2 tablespoons avocado oil
4 (6-ounce) salmon filets ((Alaskan Sockeye or Coho))
1 orange (juiced)
2 cloves garlic (minced)
2 tablespoons honey
2 tablespoons tamari
1 teaspoon thyme (finely chopped)
salt and pepper (to taste)

Steps:

  • Pat salmon dry with a paper towel, then season with salt and pepper.
  • Heat the avocado oil in a pan on medium high heat. Add salmon and cook for 3-4 minutes each side.
  • While the salmon is cooking, make an arrowroot slurry by stirring together the arrowroot powder and water. Set aside.
  • Once the salmon is cooked, transfer to a plate.
  • Turn the heat down to medium-low and sauté the minced garlic in the pan for 30 seconds. Add the orange juice, honey, tamari, thyme and arrowroot slurry. Whisk the ingredients together for 1-2 minutes or until slightly thickened.

RISOTTO CAKES

Risotto Cakes image

Categories     side-dish

Time 1h30m

Yield 6 large cakes

Number Of Ingredients 15

4 ounces low-moisture shredded mozzarella
3 cups low-sodium chicken broth
3 tablespoons unsalted butter
2 large shallots, minced (about 1/2 cup)
1 cup Arborio rice
3/4 cups dry white wine
5 ounces frozen peas, defrosted
1/3 cup lemon juice
1 tablespoon lemon zest
1 1/4 cups freshly grated Parmesan
Salt and freshly ground black pepper
1 cup all-purpose flour, for dredging
2 eggs, beaten
1 1/2 cups panko breadcrumbs
Vegetable oil, for frying

Steps:

  • For the risotto: In a medium saucepan, heat the chicken broth to a simmer. In a separate saucepan, melt the butter over medium-high heat. Add the shallots to the butter, cooking until fragrant and translucent, about 2 minutes. Add the Arborio rice and lightly toast, stirring to coat in the butter and shallots. Add the white wine, continuing to cook while stirring until the wine is absorbed. You should be able to run your spoon through the risotto and have the indentation stay. Using a ladle, add enough of the warm chicken broth to cover the rice, stirring constantly over medium heat until the broth is completely absorbed. Repeat the process 3 more times, adding the broth in stages while continuing to stir. Once all of the chicken broth has been added and the rice is tender, add the peas, lemon juice and lemon zest and stir to combine. Remove from the heat and stir in the Parmesan, mozzarella and season with salt and pepper. Cool the risotto by spreading it evenly over a sheet tray. Cover with plastic wrap and chill in the refrigerator for 20 to 30 minutes. Once the risotto is cooled, form the mixture into burger-size patties, about 1-inch thick. Set up a dredging station with the flour in one dish, beaten eggs in another and panko breadcrumbs in another. Dip the rice patties into the flour, then into the eggs and finally coat them in the panko breadcrumbs. In a large skillet, heat 1/2-inch vegetable oil over medium heat until a pinch of panko sizzles when dropped in the oil. Working in batches of 2 to 3, fry the risotto cakes until golden brown, 2 to 3 minutes per side (use a fish spatula under the cake and the back of a fork on top to help stabilize while flipping). Transfer to a wire rack, which will help them stay crispy. Season with salt and they are ready to serve. Cook's Note: This is a great way to use up leftover risotto.

Mediterranean Salmon en Papillote (in a paper package) image

Provided by Kelsey Nixon

Time 27m

Yield serves 4

Number Of Ingredients 14

1 cup chicken broth
3/4 cup uncooked couscous
1 cup halved grape tomatoes
1/4 cup chopped pitted kalamata olives
2 tablespoons minced red onion
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh oregano
1 teaspoon minced garlic
7 teaspoons extra virgin olive oil, divided
4 TBS Greek seasoning*
4 (6-ounce) salmon fillets
1 Spanish onion, sliced
12 thin lemon slices (about 1 1/2 lemons)

Steps:

  • 1. Preheat oven to 425 degrees F.
  • 2. Bring 1 cup chicken broth to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Place couscous, tomatoes, and the next 6 ingredients in a large bowl. Add 1 tablespoon oil, and season to taste with kosher salt and cracked black pepper; toss to combine. Set aside.
  • 3. Cut 4 (15 x 24-inch) pieces of parchment paper. Fold in half crosswise. Draw a large heart half on each piece, with the fold of the paper being the center of the heart. Cut, following the heart shape, and open. Sprinkle both sides of fillets with 1 TBS of Greek seasoning each. Place 1 fillet near the fold of each piece of parchment. Top each fillet with 1/4 cup onion slices and 3 lemon slices; drizzle 1 teaspoon oil over each serving. Starting at the top of the heart, fold edges of parchment, sealing edges with narrow folds. Twist the end tip to secure tightly. Place packets on a baking sheet. Bake at 425degrees for 12 minutes. Place on plates; cut open. Serve immediately with couscous.

