Provided by Lydia Fagan and Isabella Wilson

Categories     Afternoon tea, Dessert

Time 45m

Yield Serves 12-16

Number Of Ingredients 10

150g margarine or butter, plus extra for the tin
150g caster sugar
3 eggs
150g self-raising flour
1 orange , zested and juiced
250g tub mascarpone
1 tbsp icing sugar
4 tbsp fresh orange juice
1 tsp vanilla extract
2 passion fruit

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line a 20 x 24cm cake tin with baking parchment. Cream the margarine or butter with the caster sugar using an electric whisk until light and fluffy, then beat in the eggs one at a time. Sieve in the flour and fold it in. Add the orange zest and juice, fold that in as well, then pour into the prepared tin, smoothing over the top. Bake for 25 mins until golden. A skewer should come out clean when inserted in the middle.
  • Remove the cake from the oven, leave for 5 mins, then remove from the tin, peel away the parchment and leave to cool on a wire rack.
  • Meanwhile, make the topping by mixing the mascarpone, icing sugar, orange juice and vanilla until smooth. Cut open the passion fruit, scoop out the seeds, then add half to the mix, reserving the rest.
  • Use a palette knife to spread the topping over the cooled cake, then drizzle over the remaining passion fruit seeds.

LEMON & ELDERFLOWER TRAYBAKE

Lemon & elderflower traybake image

This clever twist on the classic bakewell has a delicate floral flavour, making it ideal for serving at spring garden parties or bake sales

Provided by Samuel Goldsmith

Categories     Afternoon tea, Dessert

Time 1h50m

Yield Serves 12-15

Number Of Ingredients 15

250g lemon curd, plus extra to decorate
250g butter, softened
250g caster sugar
2 lemons, zested
4 eggs
100g self-raising flour
150g ground almonds
200g plain flour, plus extra for dusting
125g cold unsalted butter, cut into cubes
1 tbsp caster sugar
1 lemon, zested
1 egg yolk
200g icing sugar
2 lemons juiced (use the zested lemons above)
2 tbsp elderflower cordial

Steps:

  • First, make the pastry. Tip the flour, butter, sugar and lemon zest into a food processor and blitz until the mixture resembles fine breadcrumbs. Tip in the egg yolk and ½-1 tbsp cold water and blitz again to bring everything together into a dough. If the dough isn't coming together, add more cold water, ½ tsp at a time, and blitz again. Roll the pastry out on a lightly floured surface to a 3mm thickness, then use it to line the base of a loose-bottomed traybake or brownie tin (ours was 20 x 30cm). Transfer to the fridge and chill for 20 mins.
  • Heat the oven to 200C/180C fan/gas 6. Line the chilled pastry case with baking parchment and baking beans, then bake for 15 mins. Remove the parchment and beans and bake for 5 mins more until the pastry is lightly golden. Leave to cool for a few minutes before spreading over the lemon curd, leaving a 2cm border around the edges (it will spread out when the cake batter is poured over). Turn the oven down to 180C/160C fan/gas 4.
  • Beat the butter, sugar and lemon zest together using an electric whisk or in a stand mixer until pale, light and fluffy, about 8 mins. Beat in the eggs, one at a time along with 1 tbsp of the flour, then fold in the remaining flour and the ground almonds. Carefully spoon the batter over the lemon curd and gently spread out using the back of the spoon, then bake for 35-40 mins until a skewer inserted into the middle comes out clean. Leave to cool in the tin completely, then carefully remove to a board.
  • To make the icing, combine the icing sugar, lemon juice and elderflower cordial until loose enough to drizzle over the sponge, then swirl over extra lemon curd, if you like. Cut into squares and serve. Will keep in an airtight tin for up to three days.

ELDERFLOWER ORANGE JELLY

Elderflower Orange Jelly image

This is not a clear jelly; if you want a very smooth consistency, use orange juice without pulp. Make sure that you pick elderflowers that have not been sprayed with pesticides.

