ORANGE CRANBERRY BREAD (AMISH STARTER)
Yep ANOTHER recipe for your Amish Starter. . .and this one is perfect for holiday gift giving. I lightened up the recipe a bit with sugar free jello, applesauce and much less sugar than traditional Friendship Bread recipe. I made mine into 5 mini loaves, but you could also make 2 large loaves and increase your cooking time.

- Mix together the wet ingredients, then stir in the dry ingredients - adding the cranberries, zest and pecans last.

I've found that a cup of dried cranberries and a tsp of orange zest, along with a cup of chopped nuts, makes a nice holiday variation to the cake! ~~~or~~~ I used the basic cinnamon amish bread recipe and added 1 cup of craisins (dried cranberries) as well as the pecans. ~~~or~~~ We add Craisins(dried sweetened cranberries) and chocolate covered raisins to our mix. We also like the bread with chocolate pudding instead of vanilla. ~~~~~or~~~~ cranberry mint chip ~ a cup of dried cranberries along with a cup of chopped After Eight chocolate after dinner mints or 1 cup chocolate mint chips

This cranberry orange bread is great for breakfast or a snack. You can also make muffins; just spoon the batter into greased muffin cups and bake at 375 degrees F (190 C) for 15 to 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 8 1/2x4 1/2-inch loaf pan.
- Combine flour, sugar, baking powder, salt, and baking soda in a bowl. Stir butter into flour mixture until combined. Add orange juice, orange zest, and egg; mix well. Fold in cranberries and walnuts. Spoon batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- 1. STARTER FOOD IS 1 CUP SELF-RISING FLOUR, 1 CUP SUGAR, 1 CUP MILK. IN A SMALL BOWL, SOFTEN IN WATWER FOR 10 MINUTES. STIR WELL. IN A 2 QUART GLASS, PLASTIC OR CERAMIC CONTAINER, COMBINE FLOUR AND SUGAR. MIX THOROUGHLY OR THE FLOUR WILL LUMP WHEN MILK IS ADDED. SLOWLY STIR IN WARM MILK AND SOFTEN YEAST MIXTURE.
- 2. COVER LOOSELY AND LET STAND AT ROOM TEMPERATURE UNTIL BUBBLY. CONSIDER THIS DAY 1 OF THE 10 DAY CYCLE.

- Preheat the oven to 325'.
- To the remaining batter add eggs, baking powder, oil, baking soda, orange juice, vanilla, 1 cup sugar, flour, salt, vanilla instant pudding, 2 tsp cinnamon, orange zest, and cranberries. (Make sure the cranberries are mixed in well so they don't end up sitting on the bottom).
- Note: It is easier to mix if you combine the dry ingredients (except for sugar and pudding) in another bowl then add it slowly to the batter.
- Grease bottom and sides of 2 large loaf pans or spray with Pam. Mix ½ cup sugar and 1-1/2 tsp cinnamon in a small bowl. Dust the insides of each of the pans with half of the mixture, making sure to cover the bottom and sides well.
- Pour batter evenly into the 2 pans and sprinkle with remaining sugar mixture over top of the batter.
- Bake for approximately 1 hour (until toothpick comes out clean.) Cool until the bread loosens from the pan easily. Turn onto serving dish. May be served warm or cold. Enjoy.

This amazing, tender & fluffy cinnamon-sugar Amish friendship bread is so quick and simple to make! It's soooo irresistibly yummy like a soft pound cake and then it's baked to get a crunchy, cinnamon-sugar coating on top, with a layer of cinnamon-sugar inside as well. - Cream butter and 2 cup sugar in a mixer for 5 minutes. On medium speed, beat in eggs, one at a time. Add orange zest from all 4 oranges (about 1/3 cup).
- In large bowl, mix flour, baking powder, soda, and salt. In another bowl, mix 1/4 cup OJ (juice of 1 orange), yogurt and vanilla. Add flour and yogurt mixtures alternately to mixer in 3 additions.
- Pour into two greased loaf pans. I line my pans with parchment paper on the bottom, then grease pan. Bake in a 350 degree oven for 45-55 minutes.
- While bread is baking, cook remaining 1/2 cup sugar with 1/2 cup OJ (juice of 2 oranges) on low until sugar dissolves. Cool cakes ten minutes in pan. Remove from pans to a wire rack. Spoon syrup over cakes. Cool completely.
