Number Of Ingredients 10

2 tablespoons chia seeds
1 cup orange juice (I used a mix of orange and meyer lemon juice here, but just orange works well too)
Scant 2 cups (8 ounces) peeled and sliced carrots
Juice of 1/2 lemon
1 tablespoon honey
1 tablespoon almond butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Small pinch of kosher salt
1 cup (8 ounces) almond milk ice cubes

Steps:

  • Place chia seeds and orange juice in a small bowl, whisking to combine. Let sit for 20 minutes, whisking occasionally,
  • Add the hydrated chia seeds with juice to the container of a blender along with all other ingredients. Blend until smooth. Taste and add more honey or lemon juice as needed.

Steps:

  • Blend the coconut milk, chia seeds, honey, cinnamon, ginger, vanilla, oranges and 3 ice cubes in a blender on low speed until everything begins to combine. Raise the setting to high and blend until everything is well combined and the smoothie begins to have a creamy consistency. Taste; if you like it colder, add more ice cubes and blend until smooth.
  • Pour into two glasses and garnish with a sprinkle of cinnamon and chia seeds if using.
