This simple pearl barley risotto is full of fresh Spring vegetables and flavours! It is easy to throw together and doesn't require a lot of elbow grease, plus is lighter than the rice version - what's not to love!

A knob of butter or 2 tablespoons of oil
1 large leek, sliced
200 grams (1 cup) pearl barley, dried
125 millilitres (1/2 cup) white wine
1.25 litres (5 cups) vegetable stock
100 grams asparagus, cut into quarters
150 grams peas, fresh or frozen
100 grams spring greens
20 grams (1/2 cup) parmesan cheese, grated
3 tablespoons chives, chopped
2 tablespoons lemon juice
Salt & pepper to taste

Steps:

  • In a casserole pot heat the butter or oil over medium heat. Saute the sliced leeks for 5 minutes until they have softened.
  • Add the pearl barley to the pot and stir to combine. Pour in the white wine and cook for around 5 minutes, until the liquid has reduced and the alcohol has cooked out.
  • Add the vegetable stock to the pot. Stir everything to combine and leave to simmer for 35-40 minutes, stirring occasionally until the pearl barley is tender and most of the liquid has been absorbed. If the mixture begins to dry out, add a little water. The final consistency should creamy and a little loose. If the mixture is too wet, cook for a few more minutes until more of the liquid has evaporated.
  • Stir the asparagus, peas and spring greens into the risotto and cook for 3-4 minutes until the asparagus is just tender.
  • Add the parmesan, lemon juice and chives. Stir to combine then taste. Add salt and pepper as required. Serve in bowls with grated parmesan and a sprinkle of chopped chives. Enjoy!

Pea Barley Risotto, a take on risotto, this dish combines fresh sweet peas and pearl barley. Finish it with butter and Parmigiano, like a classic risotto, or omit both to keep it vegan.

1 cup sweet peas, shelled
1 cup pearl barley
1 green onion, chopped
1 garlic clove, whole, smashed
2 Tbsp evo oil
salt & pepper
4 cups vegetable broth
1/4 cup white wine

Steps:

  • Cook peas in a pot of boiling salted water until crisp-tender, about 3 minutes. Drain under cold water. Set aside.
  • Prepare the vegetable broth in a medium/large pot and keep warm over low heat.
  • Heat 2 tablespoons evo oil in a saucepan (I like to use a Dutch oven) over medium heat. Add onion and garlic and cook, stirring, until softened, about 3-4 minutes. Add barley and salt. Stir to coat with the onion/garlic mixture for 1-2 minutes, or until lightly toasted. Add wine and cook, stirring, until evaporated.
  • Add 1 cup of broth and cook, stirring for about 5 minutes or until almost all absorbed.
  • Continue cooking for about 20 minutes, adding 1/2 cup warm broth at a time, stirring, waiting to add more until the liquid is nearly absorbed after each addition.
  • At about 15-minute cooking time add the peas, adjust with salt, stir, and continue to cook for about 5 minutes or until barley is tender but still al dente.
  • Turn off heat, add 1 Tbsp butter and a handful of Parmigiano (optional). Stir and let rest for a couple of minutes before serving.
  • Serve with some freshly cracked pepper on top.

Wow, if you love mushrooms, this has an amazing deep rich flavor that can't be beat! Giada's recipe from her cookbook, Everyday Italian. The secret to an intense mushroom flavor is simmering the dried Porcini mushrooms in hot chicken broth. Any dried mushrooms will do, pick your favorite or make it a mushroom combo. Can be served as a side entree or the main meal if you you add shrimp, which I like to do. Makes 6 generous side or main entree portions. Cooking time does not include cooking shrimp Add 5-7 minutes for this.

5 3/4 cups chicken broth
1/2 ounce dried porcini mushrooms or 2 tablespoons dried porcini mushrooms
1/4 cup butter
2 cups onions, finely chopped
2 garlic cloves, minced
10 ounces white mushrooms, finely chopped
1 1/2 cups arborio rice
2/3 cup dry white wine, I use Pinot Grigio
1/2 cup peas, frozen & thawed
2/3 cup parmesan cheese, freshly grated, I use Parm-Regiano
pepper, several grinds to taste
salt, plenty salty with the cheese (optional)
16 -36 raw shrimp, 4-6 per person (optional)

Steps:

  • Make this portion of the recipe ahead if desired:.
  • Bring the broth to a simmer and add the dried Porcini mushrooms. Cover, remove from heat, and set aside until the mushrooms are tender, about 5 minutes. Using a slotted spoon, remove the mushrooms, cool and chop fine. SAVE the broth, cover and keep warm over a very low heat.
  • Melt the butter in a large, heavy saucepan, over medium heat.
  • Add the onions and garlic and saute' until tender, about 6-8 minutes.
  • Add the white mushrooms, porcini mushrooms; saute' until the mushrooms are tender and the juices evaporate, about 7-10 minutes.
  • Stir in the rice and coat with the mushroom mixture.
  • Add the wine; cook, stirring often, until the liquid is absorbed, about 2 minutes.
  • Add 1 C of hot broth to the arborio rice; simmer over med-low heat, stirring often until the liquid is absorbed, about 3 minutes. Repeat and continue to cook until the rice is just tender and the mixture is creamy, adding more hot broth by cupfuls and stirring often, about 28 minutes. You may not use all the broth. Check for desired level of doneness. Some like it al dente, I prefer it more tender, so I add more time and keep checking.
  • Stir in the peas, mix in the Parmesan cheese, season with salt & pepper.
  • OPTIONAL: *At this point I top with defrosted raw shrimp. Nestle the shrimp into the risotto and let them cook through on one side, then flip over to cook the other side. They will turn pink and opaque in color. This takes about 5-7 minutes depending on the size of the shrimp.

