Jazzing up the beef with black bean sauce and loadsa veg makes a delicious meal with minimal fuss

130 g long-grain or basmati rice
200 g sirloin or rump steak
1 red pepper
1 handful baby corn
1 thumb-sized piece fresh ginger
2 cloves garlic
½ fresh red chilli
2 spring onions
½ a bunch fresh coriander, (15g)
1 handful mangetout
1 tablespoon sesame oil
1 tablespoon groundnut oil
2 tablespoons good-quality black bean sauce
1 tablespoon soy sauce
2 limes
1 large free-range egg

Steps:

  • Bring a pan of salted water to the boil, add the rice and cook according to the packet instructions. Drain the rice in a sieve, run it under a cold tap to cool, and then allow to dry out in the fridge.
  • Trim any excess fat from your steak and slice the meat into finger-sized strips. Halve and deseed your pepper and cut it into thin strips. Trim and halve your baby corn lengthways. Peel and finely slice the ginger and garlic. Finely slice the chilli. Cut the ends off your spring onions and finely slice. Pick the coriander leaves and put to one side, and finely chop the coriander stalks.
  • Get yourself a big bowl and put in the red pepper, baby corn, mange tout, ginger, garlic, chilli, spring onions, coriander stalks and steak strips. Add the sesame oil and mix everything together.
  • Preheat a wok or large frying pan on a high heat and once it's very, very hot add half of the groundnut oil and swirl it around. Add all your chopped ingredients from the bowl. Give the pan a really good shake to mix everything around quickly. Stir-fry for 2 minutes, taking care to keep everything moving so it doesn't burn. Add the black bean sauce, and stir in half the soy sauce and the juice of half a lime. Keep tossing. Taste and season with black pepper.
  • Remove the pan from the heat, transfer everything to a bowl and cover with tin foil.
  • Give the pan a quick wipe with a ball of kitchen paper and put back on the heat. Add the rest of the groundnut oil and swirl it around. Crack in your egg and the remaining soy sauce - the egg will cook very quickly so keep stirring. Once it's scrambled, stir in your chilled rice, scraping the sides and the bottom of the pan as you go. Keep mixing for a few minutes until the rice is steaming hot, then taste and season with a small splash of soy sauce, if needed.
  • Divide the rice between two bowls or plates. Spoon over the meat and black bean sauce and sprinkle over the coriander leaves. Serve with wedges of lime - great!

2 x 200g rump or sirloin steaks
1 tbsp seasoned cornflour
2 tbsp sunflower oil
1 sliced large onion
1 sliced red pepper
200g pack of tenderstem broccoli
2 tbsp fermented black bean sauce (or use roughly 100ml regular black bean sauce)
1 grated thumb-size chunk of fresh ginger
2 crushed fat garlic cloves
1 tbsp rice wine vinegar
3 chopped spring onions
Finely chopped stalks from a large handful of fresh basil
Steamed rice and prawn crackers, to serve

Steps:

  • Trim the steaks and cut into chunky strips, then toss in the cornflour. Heat 2 tbsp sunflower oil in a wok or large frying pan, then stir-fry the strips for 3-4 minutes until browned and caramelised all over. Put on a plate.
  • Add a splash more oil to the wok, if needed, then stir-fry the onion and red pepper for 5 minutes. Add the tenderstem broccoli (cut any large spears in half), then fry for another 3 minutes. Add a splash of water if you think it needs it.
  • Meanwhile, in a bowl, mix the fermented black bean sauce and 3 tbsp water (or use roughly 100ml regular black bean sauce), the fresh ginger, garlic, rice wine vinegar, spring onions and the finely chopped basil stalks.
  • Add the fried steak back into the wok with the sauce mixture and seasoning, then stir-fry until heated through - add 2-3 tbsp water, if needed, to make it rich and saucy. Stir in the fresh basil leaves, then serve with steamed rice and prawn crackers, if you like.