JAPANESE SEAFOOD RISOTTO

Japanese Seafood Risotto image

Categories     main-dish

Time 1h40m

Yield 4 to 6 servings

Number Of Ingredients 16

8 cups chicken stock
2 tablespoons vegetable oil
2 tablespoons finely minced ginger (about one 1-inch piece)
5 scallions, sliced, white and green parts separated
2 cups Arborio rice
Kosher salt
1/3 cup sake
8 ounces small-medium shrimp, halved lengthwise (I like to use rock shrimp or Laughing Bird shrimp if available)
3/4 cup frozen shelled edamame, thawed
2 tablespoons white miso
1/4 cup mirin
Zest and juice of 1 lemon
8 to 12 ounces jumbo lump crabmeat, picked through for shells
Toasted sesame oil, for garnish
Soy sauce, for garnish
Toasted shredded nori, for garnish

Steps:

  • Heat the chicken stock in a medium saucepot and keep warm.
  • Coat a straight-sided pan with the vegetable oil and set over medium heat. Add the ginger and scallion whites and cook until aromatic, 3 to 4 minutes. Add the rice, sprinkle with salt and cook for a minute or two to toast the rice. Deglaze with the sake and cook for about a minute to allow the alcohol to burn off. Add a few ladles of hot stock to the rice, just enough to cover, and cook, stirring constantly, until the rice has absorbed the stock. Add a few more ladles of stock and repeat. You will do this 4 to 6 times, until all of the stock is absorbed and the rice is cooked through but still has a nice bite to it. The whole process should take about 20 minutes.
  • Once the rice is cooked, stir in the shrimp and edamame and let the heat of the rice gently cook the shrimp. Once the shrimp have turned opaque, stir in the miso paste. Beyond this point, do not let the risotto boil; miso tastes bitter if it boils. Check the seasoning and adjust the salt as needed. Add the mirin, lemon zest and juice and scallion greens and gently fold in the crabmeat.
  • To plate, spoon a generous amount of risotto into a serving bowl, drizzle with a little sesame oil, add a splash of soy sauce and top with some nori.

WHOLE ROASTED SALMON WITH ORANGE BUTTER GLAZE

Whole Roasted Salmon with Orange Butter Glaze image

A whole fish is easier to prepare than you might think, and it makes an impressive presentation for guests.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Yield Serves 12

Number Of Ingredients 9

4 leeks, trimmed of dark-green stem, sliced in half lengthwise
4 oranges
1 whole salmon, about 8 pounds, head and tail on, scaled, cleaned
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 red onion, cut into 1/8-inch-thick rounds
6 sprigs fresh cilantro
1 tablespoon unsalted butter
1 cup dry white wine

Steps:

  • Heat oven to 400 degrees. Strew bottom of 12-by-18-inch jelly-roll pan or 12-by-16-inch half-sheet pan with leeks; set aside. With a sharp knife, cut away the peel, pith, and outer membranes from 2 oranges; slice orange flesh into 1/4-inch-thick rounds; set aside.
  • Rinse salmon under cold water, making sure cavity of fish is completely clean. Pat fish dry with paper towel. Cut 3 shallow slits through salmon's skin, about 3 inches apart, on each side of fish. Season salmon cavity with salt and pepper.
  • Stuff cavity with cilantro sprigs, reserved orange rounds, and onion rounds. Drape a large piece of cheesecloth over leeks in bottom of roasting pan. Place salmon on top of cheesecloth.
  • Squeeze juice from remaining 2 oranges into small saucepan; place pan over medium-high heat, and bring juice to a boil. Add butter, and stir until melted; remove pan from heat. Brush salmon with orange-juice mixture. Place roasting pan in oven, and roast salmon, basting every 10 minutes with orange-juice mixture, until skin is crispy and dark golden brown and meat is pink and firm to the touch, about 1 hour. If head or tail of fish become too dark, gently fold aluminum foil over them. Remove pan from oven; pour wine into pan to help loosen salmon. Using cheesecloth to help lift fish, carefully transfer to serving platter. Gently remove cheesecloth from under fish, and serve.
