 tablespoons olive oil
2 tablespoons unsalted butter
4 shallots, thinly sliced
2 tablespoons chopped fresh thyme
1/2 cup all-purpose flour
4 cups turkey drippings or chicken stock (or a combination)

Steps:

  • Preheat the oven to 425 degrees F.
  • For the turkey: Pat the turkey dry, inside and out. Place the onion and orange quarters into the cavity, tie the drumsticks together and tuck the wings under the bird.
  • Rub butter all over the skin, then sprinkle generously with salt and pepper. Place the turkey on a rack set over a roasting pan. Roast for 25 minutes.
  • Meanwhile, bring the orange juice and maple syrup to a boil in a small saucepan. Remove from the heat.
  • After 25 minutes, turn down the oven to 375 degrees F and glaze the turkey with the orange-maple mixture. Continue to roast, glazing the turkey every 25 minutes, until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F, 3 to 4 hours more, depending on the oven. Let rest for 15 minutes.
  • For the gravy: Meanwhile, Heat the olive oil and butter in a thick-bottomed saucepan or Dutch oven over medium-high heat. Add the shallots and thyme, and cook until brown. Add the flour; cook for 1 minute.
  • While whisking, slowly add the turkey drippings. Bring to a boil and cook, whisking, until thickened, 5 minutes. Taste and season with salt and pepper if needed.
  • Carve the turkey and serve with the gravy.

1 tablespoon snipped fresh marjoram or 1 teaspoon dried marjoram, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup orange juice
1 tablespoon cornstarch
1/2 cup maple syrup
1 teaspoon finely shredded orange peel
1 (2 1/2-3 1/2 lb) boneless turkey breast
2 tablespoons butter, melted

Steps:

  • In a small bowl combine garlic, marjoram, salt, and pepper; set aside.
  • For glaze, in a small saucepan stir together the orange juice and cornstarch; add half of the seasoning mixture.
  • Cook and stir over medium heat until thickened and bubbly.
  • Cook and stir 1 minute more.
  • Stir in maple syrup and orange peel; set aside.
  • Brush the turkey roast with melted butter and rub with remaining seasoning mixture.
  • Insert a meat thermometer near the center of the roast.
  • For a charcoal grill, arrange medium-hot coals around a drip pan.
  • Test for medium heat above the pan.
  • Place the turkey roast directly on the grill rack over the pan.
  • Cover; grill until thermometer registers 165°F Add coals to maintain heat every 30 minutes.
  • Brush with glaze the last 30 minutes of grilling.
  • Remove meat from grill.
  • Cover with foil; let stand for 15 minutes before carving. (The meat's temperature will rise 5F during standing).
  • Bring any remaining glaze to boiling; pass with turkey. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.).
  • OR, use the oven @325 degrees until thermometer reaches 165F (should be about 1 1/2 hrs). Follow glazing and standing directions above.

2 tablespoons Grand Marnier
4 lbs fresh salmon
5 tablespoons fresh grated orange peel
2 shallots, minced

1/2 cup low sodium soy sauce
1/2 cup Grand Marnier
1 cup maple syrup
2 small oranges, sliced thin

Steps:

  • If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
  • Wash salmon and pat dry.
  • Combine ginger, basil, pepper, rind and shallots.
  • Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
  • Preheat oven to 350°F.
  • Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
  • Place salmon in shallow baking dishes. Spoon glaze over fish.
  • Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
  • Decorate with orange slices. Shown in the picture here with a lemon pig.
  • To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.

This wonderfully rich glaze makes an elegant, quick dinner to serve to guests. To serve, place chicken on top of hot cooked rice on each plate and spoon sauce over the top. Wonderful served with steamed asparagus.

1 cup orange juice
½ cup dry white wine
½ cup maple syrup
2 teaspoons chopped fresh rosemary
½ teaspoon salt
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.
  • In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.
  • Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

4 boneless skinless chicken breasts (I use 8 chicken thighs)
1/4 cup plain flour, seasoned with
salt and pepper
2 tablespoons olive oil
3 tablespoons maple syrup
1 tablespoon whole grain mustard
1 grated orange, zest of
1 orange, juice of
1 tablespoon soy sauce

Steps:

  • Pick any visible fat from off the chicken and wash and dry.
  • Dredge the pieces of chicken in the seasoned flour, patting to remove excess flour.
  • Heat the olive oil in a large skillet.
  • Pan fry the chicken, presentation side first, in the hot olive oil until nicely browned on both sides.
  • While the chicken is browning, combine the remaining ingredients in a measuring cup.
  • Remove the browned chicken from the pan and place in a shallow casserole dish.
  • Add the sauce ingredients, scraping to deglaze the pan, then pour over the chicken in the dish.
  • Bake in a 350*F oven for 20 minutes until nicely glazed and the chicken is cooked through.

10 lbs smoked ham (precooked with bone, trimmed)
2 teaspoons whole cloves
1/4 cup whole-grain Dijon mustard
1/2 cup dark brown sugar
1/2 cup maple syrup
1 1/2 cups low sodium chicken broth
2 tablespoons Bourbon
1 large navel orange, juiced
1 tablespoon fresh thyme, chopped
1 tablespoon maple sugar (optional)
1 teaspoon fresh orange zest
1/4 teaspoon salt

Steps:

  • Prepare the ham; Heat oven to 325 degrees F. Trim the skin and the fat to a 1/4 inch layer on the ham. Score the fat in a diamond pattern (using a sharp knife). Insert a whole clove into each cross-hatch, pat the mustard over the top and sides of the ham, and sprinkle with the brown sugar. Pour the maple syrup and chicken broth into a 12 x l7 inch roasting pan. Add the ham. Bake, basting every 30 minutes, for 1 1/2 hours. Add the bourbon, orange juice, and thyme to the pan. Sprinkle the ham with the maple sugar, if desired. Bake basting after 15 minutes, for 30 minutes and remove from the oven.
  • Prepare the sauce: Strain the pan juices and skim the fat off the top. Add the orange zest and salt, and boil for about 10 minutes. Serve hot with the ham.

Quantities are variable, so feel free to make adjustments according to your personal taste. Adding a sprig of fresh rosemary (not dried) when cooking carrots adds another layer of flavor, but there is so much going on already I had to stop somewhere. I also love to add 2 or 3 chopped slices of cooked bacon, either as a garnish or in the sauce. A few walnuts or pecans add a nice crunch to this dish. Enjoy!