1 pound beef steak, any cut, cut into strips
4 tblsp olive oil or another vegetable oil -
1 medium onion, sliced
2 peppers, green, yellow, orange or red, thinly sliced
1 tblsp ginger, minced
1 tsp garlic, minced
1/4 cup black bean garlic sauce
2 tsp cornstarch
1 pound noodles, udon or for a thinner noodle ramen or any other you want to include (2 pkgs)
1 cup grapeseed oil or canola oil
1/3 cup Fermented Black Beans, chopped
1/2 cup peeled and minced fresh Garlic
2 bunches white and green parts scallions, thinly sliced
1 tablespoon sambal oelek or hot red pepper sauce
1/2 cup shaoxing cooking wine or dry sherry
2 teaspoons Kosher salt
1 teaspoon ground black Pepper
Chinese Whole Dried Red Chiles, chopped or ground to taste (similar to cayenne pepper)

Steps:

  • In a small cup combine black bean garlic sauce, cornstarch and 1/2 cup water. Set aside.
  • In a large skillet heat half of the oil on medium heat until you flick a drop of water in it and it dances.
  • Add the sliced beef and sauté until no longer pink, about 3 minutes. Remove and set aside.
  • In same skillet heat remaining oil on medium heat.
  • In a separate saucepan boil water and cook noodles according to package directions. Drain and set aside.
  • In same skillet, add onions and sauté until onions are tender, about 3 minutes. Add peppers, garlic and ginger.
  • Add beef, noodles, and black bean mixture to peppers and onions.
  • Cook and stir constantly over medium heat for a few minutes until sauce thickens.
  • Serve immediately. Enjoy!
  • Heat a wok or large sauté pan over high heat.
  • Get out all of your ingredients and make sure they are measured and ready to go. This recipe happens quickly and it is so much easier if you are ready to go.
  • Add 1/4 cup of the oil and swirl to coat the pan.
  • Add the beans, garlic, ginger, and scallions, and stir-fry until the mixture has softened, 2 to 3 minutes.
  • Stir constantly.
  • Add the sambal oelek and wine, decrease the heat to medium, and cook until the mixture is reduced by three quarters, 2 to 3 minutes.
  • Last, add the salt and pepper.
  • Remove the mixture from the heat and allow it to cool.
  • Transfer half of the mixture to a blender and purée it at high speed while adding the remaining 3/4 cup of oil.
  • Stir the purée back into the remaining mixture and cool completely.
  • Use or store.
  • Lasts 2 weeks, refrigerated.

450g/1lb lean fillet of beef, cut into thin slices
2 tsp light soy sauce
1 tsp rice wine or dry sherry
1 tsp cornflour
2 tbsp groundnut oil
225g/8oz onion, thickly sliced
2 tbsp oyster sauce
small handful fresh mint leaves
175g/6oz bean thread (glass) noodles
1 tbsp groundnut oil
2 tbsp black beans, coarsely chopped
3 tbsp spring onions, finely chopped
2 tbsp garlic, coarsely chopped
1 tbsp ginger, finely chopped
110g/4oz carrots, finely chopped
110g/4oz bean curd, finely chopped
225g/8oz Chinese flowering cabbage or pak choi, finely chopped
2 tbsp Shaoxing rice wine or dry sherry
1½ tbsp chilli bean sauce, from a jar
1 tbsp whole yellow bean sauce, from a jar
2 tbsp light soy sauce
2 tsp dark soy sauce
½ tsp salt
½ tsp freshly ground black pepper
2 tsp sesame oil
2 tsp spring onions, finely chopped, to serve

Steps:

  • For the beef, place the beef strips into a bowl and add the light soy sauce, rice wine and cornflour and mix well. Leave to marinate for 10-20 minutes.
  • Heat a wok until very hot and then pour in the oil. Add the marinated beef and stir-fry for one minute, or until browned all over. Remove the beef with a slotted spoon and set aside.
  • Add the onions to the wok and stir-fry for 1-2 minutes. Pour in 3 tablespoons of water and cook for three minutes.
  • Drain off the juices collected from the beef and add to the wok. Add the oyster sauce and stir for a minute then return the beef to the wok and add the mint leaves. Continue to stir-fry for one minute then remove from the heat.
  • For the noodles, soak the noodles in a large bowl of warm water for 15 minutes. When they are soft, drain them and discard the water.
  • Heat a clean wok until hot, then add the groundnut oil. When it is very hot and slightly smoking, add the black beans, spring onions, garlic and ginger and stir fry quickly for 15 seconds. Add the carrots and stir fry for two minutes.
  • Add the bean curd and Chinese flowering cabbage or pak choi and carefully mix together without breaking up the bean curd.
  • Add all of the remaining ingredients (except the sesame oil) and 250ml/9fl oz water and cook the mixture over a gentle heat for about two minutes.
  • Now add the drained noodles and sesame oil and cook for a further three minutes.
  • To serve, ladle some of the noodles and sauce into individual bowls or into one large serving bowl. Place the stir fried beef alongside, garnish with the spring onion and serve at once.

