This a very simple recipe to make and a very flavorful one at that, I do believe that everyone will love it! You may use thawed frozen blueberries if fresh ones are unavailable.

2 ¼ cups all-purpose flour
¾ cup packed brown sugar
1 tablespoon baking powder
1 teaspoon salt
¼ cup margarine, softened
2 eggs
2 tablespoons orange zest
½ cup milk
½ cup orange juice
1 cup fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease the bottom of one 5x9 inch loaf pan.
  • In a large bowl combine the flour, brown sugar, baking powder, salt, butter, egg, orange zest, milk and orange juice. Beat at low speed just until moistened. Then beat at medium speed for 2 minutes. Fold in the blueberries and spread into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 60 to 70 minutes or until a toothpick poked into the center of the loaf comes out clean. Cool in pan for 10 minutes then invert onto a wire rack to cool completely before serving.

2 cups fresh or frozen blueberries
¼ cup water
1 cup orange juice
¾ cup white sugar
¼ cup cold water
3 tablespoons cornstarch
½ teaspoon almond extract
⅛ teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
  • In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

1/3 cup water

2 tablespoons lemon juice ((or orange juice))
1 1/2 tablespoons cornstarch ((corn flour) mixed with 2 tablespoons water)

Steps:

  • Combine the blueberries, water, sugar, lemon juice and water in a small-sized saucepan over medium-high heat. Bring to a boil; lower heat and gently simmer.
  • Combine the cornstarch with the extra water until dissolved and stir it into the blueberries. Continue to simmer while stirring occasionally, until the sauce begins to thicken and coats the back of a metal spoon..

1 Granny Smith apple
1/2 onion, peeled
2 cups blueberries
1/2 cup packed light brown sugar
1/4 cup sugar
1/2 teaspoon ground star anise or 2 whole star anise
Grated zest of 1 lime
Grated zest of 1 orange
1/2 cup white wine vinegar
2 whole ducks, trimmed of excess fat, giblets discarded

Steps:

  • Prepare blueberry sauce: Peel, quarter and core apple. Place in a food processor with onion and finely chop. Place in a saucepan with blueberries, sugars, star anise, zests and vinegar.
  • Place mixture over high heat to bring to a boil, then simmer until pulpy and beginning to thicken, about 30 minutes. (Mixture will be quite liquid after 20 minutes, but begins to thicken by 30 minutes, and will thicken more once cold.)
  • If whole star anise were used, remove and discard them. Transfer sauce to a sterilized jar, cover and allow to cool. For best flavor, allow to rest one day before serving. (Makes 1 generous cup.)
  • Prepare ducks: Heat oven to 325 degrees. Place ducks on a rack in a roasting pan. Cook, uncovered, for 3 hours, periodically draining off fat in pan. Raise heat to 400 degrees, and roast an additional 30 minutes to crisp skin.
  • To serve, remove ducks from oven and place on a carving board. Cut each duck into four pieces. Cut away meat from rib cage, discarding rib bones. Arrange on a serving platter, crispy skin side up. Serve with blueberry sauce.

1 package frozen phyllo dough, thawed

2 pounds cream cheese, at room temperature
1 cup sour cream
1/2 cup orange juice
3 tablespoons ground coriander

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small saucepan over low heat, melt the butter with the orange peel and sugar. Place a sheet of phyllo dough on a parchment-covered baking sheet. Brush the phyllo with melted butter. Cover with another sheet of phyllo dough and brush it with butter. Repeat until all sheets are layered. Be sure to keep the phyllo sheets covered with a damp kitchen towel as you use them so they dont dry out. Bake for 15 minutes. Let cool.
  • Combine the orange-flavored liqueur, 1/2 cup confectioners sugar, 1 tablespoon orange zest, and 3 cups blueberries in a large saucepan and place the pan over medium-low heat. Simmer for 15 minutes. Transfer the mixture to a blender or food processor and puree until smooth. Strain.
  • In a stand mixer, or using a hand held mixer, make the filling by blending together the cream cheese, sour cream, remaining orange zest, remaining confectioners' sugar, and ground coriander. When the filling is well-blended, gently stir in the blueberries.
  • Cut the phyllo dough into 8 (4-inch) squares. Place a square of phyllo on each plate, and top with a dollop of filling; add another phyllo square, another dollop of filling, then top with blueberry sauce. Repeat the process to make 4 servings. Serve immediately.

