Steps:
- Rinse your peppers under cool water.
- Cut the stems off of the peppers, then cut the jalapeno peppers in half length wise.
- Remove all of the seeds from the peppers.
- Rinse the peppers under cool water again to help remove any unwanted stubborn seeds.
- Stuff the peppers with cream cheese.
- Carefully wrap each pepper with bacon.
- YOU WILL NEED A BAKE PAN AND A METAL RACK
- Place the rack in the pan.
- Now place your bacon wrapped peppers on the rack.
- Bake the peppers in the oven on 375 for 25-30 minutes.

JALAPENO-BACON STUFFING
This is a side dish that goes great with turkey and is 100 times better than a "stovetop stuffing." If you take it to a potluck dinner you will be forever doomed to repeat the same dish forever...they demand it year after year. The jalapenos are the key; I chop them very fine. I have used up to 6 tablespoons, but 4 seems about perfect.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch pan.
- Combine cornbread mix, 1 cup milk, and eggs in a bowl. Mix until well blended; batter will be lumpy. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Remove and let cool enough to handle, 15 to 30 minutes. Crumble and set aside in a bowl.
- Reduce the oven temperature to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserve 2 tablespoons grease in the pan. Let bacon cool slightly, about 5 minutes; crumble and set aside.
- Heat reserved bacon grease over medium-high heat. Cook onion, bell pepper, and celery in the hot grease until soft, 5 to 7 minutes. Set aside.
- Melt 6 tablespoons butter in a large saucepan over medium heat. Add corn, cream-style corn, remaining milk, chopped jalapenos, pimentos, sugar, and salt. Cook until heated through, 5 to 7 minutes. Stir in bacon and sauteed vegetables. Stir in 2 cups crumbled cornbread. Transfer mixture to a baking dish.
- Melt remaining butter and stir into remaining 1/2 cup crumbled cornbread; sprinkle over stuffing mixture.
- Bake in the preheated oven until crumbs are light brown, about 10 minutes. Garnish with sliced jalapenos.

STUFFED JALAPENO POPPER BACON CHEESEBURGER

- Heat grill to medium-high heat. Grill jalapenos, turning as needed, until they are charred and blistered all over, about 7-8 minutes. Place jalapenos in a bowl and cover with plastic wrap for about 10 minutes to loosen skins. Peel off skin, cut in half, and remove seeds from jalapenos.
- Chop roasted jalapenos and add half of them to the cream cheese (reserve rest for dressing). Mix well to combine.
- Divide and form the beef into 8 equal pattties. Place 1/4 of the jalapeno - cream cheese mixture onto 4 of the patties, and then top with the remaining 4 plain patties. Completely pinch sides closed to seal in the mixture and reform patties.
- Season generously with Kosher salt.
- Grill burgers over medium-high heat with grill-lid closed until cooked to desired doneness, about 3-6 minutes per side (brushing the grill first with a little bit of oil will prevent burgers from sticking). During the last minute of cooking, top each burger with cheddar cheese slice.
- Assemble burgers on buns with bacon, avocado slices, and the avocado-jalapeno ranch dressing. Devour immediately.
- Combine 1 avocado with ranch dressing in a food processor until smooth. Stir in remaining roasted jalapenos.

- Mix cream cheese, garlic, sundried tomatoes, cilantro and salt until well blended. You can now set the mixture aside or even freeze for up to a couple of months in a freezer bag.
- You'll want to wear some kitchen gloves for this step! Slice the jalapeños lengthwise, being careful not to slice them in half. Then slice at the top along the width of the pepper just about a quarter inch below the base of the stem until you cut through the core, again being careful not to cut completely through the pepper (This step will probably take some practice). Now you need to decide whether you want to keep the seed webbing for those that like it really hot, or remove them for a lot less heat. I like to do about half and half so that you can please everyone. Anyway, if removing the seeds, gently remove the core using a paring knife by spreading the pepper carefully, you may need to shake some of the remaining seeds out.
- Separate the strips of bacon and cook in the microwave for about 5 minutes on high, just enough to give it a head start. Then pat dry with paper towels. Just to soak up some of the grease. Set it aside to cool.
- Fill either a pastry bag or just a freezer bag (cutting one corner out), and pipe some of the filling into each pepper until full but still able to almost close the pepper.
- Wrap each pepper with a strip of bacon then use two or three toothpicks to secure the pepper closed.
- Place the jalapeños on a medium heat grill and cook until the bacon is crisp. you'll need to turn frequently to heat them evenly. you may even want to use foil to prevent the mess. I find that by cooking the bacon a little first and not over filling that you'll get minimal mess however.
- Let them sit for about 5 to 10 minutes and serve them up! Don't forget which ones have the seeds!

- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up. Cut off one-third of each pepper lengthwise (see photos). Use a small spoon (a serrated grapefruit spoon works great) to scoop out the seeds and membranes from each pepper, and discard those pieces.
- In a bowl, combine the cream cheese, 1/4 cup chopped cilantro and green onion, garlic powder, onion powder and salt. Stir to combine.
- Stuff the peppers with the cream cheese mixture (you might have a small amount left over). Top each of the peppers with a small mound of cheese lengthwise.
- Bake for 10 to 13 minutes, until the cheese is bubbling and starting to turn golden.
- Meanwhile, place a big handful of chips in a food processor and process until the chips are broken into tiny pieces (or, you can crush them under a rolling pin). Stir the feta, if using, and the remaining 1 tablespoon of cilantro and green onion into the chips.
- Transfer the jalapeño poppers to a large serving dish and top each pepper with the crushed chip mixture. Serve!

- Start by cutting a "V" the length of each jalapeno pepper
- Stuff each jalapeno with pimento cheese until they are full.
- Starting at the top of each jalapeno, take a piece of bacon, and wrap as far down as you can go. Make sure to overlap so you don't have gaps anywhere on the pepper. I used 2 pieces of bacon per pepper.
- Prepare your grill and set coals off to one side. This is indirect grilling. You'll want to put your peppers on the side without the coals.

- In a large bowl, combine beef, seasonings, egg and breadcrumbs and knead together with clean hands. Form 4 thin hamburger patties. On two of the patties, place cubes cheddar and chopped jalapeños in the centre, place a second beef patty on top, molding the edges together to form one burger patty.
- Pan fry or grill the burgers 5-6 minutes per side on medium heat, only flipping once. No oil needed, use a non-stick frying pan. Before removing from the pan, place Kraft single slices on the burgers for a minute or two to melt.

- To form perfectly cooked patties, consider using a burger press.
- Preheat grill or griddle to high heat. Divide ground beef equally into three portions. For each portion, take about 2/3 of it and form it into a very flat patty with sides (again, this is super easy if using the burger press). - In a large deep skillet, saute 1/4 pound diced bacon in 2 tablespoons butter for 5 minutes; transfer to paper towels.

- Start by preheating oven to 350 degrees and spraying a 9x13 baking pan with nonstick spray. Bring a large pot of salted water to boil. Cook shells following box instructions but pull 1 minute early. Drain and set aside to cool slightly.
- While pasta is cooking, make your jalapeno cheese sauce. Add diced jalapeno pepper to a large skillet and heat over medium high heat for 1-2 minutes. Add minced garlic and stir to cook for 1 minute. Move 2/3 of the jalapeno and garlic to a large mixing bowl while leaving the remaining amount in your skillet.
- To your skillet, add in your butter and once your butter is melted, add in the flour.Whisk together and continue whisking while your flour cooks for 1-2 minutes before slowly pouring in the milk and chicken stock.