BEEF IN BLACK BEAN SAUCE

An authentic version of the classic beef in black bean sauce from Jeremy Pang. This recipe uses feremented black soy beans, which you can find in Asian supermarkets, online and in large supermarkets. They give great flavour to the dish - far superior to anything you'll find in a jar of black bean sauce.

300g/10½oz rib-eye or rump steak
1 tsp sesame oil
1 tsp sugar
1 pinch Chinese five-spice powder
1 tbsp light soy sauce
1 tbsp cornflour
1 tbsp oyster sauce
1 tsp dark soy sauce
2 tbsp rice wine
1 ladleful chicken stock, water, beer or lager (about 5 tablespoons)
2 tsp salted fermented black soy beans
2 garlic cloves, finely chopped
3cm/1¼in fresh root ginger, peeled and finely chopped
½ brown onion, sliced
½ green or red pepper, sliced
1 spring onion, roughly chopped, plus extra to garnish (optional)
3 cavolo nero or kale leaves, roughly chopped
2 tbsp vegetable oil
chopped fresh coriander, to garnish (optional)

Steps:

  • To make the beef, bash the beef slices with a meat mallet, the side of a heavy knife or a rolling pin to flatten, then finely slice into strips. Combine the sesame oil, sugar, Chinese five-spice powder, soy sauce and cornflour in a small bowl. Place the beef in a large bowl and massage the marinade well into the meat until well covered and there is no sauce left at the bottom of the bowl.
  • To make the sauce, place all of the ingredients for the sauce in a small bowl and mix together well.
  • To make the stir fry, put the black soy beans in a small bowl or ramekin and cover with boiling water (about 2-3 tablespoons water) and leave to soak for about 10 minutes. Drain through a sieve and then crush in a pestle and mortar with the garlic and ginger until you have a coarse paste. Transfer back to the ramekin.
  • Get all the remaining stir fry ingredients to hand (the stir fry is cooked very quickly so you need everything ready to add to the wok).
  • Heat 1 tablespoon oil in a wok over a high heat and once smoking hot, add the onions, peppers and spring onion. Cook for 1 minute, then add the cavolo nero and continue to stir-fry for a minute. At this point, transfer the vegetables out of the wok to a bowl to make space for stir-frying the beef. Add the remaining oil to the wok and bring it back to a high heat. Once smoking hot, add the beef to the wok and press down with a spatula to separate out the pieces. Do not turn the beef too quickly, just press down to sear the pieces for 30 seconds-1 minute and then turn once and sear the other side of the beef in the same way. Once browned on both sides, add the soy bean mixture and stir-fry for 1 minute before returning the vegetables back to the wok.
  • Ensure the wok is at a high heat before pouring the sauce into the wok and bringing to a vigorous boil. Boil while stirring for a further minute. Garnish with spring onion or coriander and serve immediately.

1/4 cup dry white wine, sherry or water
2 tablespoons peanut or corn oil
1 large onion, halved, sliced thick and separated into rings
1 pound thin-sliced flank or sirloin steak
1 teaspoon minced garlic, ginger or both
Fresh black pepper
2 tablespoons soy sauce
White rice

Steps:

  • Soak the beans in liquid. Put the oil in a large skillet, and turn the heat to high. When the oil is hot, add the onions, and cook, stirring, until they just begin to wilt, 2 to 3 minutes. Remove the onions.
  • Immediately add the beef. Cook, stirring occasionally, until the meat loses its redness, about 3 minutes. Add the garlic or ginger or both and lots of black pepper. Turn the heat to medium, and then stir in the black bean mixture, the onions and the soy sauce.
  • Taste, and adjust seasoning. If mixture is dry, add a few tablespoons water or stock. Serve with white rice.