Provided by ilka222

Categories     Jams and Jellies

Time P1DT35m

Yield 96

Number Of Ingredients 6

12 large elderflower umbels (flowerheads)
4 ½ cups orange juice
2 ½ cups white sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
¼ teaspoon citric acid powder, or as needed
6 pint canning jars, lids, and rings

Steps:

  • Place elderflower umbels into a plastic or glass bowl. Pour orange juice on top so the flowers are fully immersed. Weigh down flowers with a small plate if necessary. Cover and let sit in the refrigerator for 24 hours.
  • Place a small plate in the freezer. Line a colander with 2 layers of cheesecloth and strain orange juice into a large, heavy pot. Add the sugar and heat slowly, stirring to dissolve the sugar. Add the pectin and bring to a full boil on high heat, stirring constantly. Boil for exactly 1 minute, stirring constantly. Remove the pot from the heat.
  • Inspect 6 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jelly is ready. Wash new, unused lids and rings in warm soapy water.
  • Remove the plate from the freezer and spoon about 1/2 teaspoon of the hot jelly on the plate. Tilt the plate back and forth and wait for a few seconds; if the jelly sets, it has the right consistency. If jelly remains liquid, return pot to the heat, add citric acid, and boil for 30 more seconds. Repeat the jelling test. Skim off any foam with a ladle or a large spoon.
  • Pack jelly into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

PASSION LAYER TORTE

Passion layer torte image

Get ahead for a dinner party or celebration with this indulgent, fruity cake which can be frozen for up to 2 months

Provided by Justine Pattison

Categories     Afternoon tea, Dessert, Treat

Time 1h25m

Number Of Ingredients 12

225g softened butter , cubed, plus extra for greasing
225g caster sugar
4 large eggs
225g self-raising flour
50g desiccated coconut
finely grated zest 1 orange
1 tsp baking powder
5 large passion fruits
225g softened butter , cubed
375g icing sugar , sifted
280g full-fat cream cheese
75g white chocolate

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease 2 x 20cm loose-based sandwich tins and line the bases with discs of baking parchment. Put the butter, sugar, eggs, flour, coconut, orange zest and baking powder in a food processor or food mixer and blend or beat until well combined, thick and creamy. Do not over-blend or the cake will be tough rather than light. If you don't have a food mixer, put all the ingredients in a bowl and beat hard with a wooden spoon until soft and creamy.
  • Spoon the mixture evenly into the prepared tins and smooth the surface. Bake on the same shelf in the centre of the oven for 25 mins or until well risen and just beginning to shrink back from the sides of the tin. Remove the tins from the oven and leave to cool for 5 mins before running a knife around the edge of the cakes and turning out onto a wire rack. Peel off the parchment and leave to cool completely.
  • When the cakes are completely cold, very carefully cut horizontally through each one with a serrated knife to make 4 thin sponges. To make the frosting, cut the passion fruits in half and scoop into a sieve. Press through the sieve to strain the juice - you should have 4 tbsp. Set aside and reserve the seeds. Put the butter, icing sugar and cheese in a food processor or mixer and blend until smooth. Do not overbeat or it will become runny. Slowly add the passion fruit juice and blend until just combined.
  • Place one of the sponges, cut-side down, on the metal base of the sandwich tin and put on an upturned bowl on a tray. This will help make frosting the cake easier. Spread with roughly a fifth of the frosting - just enough to cover the sponge. Use a paddling motion with a palette knife or soft spatula for the best result, trying to keep contact with the cake to prevent the sponge from lifting.
  • Cover with a second cake, spread with frosting and repeat the layers once more, ending with the last sponge, cut-side down. By this stage, you should have layered 4 cakes with passion fruit frosting between 3 of them. Use the remaining frosting to spread over the top and sides of the cakes to cover completely. Don't worry if the sides are a little messy, as the grated chocolate should cover any imperfections.
  • Put the cake in the fridge for 30-60 mins to allow the icing to set a little. Coarsely grate the chocolate. Working your way slowly around the cake, scoop grated chocolate onto a palette knife and sweep up the sides of the cake, pressing into the soft icing.
  • Take the cake off the bowl, slide the palette knife between the cake and the metal base, and gently transfer to a plate or cake stand. (If the icing is too soft to do this, pop the cake in the freezer for 30 mins and then try again.) Chill until ready to serve. Before serving, drizzle over 1 tsp of the reserved passion fruit seeds over the top of the cake. If making a day ahead, cover with a cake tin or a bowl large enough to cover the cake without touching it, so the cake doesn't get damaged in the fridge.
