ORANGE CRESCENTS
The bold orange flavor of these sweet rolls satisfies at breakfast, dessert or snack time. My family and friends love them and often request that I make a batch. We consider them a real treat!

- In a large bowl, dissolve yeast in water. Add 1/4 cup sugar, salt, eggs, sour cream, 6 tablespoons butter and 2 cups flour. Beat until smooth. Add enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 12-in. circle. Brush with remaining butter. Combine orange zest and remaining sugar; sprinkle over butter. , Cut each circle into 12 wedges. Roll up wedges from the wide end. Place pointed side down 2 in. apart on greased baking sheets. Curve ends down to form a crescent shape. Cover and let rise in a warm place for 45 minutes or until doubled. , Bake at 350° for 20-30 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients in a small saucepan. Bring to a boil; cook and stir for 3 minutes. Pour over warm rolls. Cool. Store in the refrigerator.

ORANGE PISTACHIO CRESCENTS

- Make dough:
- Whisk together flour, sugar, and salt in a large bowl (or pulse in a food processor). Blend in butter with your fingertips or a pastry blender (or pulse) until mixture resembles coarse meal with some roughly pea-size butter lumps. Beat together yolks and 3 tablespoon water with a fork and stir into flour (or pulse) until incorporated.
- Gently squeeze a small handful of dough: If it doesn't hold together, stir (or pulse) in 1 tablespoon more water. Do not overwork dough or pastry will be tough.
- Turn out dough onto a lightly floured surface and divide into 8 portions. With heel of your hand, smear each portion once in a forward motion to help distribute fat. Gather dough together and divide in half. Form each half into a 4-inch square. Wrap each in plastic wrap and chill until firm, at least 1 hour.
- Make filling:
- Cut off peel, including white pith, from orange with a sharp knife and finely chop. (Reserve fruit for another use.) Put peel in a 2-quart heavy saucepan, then fill with water. Add salt and bring to a boil, then boil, uncovered, 10 minutes. Drain in a fine-mesh sieve.
- Bring granulated sugar and water (3/4 cup) to a boil in saucepan over medium-high heat, stirring until sugar has dissolved, then wash down any sugar crystals from side of pan with a pastry brush dipped in cold water. Add peel to syrup. Gently simmer, uncovered, until peel begins to turn translucent and syrup is reduced to about 2/3 cup, 20 to 30 minutes.
- Drain peel in fine-mesh sieve set over a bowl, reserving 3 tablespoon syrup. Stir together peel, reserved syrup, and pistachios. Cool to room temperature.
- Makes cookies:
- Preheat oven to 375°F with rack in middle. Line a large baking sheet with parchment paper.
- Roll out 1 piece of dough on a floured surface with a floured rolling pin into a 15- by 12-inch rectangle. Cut out 16 to 20 rounds with cookie cutter.
- Put a scant teaspoon filling on each round, then brush edge lightly with water and fold pastry over filling to form a half-moon. Press edges to seal. Shape each into a crescent by pushing a finger against middle of flat side.
- Bake 1 inch apart on baking sheet until golden, 15 to 20 minutes. Transfer cookies on parchment to a rack to cool 2 minutes. Toss warm cookies, a few at a time, in confectioners sugar to coat generously. Cool completely.
- Repeat with remaining dough (cool baking sheet and line with fresh parchment). Reroll scraps once for extra cookies if desired.
ORANGE DANISH CRESCENT ROLLS
They'll see glazed Danish with orange marmalade and assume you made a bakery run. But nope-you made these with refrigerated crescent dinner rolls!

- Preheat oven to 375°F. Unroll and separate dough into 8 triangles.
- In a small bowl, heat cream cheese in microwave for 30 seconds to soften slightly. Stir in marmalade.
- Put a tablespoon of cream cheese mixture on each dough triangle. Spread evenly over the surface of the dough. Roll into a crescent shape and place on a baking sheet.
- Bake for 11-13 minutes or until lightly golden brown. Remove from baking sheet and allow to cool.
- Stir together powdered sugar and milk. Drizzle over cooled rolls and serve.

ORANGE CRESCENT SWIRLS
These simple little orange rolls begin with refrigerated crescent dough. Quick to make but sure to make a good impression early in the morning! From the Foote Creek Bed & Breakfast in Aberdeen, South Dakota where speedy but impressive food is a must first thing each day. ;o) If you are living in warmer climates, it may help to place the dough in the freezer for a few minutes before slicing.

- Heat oven to 375°F Spray 12 x 1/2 inch pizza pan with nonstick cooking spray.
- In small saucepan, combine brown sugar, margarine, orange peel and juice; mix well.
- Cook and stir over med heat until bubbly; set aside.
- Remove dough from each can but do NOT unroll; leave as a log/roll.
- Cut each roll into 12 slices.
- Arrange slices evenly in prepared pan.
- Spoon brown sugar mixture evenly over rolls.
- Bake at 375 for 13-15 min or until golden brown.
- Remove rolls from pan with spatula.
- Serve warm.

SUNRISE CRESCENT ROLLS
Refrigerator Crescent Rolls are baked with a filling of cream cheese and orange marmalade. Serve these rolls for special mornings (birthdays, holidays) or for brunch.

- Instructions: Spray Pam on an 8 or 9" round cake pan and preheat oven to 350.
- Unroll Crescent rolls and separate into 8 triangles. Place a knife-full of cream cheese on each roll, extending from side-to-side and about 1/3 of the way from the flat end.
- Then spread about 2 t. Orange Marmalade from the cream cheese to the long thin point, covering about 2/3 of the roll.
- Starting from the pointed tip where you have the orange marmalade, roll up each Crescent.
- Place Crescents, seam-side down, in a spoke fashion in the round pan (see photo). You will have all 8 Crescents coming together in the middle. Press them together lightly, and add a bit more cream cheese and orange marmalade in the center area.
- Bake 350 for 20 minutes.
- Icing: Melt 1 t. or so of orange marmalade in microwave; stir in Confectioners Sugar. Drizzle over cooled rolls.

- In a large bowl, combine 2-1/2 cups flour, sugar, yeast, and salt. In a small saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a firm dough. Cover and let rest for 15 minutes., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Divide dough in half. Roll each into a 12-in. circle. Brush with melted butter. Combine the coconut, sugar and orange zest; sprinkle over dough. Cut each circle into 12 wedges.