1.5 tbsp. oyster sauce
1/2 tbsp. light soy sauce
1/4 tsp. ground pepper
1/4 tsp. sugar
1/2 tbsp. Chinese cooking wine ( ,Shaoxing wine)
2 tsp. corn starch
1 tsp. sesame oil
vegetable cooking oil ( ,as needed)
2 garlic cloves
2 fresh green peppers ( ,remove the seeds and finely shredded)
1/4 red onion ( ,shredded)
1/2 tsp. freshly ground black pepper

Steps:

  • Cut the beef steak into 1cm wide strips. Marinate with all the marinating seasonings including soy sauce, oyster sauce, pepper, sugar, Chinese cooking wine and cornstarch for 15 minutes. Mix in sesame oil just before start frying.
  • Add cooking oil in a large pan until the oil can evenly cover the bottom of the pan. spread the beef strips in. Let them stay for around 5 to 6 seconds and gently stir them several times until the beef strips change color. Transfer the beef out and leave around 1 tablespoon of the oil in.
  • Fry garlic until aromatic. Fry green peppers and red onion until slightly soft (do not kill them). Add a small pinch of salt. Return beef strips back. Mix well. Spread freshly ground black pepper.
  • Serve hot with noodles or steamed rice.

2 x 250g rump steaks
1 tbsp cornflour
2 tbsp sesame oil
1 large white onion, cut into thin wedges
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
2 fat garlic cloves, crushed
1 thumb-sized piece ginger, peeled and grated
1-2 red chillies, finely chopped
5 tbsp black bean sauce
1 tbsp rice wine vinegar
2 tsp sugar
sticky rice, to serve
coriander leaves, to serve (optional)

Steps:

  • Remove the thick layer of fat running down the side of the steaks and discard. Slice the steak into 1cm-thick, long strips and toss with the cornflour and some seasoning.
  • Heat the oil in a large frying pan or wok over a high heat then add the steak, frying for 3-5 mins or until golden brown on the outside. Remove with a slotted spoon and transfer to a plate.
  • Add the onion and peppers to the pan and fry for 6-7 mins or until beginning to soften. Stir through the garlic, ginger and chilli and cook for a further min. Return the beef to the pan and stir through the black bean sauce, rice wine vinegar, sugar and 2 tbsp water to loosen a little. Bring to a simmer and then remove from the heat.
  • Serve the stir-fry in deep bowls with mounds of sticky rice and top with coriander, if you like.

½ Green pepper (bell pepper/capsicum ( cut in small squares ))

1 tbsp Sugar

3 tbsp Oyster sauce

Steps:

  • Cut the beef steak into thin slices against the grain. Marinate the beef with soy sauce, sugar, Shao Xing wine, baking soda and corn starch. Mix well and let it sit for 10-15 minutes. Mix all the stir fry sauce ingredients in a small bowl and set it aside. Roughly chop the black beans or you can add in whole.
  • Heat the wok/pan over medium-high heat, drizzle oil, and add the marinated beef slices. Flatted the beef and let it sear for 2-3 minutes then turn sides and stir fry for another 2-3 minutes. Next, add the onion dices and stir fry for 1 minute. Follow with the bell peppers and stir for few seconds. Remove from pan and set it aside.
  • In the remaining pan, drizzle a bit more oil. Saute the chopped garlic with medium heat for 1 minute, then follow with the ginger and stir for few seconds. Add the black beans stir fry for 1-2 minutes. Then pour the sauce mixture, stir unil the sauce start to get thick.
  • Add the fried beef, onions and peppers in. Bring to heat over medium-high heat. Toss well to combine everything evenly for 1-2 minutes.
  • Remove from heat and transfer to serving plate. Serve while hot with plain rice, egg fried rice or noodles.

  • Preheat a wok or large frying pan on a high heat and once it's very, very hot add a good splash of groundnut oil and swirl it around.
  • Add all your chopped ingredients from the bowl.
  • Give the pan a really good shake to mix everything around quickly.
  • Stir-fry for 2 minutes, taking care to keep everything moving so it doesn't burn.
  • Add the blackbean sauce, and stir in 1 tablespoon of soy sauce and the juice of half a lime.
  • Keep tossing.
  • Taste and season with black pepper and a little more soy sauce, if required.
  • Remove the pan from the heat, transfer everything to a bowl and cover with tin foil.
  • Give the pan a quick wipe with a ball of kitchen paper and put back on the heat.
  • Add some groundnut oil and swirwl it around.
  • Crack in your egg and add a tb soy sauce - the egg will cook very quickly so keep sstirring.
  • Once it's scrambled, stir in your chilled rice, scraping the sides and the bottom of the pan as you go.
  • Keep mixing for a few minutes until the rice is steaming hot, then taste and season with a little soy sauce if required.
  • TO SERVE YOUR STIR-FRY:.
  • Divide the rice between two bowls or plates.
  • Spoon over the meat and black bean sauce and sprinkle over with coriander leaves.
  • Serve with wedges of lime.2.
