I can remember my Grandma Wheeler making these delicious muffins-we'd eat them nice and warm, fresh from the oven! She was a "pinch of this and handful of that" kind of cook, so getting the ingredient amounts correct for the recipe was a challenge. Now it's a family treasure! -Darlis A. Number Of Ingredients 8

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature
1 cup 2% milk
1/4 cup butter, melted
1/4 cup honey

Steps:

  • Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, butter and honey. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds.

1 teaspoon baking soda

1/2 cup honey
1/2 cup orange juice
1/3 cup butter, melted
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; set aside. In a bowl, beat eggs. Add honey, orange juice, butter and vanilla; mix well. Stir into dry ingredients just until moistened. , Fill 12 greased muffin cups two-thirds full. Bake at 375° until golden brown, 15-20 minutes.

3/4 cup cooking oil
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/4 cup fresh orange juice
2 tablespoons grated orange rind

Steps:

  • Combine oil, sugar and eggs. Mix well. Add remaining ingredients. Blend, do not over mix. Pour into greased muffin pan. Bake at 350 degrees for 10 to 15 minutes.
  • TIP:
  • RED ORANGES
  • Use blood oranges in your favorite recipes as you would regular oranges. Taste for sweetness, you may have to add a bit more sugar in some recipes.

I took one of the Honeycake recipes (#28970) and modified it extensively to create these orange honey muffins. The amounts are approximate... I tend not to measure much when I cook.

10 tablespoons unsalted butter
1/2 tablespoon orange marmalade (optional)
1/2 teaspoon orange zest
8 ounces orange blossom honey (1/2 jar)
3/4 cup low-fat Greek yogurt (2%)
2 large eggs
3/4 cup sugar
1 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ginger
1/4 teaspoon cinnamon (Saigon)

Steps:

  • Preheat at 375 degrees F.
  • Combine the Flour, Baking Powder, Baking Soda, Ginger, and Cinnamon in a large mixing bowl.
  • Melt the Butter with the Marmalade in a separate large mixing bowl.
  • Add the Orange Zest, Orange Blossom Honey, Greek yogurt, mix well.
  • Add the eggs and beat in until well mixed.
  • Slowly beat in the sugar.
  • Add the wet mixture to the dry mixture and stir just until combined (a slightly lumpy batter is desired).
  • Add mixture to muffin tins (with paper or greased) until about 2/3 full.
  • Cook about 20 minutes until golden brown.
  • Cool 5 minutes in pan, then on rack. (These store well bagged once cool).

I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Cream margarine and sugar.
  • Beat in eggs and stir in oat mixture.
  • Stir in raisins and vanilla.
  • Add flour, baking powder, baking soda and salt.
  • Stir until moistened.
  • Pour into well greased muffin cups.
  • Bake at 350 degrees for about 20 minutes.

1 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup all-purpose flour
1/3 cup brown sugar, firmly packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1/3 cup dates (optional) or 1/3 cup raisins, chopped (optional)
8 ounces plain nonfat yogurt or 3/4 cup low-fat buttermilk
3/4 cup banana, mashed and ripe (about 2 medium)
2 egg whites or 1 egg, lightly beaten
2 tablespoons vegetable oil
1 1/2 teaspoons orange zest

Steps:

  • Heat oven to 400°F Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
  • In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.).
  • Fill muffin cups almost full.
  • Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.
