With the help of an ice cream machine, homemade ice cream can be easy and gives you the power to experiment with flavors. Cranberry orange ice cream can be a light, chilled antidote to heavier holiday foods, and a fun idea for an unexpected Thanksgiving dessert alongside a warm slice of pie.

1½ cups half and half 1 cup milk ½ cup sugar, divided ¼ teaspoon salt 1 orange, zested 5 egg yolks 2 cups homemade cranberry sauce

Steps:

  • In a saucepan over medium heat, combine half and half, milk, ¼ cup sugar, salt and orange zest. Bring just to a boil, turn off heat and cover for 10 minutes.
  • Whisk together egg yolks and remaining ¼ cup of sugar in a separate bowl.
  • Slowly pour hot milk into egg mixture, whisking constantly.
  • Pour everything back into saucepan and simmer over medium heat, stirring constantly to keep the bottom from burning. Cook until mixture has thickened enough to cover the back of a spoon.
  • Remove from heat and allow to cool. Stir cranberry sauce into the ice cream base.
  • Churn according to machine instructions.

1 1/2 cups whole milk
3 large eggs
1 cup sugar
1/4 teaspoon kosher salt
1 1/2 cups heavy cream
2 teaspoons vanilla extract
2/3 cup frozen orange juice concentrate, thawed
4 teaspoons grated orange zest

Steps:

  • Whisk the cornstarch and 1/2 cup milk in a small bowl until smooth. Whisk the eggs, sugar and salt in a medium saucepan; whisk in the cornstarch mixture and the remaining 1 cup milk until smooth.
  • Cook the mixture over low heat, stirring, until thick enough to coat a spoon, 7 to 8 minutes (do not boil). Pour through a fine-mesh sieve into a bowl, then set the bowl in a larger bowl of ice water. Add the cream and stir until cool. Remove from the ice bath; stir in the vanilla, orange juice concentrate and orange zest. Cover and chill until cold.
  • Freeze the custard in an ice cream maker according to the manufacturer's directions. Scrape into a pastry bag fitted with a large star tip and pipe into cups.

1 large orange, zested and juiced, divided
1 cup dried cranberries, or more to taste
1 cup buttermilk
1 cup powdered sugar, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour, butter, white sugar, baking powder, salt, and orange zest in the bowl of a food processor; pulse until butter is pea-sized or smaller. Pour buttermilk and 1/2 of the orange juice in slowly, with the processor running, until dough is sticky and all flour is absorbed. Mix in dried cranberries until evenly distributed. Reserve remaining orange juice for the icing.
  • Place dough on a lightly floured surface and gently roll to a thickness of about 1 inch. Cut dough into 12 triangles with a knife (or use a biscuit cutter for circles) and transfer to a baking sheet.
  • Bake in the preheated oven until golden brown, about 15 minutes.
  • While the scones are baking, combine reserved orange juice and 1 cup powdered sugar for icing. Stir to desired consistency, adding more powdered sugar as needed.
  • Remove scones from the oven and let sit for 5 minutes to cool. Transfer to a plate and drizzle with icing. Serve warm.

Steps:

Steps:

  • Combine cranberries, sugar and water in saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Cool. Refrigerate until very cold.

1/2 cup water
4 cups milk
4 cups sugar
2 cups heavy whipping cream
1 cup orange juice
1/2 cup lemon juice

Steps:

  • In a large saucepan, cook cranberries and water over medium heat until berries pop, about 15 minutes. Strain; discard seeds and skins. Cool completely. Meanwhile, in a large saucepan, heat milk to 175°; stir in sugar until dissolved. Cool. Stir in the cream, juices and cranberry mixture., Fill cylinder of ice cream freezer; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Allow to ripen in ice cream freezer or firm up in the refrigerator freezer for 2-4 hours before serving.

ORANGE ICE CREAM (QUICK AND EASY BLENDER RECIPE!)
Pour the cream and milk into the blender container with the sugar. Then add the orange juice and zest and blend for about 45 seconds or until it's well mixed. Pour into a metal pan and place in the freezer for about an hour. Remove from the freezer and stir with a spoon. Repeat this two more times (twice in two hours.)