1 small bulb fennel, chopped, plus 1/4 cup fronds
4 cloves garlic, finely chopped
1 teaspoon chopped fresh rosemary
Kosher salt and freshly ground pepper
1 1/2 cups quick-cooking pearl barley (about 8 ounces)
1 1/2 cups low-sodium chicken broth
1 1/4 pounds peeled and deveined medium shrimp
3/4 cup frozen peas
1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
1/4 cup grated parmesan cheese

Steps:

  • Melt 3 tablespoons butter in a large skillet over medium-high heat. Add the chopped fennel, garlic, rosemary and a pinch each of salt and pepper. Cook, stirring occasionally, until the fennel is softened, about 5 minutes. Stir in the barley until combined.
  • Add the chicken broth and 2 cups water. Bring to a simmer, then cover, reduce the heat to medium low and cook until the barley is tender but still a bit saucy, 8 to 10 minutes.
  • Uncover and stir in the shrimp and peas. Cover and cook, stirring occasionally, until the shrimp are just cooked through, about 5 minutes. Remove from the heat and stir in the lemon zest and juice and the remaining 2 tablespoons butter until melted. Stir in the parmesan and 2 tablespoons fennel fronds; season with salt and pepper. Divide among bowls and top with the remaining fennel fronds.

1 cup pearl barley
6 cups homemade or low-sodium store-bought chicken stock
2 tablespoons extra-virgin olive oil
1 cup finely chopped onion
1/2 cup dry white wine
12 ounces rock shrimp, peeled Maine shrimp, or other small peeled shrimp
2 1/2 cups frozen peas, thawed
1 tablespoon finely grated lemon zest
2 tablespoons fresh lemon juice
1/4 cup finely grated Parmesan cheese
1 teaspoon coarse salt
Freshly ground pepper

Steps:

  • Place barley in a bowl, and add enough cold water to cover by 2 inches. Cover; let soak in the refrigerator overnight.
  • Bring stock to a boil in a saucepan. Remove from heat, and cover. Drain barley. Heat oil in a medium saucepan over medium heat. Add onion; cook 6 minutes. Stir in barley. Add wine, and cook, stirring, until liquid has evaporated.
  • Add 1/2 cup stock, and cook, stirring, until liquid is absorbed. Continue adding stock, 1/2 cup at a time, waiting until liquid is absorbed before adding more, until barley is tender but still slightly firm, about 35 minutes total (reserve 1/4 cup stock to stir in at the end).
  • About 1 minute before barley is done, stir in shrimp and peas, and cook until shrimp are opaque throughout. Remove from heat, and stir in 1/4 cup stock, lemon zest, lemon juice, Parmesan, and salt. Season with pepper, and serve.

1/4 cup unsalted butter

Using a slotted spoon, transfer the porcini mushrooms to a cutting board. Finely chop the mushrooms and add to the saucepan. Saute until the mushrooms are tender and the juices evaporate, about 5 minutes. Stir in the rice and let it toast for a few minutes. Add the wine; cook until the liquid is absorbed, stirring often, about 2 minutes. Add 1 cup of hot broth; simmer over medium-low heat until the liquid is absorbed, stirring often, about 3 minutes. Continue to cook until the rice is just tender and the mixture is creamy, adding more broth by cupfuls and stirring often, about 28 minutes (the rice will absorb 6 to 8 cups of broth). Stir in the peas. Mix in the Parmesan. Season with salt and pepper, to taste.

1 lb shrimp (frozen raw , peeled)
1 lemon, juiced (optional)
3 pints canned chicken stock
1 tablespoon olive oil
2 medium onions, finely chopped

1/2 head celery, finely chopped
2 cups arborio rice
salt and pepper
1/2 cup butter
1/2 cup grated parmesan cheese

Steps:

  • Heat stock.
  • In a separate fry pan heat the olive oil.
  • Add onion, garlic and celery and slowly fry for about 3 minutes.
  • Add rice to veggies Season with s& p and turn up the heat.
  • As the rice begins to fry, stir it.
  • After a minute it will look slightly translucent Add your first ladle of hot stock and a 1/8 tsp.
  • salt.
  • Turn down the heat to a simmer.
  • Keep adding ladles of stock for 15 minutes, stirring and allowing liquid to be absorbed before adding the next.
  • Add stock until the rice is soft but firm Remove from the heat.
  • Add butter and Parmesan Stir gently.
  • Place lid on pan and allow to sit for 2 to 3 minutes.
  • Add shrimp and peas and simmer for 1 minute.
  • S& P to taste Serve with a bit of olive oil drizzled over the top.