1 cup unsweetened orange juice (can use half orange juice and water)
1 cup sugar
1/8 teaspoon allspice
1 pinch ground nutmeg
1/2 teaspoon cinnamon (can use up 1 teaspoon or to taste)
1 1/4 cups blueberries (can use fresh or frozen)

Steps:

  • Remove all the discolored/white cranberries and discard, then rinse the cranberries and blueberries separately under cold water.
  • Place the cranberries into a medium saucepan with the orange juice and sugar; bring to a boil over medium heat stirring.
  • Reduce the heat to low and simmer uncovered for about 10 minutes or until the cranberries pop.
  • Using a potato masher or the back of a large spoon slightly mash the berries just to make certain all the skins are broken.
  • Mix in the allspice, nutmeg and cinnamon starting with 1/2 teaspoon cinnamon and add in more to taste; mix until completely combined (about 1 minute) adjust the spices if needed.
  • Turn off the heat element and mix in the blueberries.
  • Using a potato masher or spoon mash only a few berries.
  • Remove from heat; cool slightly.
  • Transfer to a bowl and refrigerate until thickened (the sauce will thicken as it cools).

2 cloves garlic (minced)
1 shallot (peeled and minced (or small yellow onion))
2 red Thai chili peppers (minced (or to taste))
1 tablespoon tomato paste
4 cups blueberries (frozen or fresh (I used frozen))
1 tablespoon balsamic vinegar
2 tablespoons maple syrup
1 tablespoon whole grain Dijon mustard
3/4 cup ketchup (regular or low sodium)
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cayenne pepper (optional)
1 tablespoon, cilantro steams (minced (few stalks, no need to use leaves))

Steps:

  • Heat olive oil in a medium heavy-bottomed pot over medium-low heat.
  • Add garlic, shallot and chili peppers. Cook for 5 minutes, stirring occasionally.
  • Add tomato paste, blueberries, balsamic vinegar, maple syrup, mustard, ketchup, Worcestershire sauce, salt, black pepper, cayenne pepper (if using) and cilantro stems. Stir to combine. Reduce heat to low. Cover and cook for 45 minutes to 1 hour or until you've reached your desired consistency/thickness, stirring every 15 minutes or so.
  • Carefully using an immersion blender, blend sauce (or use potato masher or spoon or simply leave as is). I didn't puree a lot because I wanted some texture.
  • Allow to cool (jam will further thicken as it cools), portion into a storage jar, cover, store in the refrigerator and enjoy within a few days up to a week. Yields about 2 cups, approximately. Serve with your favourite BBQ foods!

6 c prepared fuit, about 6 medium oranges and 4 lemons
1 1/2 c water
6 c sugar, measured into separate bowl plus 1/4 cup, divided
1/8 tsp baking soda
1/2 tsp butter or margarine
1 1/2 pouches of fruit pectin
2 c fresh blueberries
1 c honey

Steps:

  • 1. Using a fruit peeler remove the zest of the oranges and lemons. Cut the zest pieces into thin slices, then finely chop or grind and set aside. Peel and discard remaining white part of the peel from fruit. Chop fruit pulp, reserving any juice and set aside. Place the peels, water and baking soda in a saucepan. Bring to a boil over high heat. Reduce the heat, cover and simmer for 20 minutes stirring occasionally. Add the reserved fruit and juice and cover. Simmer additional 10 minutes.
  • 2. Stir the 6 cups sugar into the prepared fruit in the saucepan. Add the butter to reduce foaming. Bring mixture to a full rolling boil on high heat sirring constantly. Stir in pectin. Return to a boil and boil exactly 1 minute, stirring constantly. Remove from heat and skin off any foam with a metal spoon.
  • 3. Toss the blueberries with honey. Place into a small saucepan and cook over medium heat for 1 minute. Scoop out blueberries and add to jam. Reduce liquid to a syrup and stir into the finished marmalade. Serve at room temperature.
