Orange Creamsicle Dream Bars - the perfect NO BAKE summer dessert! Taste buds will love the sugar cone crust, cheesecake layer, and orange cream topping!

8 ounces Cool Whip (divided)
1 ⅓ cups Nilla Wafer Cookie Crumbs
5 tablespoons unsalted butter
3 ounce package orange gelatin
3/4 cup boiling water
3/4 cup cold water
8 ounces cream cheese (room temperature)
1/4 cup powdered sugar
2 teaspoons orange extract
8 drops orange Wilton Gel Food Colors (optional)
2 cups Cool Whip
8 ounces cream cheese (room temperature)
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
1 cup Cool Whip

Steps:

  • Line a 8 X 8-inch baking pan with parchment, so that you can easily remove the bars to evenly slice and remove them.
  • In a medium bowl, melt the 5 tablespoons of butter in a microwave for about 30 seconds. Stir and melt for another 5-10 seconds, if necessary.
  • In a food processor, pulse the Nilla Wafers until they are fine crumbs.
  • Add the cookie crumbs to the melted butter and mix with a rubber spatula until all is well incorporated.
  • Pour into the prepared baking pan and spread evenly into the pan, pressing down to create an even crust. Place pan into the freezer while preparing the rest of the recipe, a minimum of 30 minutes.
  • Into a 2-cup measuring glass, mix the orange gelatin with 3/4 cup boiling water. Stir until dissolved.
  • Add the 3/4 cup cold water and stir. Place into refrigerator until completely cooled, but not set - about 10 minutes.
  • In a mixing bowl, beat 8 ounces of the cream cheese with the sugar, orange extract and orange food coloring.
  • Slowly pour in the chilled gelatin mix while mixing everything together. The slower you pour and allow time for it to blend, the smoother a consistency you'll get. Once completely smooth, place into refrigerator to chill and thicken for one hour. *See Note.
  • In a mixing bowl, beat another 8 ounces of cream cheese, the confectioners' sugar, and vanilla together until smooth and creamy. With a rubber spatula, fold in one cup of the Cool Whip.
  • Place dollops of cheesecake mixture onto the frozen crust and with an offset spatula, spread to form an even layer.
  • with a rubber spatula, fold the remaining Cool Whip (about 2 cups) to the chilled Orange Cream mixture, combining until evenly distributed and smooth.
  • Gently pour the Orange Cream onto the cheesecake layer and spread evenly with an offset spatula.
  • Place into the refrigerator overnight or for a minimum of 6 hours.

2 sticks (1 cup) salted butter, cut into small cubes, plus more for buttering the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest and juice of 4 oranges (making about 1 cup of juice)
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • Stir together the flour, granulated sugar and salt in a bowl. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the granulated sugar and flour in a bowl. Crack in the eggs and whisk to combine. Add the orange zest and juice and mix until combined. Pour over the crust and bake until the filling is set, about 20 minutes.
  • Allow to cool in the fridge for a minimum of 2 hours, then sift powdered sugar over the top before cutting into 16 pieces.

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1 tablespoon grated orange zest
2-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups vanilla or white chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and orange zest. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in vanilla chips., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool.

Nonstick vegetable spray
1 1/2 cups flour
1 cup light brown sugar
1 cup coarsely chopped toasted pecans
6 tablespoons unsalted butter at room temperature
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups unsweetened coconut flakes
1 (14-ounce) can sweetened condensed milk

Steps:

  • Line a 9 by 13-inch baking pan with foil so that it covers the bottom and overhangs 2 sides by at least 1-inch. Tuck the overlap around the outside of the pan. Coat with nonstick vegetable spray.
  • Set a rack in the middle of the oven and preheat to 350 degrees F.
  • In a bowl, combine 1 cup of the flour, 1/2 cup of the brown sugar, and the pecans. Work in the butter, rubbing and pinching it between your fingertips, until the mixture looks mealy and lumpy. Lightly pat the streusel onto the bottom of the pan.
  • In a mixing bowl, beat together the eggs and the remaining 1/2 cup brown sugar until doubled in volume. Beat in the vanilla extract.
  • In another bowl, sift together the remaining 1/2 cup flour, baking powder, and salt, then beat into the egg mixture. Spread on top of the streusel.
  • Sprinkle on the coconut and the sweetened condensed milk. Bake for 25 to 30 minutes, until the first tiny bubbles come up. Set on a rack to cool. Run a knife around the 2 unfoiled pan sides to loosen, then lift the whole cake out of the pan. Cut into 2-inch bars.

1/3 cup butter, room temperature
1-1/2 cups brown sugar, packed
1 cup plus 2 Tbl. flour, unbleached
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1-1/2 cups shredded coconut
1 cup pecans, chopped
Frosting
1/4 cup (1/2 stick) butter, room temperature
2 cups powdered sugar
1 tsp. vanilla
1 tsp. grated orange peel
2 - 4 Tbl. orange juice from concentrate (I didn't use the fresh juice because there is always a varied flavor with fresh OJ and it is sometimes bitter, you may use fresh or from concentrate)

Steps:

  • Preheat oven to 375 degrees. In the bowl of a stand mixer or large bowl, cream butter and 1/2 cup of the sugar until creamy. Add in 1 cup of the flour and mix until it resembles crumbs. Press into the bottom of a 9 x 13 (I used a 9 x 12 throw away tin pan) and bake for 10 minutes. Remove from oven and let cool. In the (cleaned) bowl of a stand mixer or medium mixing bowl, place eggs and beat until light and lemon-colored; then gradually beat in the remaining 1 cup sugar. Beat in the vanilla; remaining 2 Tbl. flour, salt, and baking powder. Stir in the coconut and nuts until thoroughly combined. Pour coconut mixture over the top of the crust, spreading evenly. Return to oven and bake for 20 minutes or until topping is golden. Cool completely. To make the frosting, beat butter and powdered sugar until creamy. Add vanilla and orange peel, mix until smooth. Beat in enough orange juice to make a good spreading consistency. Frost bars. The original recipe calls for cutting the bars before frosting so that you don't crack the frosting while cutting the bars, but I didn't have that problem, because I just made sure the frosting was set before cutting, and lets face it, I'm not giving these to critics so it's really okay if they are a little cracked looking, they are still delish! And in case you were wondering, here's what my book looks like after years of use. And I can still read the recipes so that's all that counts! Serves - 2 dozen Enjoy!

3 cups fresh or frozen cranberries
2 large unpeeled oranges, cut into quarters and seeded
2-1/2 cups sugar
3 tablespoons cornstarch
1 teaspoon ground ginger
1/2 cup chopped nuts, optional
CRUST:
3-1/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon grated lemon zest
1 cup butter, cubed
3 large egg yolks
3/4 teaspoon vanilla extract
1 to 2 tablespoons water

Steps:

  • Grind cranberries and oranges (including peel). Set aside. In a large saucepan, combine the sugar, cornstarch and ginger. Add ground fruit; bring to a boil. Reduce heat; cook and stir for 15 minutes or until thickened. Remove from the heat; stir in nuts if desired. Set aside to cool. , Meanwhile, for crust, in a large bowl, combine the flour, sugar and lemon zest. Cut in butter until coarse crumbs form. Add egg yolks and vanilla. Gradually add water, tossing with a fork until dough forms a ball. , Pat two-thirds of dough into a greased 13x9-in. baking pan. Cover with cranberry-orange mixture. Crumble remaining dough on top. Bake at 425° for 20-25 minutes or until topping is golden brown. Cool on a wire rack; cut into bars.
