1 tablespoon olive oil
1 large sweet potato, peeled and finely chopped
1 medium onion, coarsely chopped
1 small green pepper, coarsely chopped
1 small sweet red pepper, coarsely chopped
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 cup frozen corn
1 can (4 ounces) chopped green chiles
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 cup vegetable broth
3 ounces cream cheese, softened
TOPPING:
1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
1/3 cup low-fat milk
1/3 cup solid-pack pumpkin

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium-high heat. Add sweet potato, onion and peppers; cook and stir 5-7 minutes or until potato is cooked halfway through., Stir in beans, corn, chiles, salt and cumin; heat through. Stir in broth and cream cheese until blended. Transfer to a greased 13x9-in. baking dish., In a large bowl, combine cornbread mix, egg, milk and pumpkin. Spoon over bean mixture. Bake, uncovered, 25-30 minutes or until a toothpick inserted in the topping portion comes out clean. To Make Ahead: Can be made a day in advance. Prepare as directed, omitting topping. Cover and refrigerate overnight. Remove from refrigerator 30 minutes before baking. Prepare topping and bake as directed.

2 15-ounce cans refried pinto beans
2 cups frozen corn (preferably fire-roasted)
2 poblano chile peppers, seeded and chopped
1/2 cup chopped fresh cilantro, plus more for topping
2 teaspoons ground cumin
1 teaspoon ancho chile powder
1 16-ounce jar salsa
1 10-ounce can diced tomatoes and green chiles
1 10-ounce can diced tomatoes and green chiles
2 cups shredded cheddar cheese (about 8 ounces)
2 cups shredded muenster cheese (about 8 ounces)
18 to 20 corn tostada shells
2 avocados, sliced
Sour cream and pickled jalapenos, for topping (optional)

Steps:

  • Combine the refried beans, frozen corn, poblanos, 1/4 cup cilantro, the cumin and chile powder in a medium bowl. Combine the salsa, tomatoes and the remaining 1/4 cup cilantro in a separate medium bowl. Toss the cheddar and muenster cheese in a third bowl; set aside.
  • Spread about 1/2 cup of the salsa mixture in a thin layer in a 6-quart slow cooker. Top with about 6 tostada shells, breaking them as needed to cover the bottom. Spread half of the bean mixture over the tostada shells, then sprinkle with 1 1/2 cups of the cheese mixture and 1 cup of the salsa mixture. Repeat the layers (tostada shells, bean mixture, cheese, salsa mixture), then top with the remaining tostadas, cheese and salsa.
  • Cover and cook on low, 4 hours. Uncover and let rest 15 minutes. Serve with the sliced avocados, sour cream, cilantro and pickled jalapenos.

I got the idea from Charlie Gibson's casserole but with green beans as the main ingredient. I just threw in what I had in the pantry at the time. I approximated the quantity of the ingredients , you can always add or subtract to suit your taste. My recipe looks sketchy but that's how I cook day to day.

This Easy Tex Mex Casserole has turned into a favorite meal. Flavorful ground beef topped with corn bread makes an easy casserole even the kids will love!

1 pound ground beef
1 medium onion, diced
1 green bell pepper, diced
1 teaspoon ground cumin
1/2 teaspoon salt
1 cup salsa (I used a corn and black bean salsa - hence the black beans in the photos)
1 (15.25 ounce) can corn, drained
1 (8 ounce) corn bread mix

Steps:

  • Preheat oven to 400*F
  • In a skillet cook ground beef, onion, bell pepper, cumin & salt until ground beef is cooked through and onions are translucent.
  • Add salsa & corn to ground beef mixture and cook for additional 10 minutes.
  • Pour mixture into a 9x9 casserole dish.
  • Prepare muffin mix according to package directions and spread on top of ground beef mixture.
  • Bake for 20 - 25 minutes or until corn bread is cooked through and golden on top.
  • Serve immediately.

2 tablespoons olive oil
2 cloves garlic, crushed with a press
2 cans (15.5 ounces each) black beans, rinsed and drained
Salt
2 cans (14.5 ounces each) diced tomatoes with green chiles
1/2 cup fresh cilantro leaves
10 corn tortillas
6 ounces shredded Monterey Jack cheese
1/2 cup reduced-fat sour cream

Steps:

  • In a medium pot, heat oil and garlic over medium and cook until fragrant, 2 minutes. Add beans and 3/4 cup water and bring to a simmer until beans are very tender, about 5 minutes. Mash slightly and season with salt. Meanwhile, in a blender, puree diced tomatoes with cilantro.
  • Lay 4 tortillas in the bottom of an 8-inch square baking dish. Top with one-third of the tomatoes, half the bean mixture, and one-third of the cheese. Repeat, using 3 tortillas. Top with remaining 3 tortillas, remaining tomatoes, and cheese. Cover with foil and bake (or refrigerate up to 8 hours).
  • Preheat oven to 450 degrees. Bake, covered, until cheese is melted, about 15 minutes; remove foil, reduce oven to 350 degrees, and bake until heated through and cheese is browned, 20 minutes. Serve with sour cream.

