CHIPOTLE-HONEY GLAZED TILAPIA
There's nothing fishy about perfectly cooked sweet-and-spicy tilapia.

Steps:
- Put the chipotle chiles, honey, scallions, 2 tablespoons of the oil, 1 teaspoon salt and a few grinds of pepper in a food processor and pulse until combined. Transfer to a large bowl, add the tilapia and toss to coat evenly; set aside for 10 minutes at room temperature.
- Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook, turning once, until just cooked through, 5 to 7 minutes. Serve with coleslaw and lemon wedges on the side.
ORANGE TILAPIA
Steps:
- Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.
- Preheat oven to 400 degrees F (200 degrees C).
- Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.
- Remove tilapia from the orange juice and shake to remove excess liquid; arrange fillets in a 13x9-inch baking dish. Discard marinade.
- Pour 1/2 cup orange juice over the tilapia fillets. Spread butter mixture over the top of the filets to cover each completely.
- Bake in preheated oven until the liquid is bubbling and the fish flakes easily with a fork, about 15 minutes.

- Use a 6-quart slow cooker. Lay a length of foil on your countertop and place the fish directly in the middle. Dribble balsamic vinegar and honey over the top of each fillet, and place a handful of drained mandarin oranges on top.
- Fold over foil and crimp the edges to form a packet. Put the foil packet into your slow cooker, and put the lid on (if you'd prefer to have one fish fillet per packet for serving, divide the sauce and the oranges). Cook on high for two hours, or until fish flakes easily with a fork. If your fish was frozen, it may take another 30 minutes or so, but you should still check it after two hours.
- Season to taste at the table.

GRILLED ORANGE-GINGER TILAPIA

- In a small bowl combine 2 tablespoons olive oil, with orange rind, orange juice, ginger root and 1/4 cup coriander. Season with salt and pepper. Spray 4 large pieces of aluminum foil with cooking spray and place on fish in the center of each.
- Divide orange mixture in 4ths and spoon into the body of each fish. Add 2 slices of the orange inside the fish. Wrap tightly and place on preheated grill. Grill over medium heat for about 30 minutes or until fish is done. Meanwhile combine yogurt, mayonnaise, lime juice, remaining olive oil and remaining coriander in a bowl.
- When fish are done remove from grill and unwrap. Be careful of the hot steam. Place on plate and pour 1/4th of the sauce over each fish.

HONEY SESAME TILAPIA
This recipe was published in the food section of The Milwaukee Journal Sentinel. Unfortunately, I can't give proper credit because after trying the recipe once, it went into our family favorites cookbook and I tossed the clipping. My kids all love it, and every guest who has tried it has asked me for the recipe. Note: The recipe calls for sesame sticks, which are a snack food, found in most grocery stores, health food stores and nut specialty shops. Please don't try using sesame seeds instead, as I suspect one reviewer has done, or your results may not be as wonderful. :o)

- Wash and pat dry tilapia.
- In shallow bowl, mix together mustard, honey, soy sauce, and sesame oil.
- Place sesame sticks in food processor and crush until it resembles coarse sand. Place in large shallow bowl.
- Brush each tilapia fillet on both sides with honey-mustard mixture, then coat with crushed sesame sticks.
- Place coated fish on a non-stick or lined baking tray and bake at 375 degrees for 15 minutes.

HONEY SOY TILAPIA
Steps:
- Mix the honey, soy sauce, balsamic vinegar, and garlic together in a bowl. Place the tilapia fillets in the mixture; allow to marinate in refrigerator at least 30 minutes.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
- Remove tilapia from marinade, and discard the marinade. Place fillets into the prepared baking sheet, and sprinkle the black pepper over the fish.
- Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.

- To prepare the marinade, in a small bowl, whisk together orange juice and peeled garlic, ginger and oil.
- Place the fillets in a shallow dish and cover with the marinade for 20-30 minutes.
- Remove the tilapia from the marinade and reserve it.
- Dredge the fillets in seasoned flour to coat shaking off excess.
- Heat 2 tbs oil in a large saute pan over medium high heat and add tilapia and cook until lightly golden 3-4 minutes per side and then remove from the pan.
- Add remaining marinade to the pan bring to a boil and cook for 1 minute, reduce heat and simmer until it has a glaze consistency, 3-4 minutes.
- Pour the sauce over the tilapia and garnish with green onions.

ORANGE-SAUCED TILAPIA
A takeoff on Uncle Bill's recipe #88212-- served as a terrific fish sauce. Adds a tangy compliment to sauteed Tilapia.(Prep time doesn't include refrigeration.)

- Mix first 7 ingredients together in a jar; cover; and shake to blend.
- Refrigerate for at least a hour to meld flavors.
- When ready to serve, dip each fillet in the orange mixture; then in cracker crumbs to cover.
- Melt butter in a large skillet over MEDIUM heat; when foam subsides, add fillets and cook on each side until fish flakes, about 10-15 minutes (depends on the thickness of fish).
- Do not overcook!
- Remove fish to warm platter.
- In small sauce pan, bring remaining orange sauce to a boil.
- Cook about 2-3 minutes.
- Sauce will be thin.
- Reduce heat to LOW; add mandarin oranges slices.
- Cook 1 minute to heat orange slices.
- Serve sauce over fish.

- Combine flour and pepper and salt. Cover tilapia filets in flour mix - there is no wash, so only a light layer will stick.
- Heat 2 tablespoons of the olive oil in a large pan. Cook floured tilapia in olive oil, about 2 or 3 minutes on each side, until firm to the touch. Remove tilapia from pan and cover to keep warm.
- Wipe the pan clean and add the remaining 2 tablespoons of olive oil. Add the onion and saute in pan until almost cooked, 6-8 minutes. Add the orange juice, lemon juice, ginger, sriracha and bring to a simmer. Whisk in the butter and remove the sauce from the heat. Spoon over the tilapia and serve.
