ORANGE RAISIN MUFFINS

Steps:
- Peel orange; place peel in a blender or food processor. Separate orange into segments; place in blender. Add orange juice; cover and process until well blended. Add butter and egg. , In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Stir in orange mixture just until moistened. Fold in raisins. , Fill greased or paper-lined muffin cup two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- Combine dry ingredients.
- Stir in cranberries.
- Beat egg, orange juice, oil and orange rind.
- Add to dry ingredients all at once.
- Stir just to moisten.
- Spoon into greased muffin cups.
- (fill 3/4 full).
- Sprinkle tops lightly with a bit of sugar.
- Bake 400F 15-20 mins until lightly browned and firm to the touch.

- In a large bowl combine the flour, sugar, baking powder, nutmeg, cinnamon, baking soda, ginger, salt and the orange zest.
- In a microwave safe container, melt the coconut oil on power level 4, for 1-2 minutes, just until mostly melted.
- Put the coconut oil in with the dry ingredients.
- In a different bowl, place the apple sauce, orange juice, eggs and the the vanilla, and mix together.
- Stir into the dry ingredients, just until combined.
- Fold in the Craisins, and the pecans.
- Prepare a muffin tin by greasing it or using paper liners.
- Fill each cup 3/4 full.
- Bake in a preheated oven @ 375 degrees for 18-20 minutes, or until the center comes out clean when checked with a wooden pick.
- Cool on a wire rack.

CRANBERRY ORANGE MUFFINS

- Preheat the oven to 375 degrees F.
- Put the cranberries and orange juice in a small saucepan, and bring just to a simmer over medium heat. Remove berries from the heat, and set aside to cool and plump. Drain off any excess liquid and set aside.
- Lightly brush a 12-muffin tin with butter. Sift the flour, baking powder, and salt into a medium bowl and set aside.
- In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, orange zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer.
- Fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the cranberries. Do not over mix. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.
ORANGE CRAISIN MUFFINS
These orange and Craisin muffins are moist and delicious. The flavor combination is superb, plus they are easy to make.

- Preheat oven to 350°F (176°C). Grease and flour a large 6-cup jumbo muffin pan or you can line it with large paper liners.
- Sift flour, sugar, baking powder, salt and baking soda into a large mixing bowl. Set aside.
- In a medium bowl, add milk, butter, orange juice, orange zest, and beaten egg. Whisk or beat for 1-2 minutes.
- Add wet ingredient to dry ingredients and stir until combined. Do not overmix. Stir in Craisins until well-distributed.
- Divide batter evenly for 6 muffins into your prepared muffin pan. Each well should be about 3/4 full. If using double acting baking powder, allow to rest for 5-10 minutes to allow the baking powder to start working. If using single acting baking powder, bake your muffins right away.Bake for 30-35 minutes or until golden brown and a toothpick inserted in center comes out clean. To get a more even bake, turn pans around halfway through baking.

- Grease a 12 cup muffin pan.
- In a bowl, stir together cranberries, 1/4 cup of the sugar, and orange peel.
- In a larger bowl, sift together flour, baking powder, salt, and the rest of the sugar.

- Preheat oven to 400F; spray a muffin tin (12) with non-stick cooking spray like Pam and set aside.
- Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
- Add egg and butter to food processor and combine; pour into large bowl.
- Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
- Stir to combine.
- Fill muffin cups about 3/4 full.

- Preheat the oven to 375 degrees F. Spray mini muffin tins with nonstick spray.
- Cream together the butter and granulated sugar in a large bowl by hand or using an electric mixer. Add the eggs and beat well. Mix in the flour. In a separate bowl, dissolve the baking soda in the buttermilk. Add the buttermilk mixture to the batter along with the orange zest and mix well.
- Fill the muffin tins two-thirds full with the batter and bake until lightly browned, 12 to 17 minutes.
- In a separate bowl, combine the brown sugar and orange juice (you should have about 1/2 cup juice) and mix well. Drizzle this glaze over the warm muffins in the tins. Remove the muffins while still warm.