1 can (11 oz.) corn with red and green bell peppers, undrained
1/2 cup chopped onions
3 cups cooked long-grain white rice
1 cup KRAFT Mozzarella & Cheddar Cheese Expertly Paired for Mac 'n Cheese & Casseroles, divided
1 cup crushed tortilla chips
3 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 350ºF.
  • Brown meat in large nonstick skillet. Meanwhile, mix cream cheese spread, seasoning mix and milk until blended.
  • Drain meat; return to skillet. Add cream cheese mixture, tomatoes, corn and onions; mix well.
  • Combine rice and 1/2 cup shredded cheese in 13x9-inch baking dish sprayed with cooking spray; spread to cover bottom of dish. Top with meat mixture and remaining shredded cheese; cover.

3 cups chopped yellow onions
3 red bell peppers, finely chopped
8 garlic cloves, finely chopped
3 lbs extra lean ground beef
2 teaspoons salt
6 tablespoons medium-hot chili powder, such as Gebhardt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
1/2 teaspoon fresh ground black pepper
1 (14 ounce) can beef broth
1 3/4 cups canned crushed tomatoes in puree
1 cup lager beer
3 canned chipotle chiles in adobo, finely chopped
1 tablespoon adobo sauce, from canned chipotle chiles
1 (1 lb) package frozen corn kernels, thawed
1 1/4 lbs shredded sharp cheddar cheese
1 lb shredded monterey jack cheese
144 inches corn tortillas
1 (29 ounce) can refried beans
3/4 cup chopped white onion
6 cups about finely shredded romaine lettuce
2 cups sour cream, room temperature, whisked until smooth

Steps:

  • Heat oil in heavy large deep saute pan over medium heat.
  • Add yellow onion, bell peppers and garlic. Saute until tender, about 10 minutes.
  • Add ground beef. Sprinkle with salt. Saute until meat is no longer pink, breaking up meat with back of spoon, about 10 minutes.
  • Add chili powder, cumin, oregano and black pepper; saute 3 minutes.
  • Add broth, tomatoes, beer, chipotle chiles and adobo sauce. Simmer uncovered until liquid reduces slightly, stirring occasionally, about 40 minutes.
  • Add corn and simmer until mixture thickens slightly, about 10 minutes.
  • Remove from heat. Cool to room temperature.
  • Cover chili and refrigerate at least 1 day.
  • DO-AHEAD TIP: Chili can be made up to 2 days ahead. Keep refrigerated.
  • Position rack in upper third of oven and preheat to 375 degrees F.
  • Combine both cheeses.
  • Spread 2 tablespoons beans over one side of 6 tortillas.
  • Arrange tortillas bean side up and overlapping slightly in 14-by-11-by-3-inch baking dish.
  • Spoon 1/3 of chili evenly over tortillas.
  • Sprinkle 2 cups cheese mixture, then 1/4 cup onion over.
  • Repeat layering 2 times.
  • Spread remaining 6 tortillas with remaining beans, then arrange tortillas bean side down in casserole.
  • Sprinkle with remaining cheese mixture.
  • Bake until casserole is heated through and bubbling, about 50 minutes.
  • Let stand on cooling rack for 5 minutes.
  • Cut casserole into generous squares.
  • Sprinkle with shredded lettuce and top with dollop of sour cream, and serve.

These are so yummy! I got this recipe somewhere on the internet years ago and have tweaked it a bit. These freeze really wonderfully, so make extras! Even my Mexican Sister in Law has asked for this recipe and uses it herself!

2 lbs dry pinto beans
1/2 lb salt pork
1/4 cup fresh cilantro, chopped
3 -5 fresh jalapeno peppers
10 garlic cloves
2 medium onions, chopped fine
1 tablespoon salt, to taste
3 tablespoons chili powder
1 tablespoon cumin
2 teaspoons dried oregano

Steps:

  • Soak beans overnight covered w/ water. In the morning, drain off the water.
  • Mix all ingredients together in pot, cover with water by about 1 inch and bring to a boil.
  • Once boiling, turn to low and let cook all day or until beans are tender.
  • Check and stir often, adding water as necessary.
  • You can split between two crockpots and cook on high 6-7 hours or on low all day. Be warned that the juices will not be as thick as if you cooked it on the stove.
