CHOCOLATE ORANGE BROWNIES

200g butter, chopped
200g dark chocolate, roughly chopped
zest 1 large orange
4 large eggs
350g caster sugar
100g plain flour
50g cocoa powder
100g dark chocolate orange, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 24 x 20cm brownie tin with baking parchment. Put the butter, dark chocolate and orange zest in a non-stick saucepan and very gently melt over a low heat, stirring every now and then, until smooth - take care not to overheat it. Cool.
  • Whisk the eggs and sugar together with an electric whisk until the mixture is pale, has doubled in volume and leaves a trail when the beaters are lifted. Gently stir into the cooled chocolate mixture. Sift over the flour and cocoa, stir in, then add the orange chocolate.
  • Pour into the lined tin and bake for 35-40 mins. Cool in the tin, then cut into squares.

1/4 cup baking cocoa
2 large eggs
1 cup sugar
3/4 cup all-purpose flour
1/2 cup chopped pecans
2 tablespoons orange juice concentrate
1 tablespoon grated orange zest
1/8 teaspoon salt
FROSTING:
1-1/2 cups confectioners' sugar
3 tablespoons butter, softened
2 tablespoons orange juice concentrate
1 tablespoon grated orange zest, optional

Steps:

  • In a small saucepan, melt butter. Stir in cocoa until smooth. In a large bowl, beat eggs until frothy. Without stirring, add the sugar, flour, pecans, orange juice concentrate, zest and salt. Pour cocoa mixture over the top; mix well. Transfer to a greased 8-in. square baking pan., Bake at 350° for 28-32 minutes or until edges begin to pull away from sides of pan. Cool completely on a wire rack. , For frosting, combine confectioners' sugar, butter and orange juice concentrate. Spread over the brownies. Cut into bars; garnish with orange zest if desired.

1/4 lb unsalted butter, cut into small pieces
3 (1 ounce) unsweetened chocolate squares
1 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1 cup sugar
1 teaspoon grated orange zest
1/4 teaspoon orange extract
1/4 teaspoon vanilla extract
1 3/4 cups sugar
1/4 cup flour
1/2 teaspoon baking powder
4 teaspoons grated orange zest
1/2 cup fresh squeezed orange juice
1/4 cup fresh squeezed lemon juice
1 teaspoon orange flower water (optional)
1/2 teaspoon orange extract
4 eggs, lightly beaten

Steps:

  • Melt the butter and chocolate in the top of a double boiler over simmering water, the upper pan should not touch the water.
  • Preheat oven to 325*F. Brush a 9 X 13 inch pan with melted butter and dust lightly with flour or spray generously with cooking spray.
  • Stir the flour, baking powder and salt together. In a medium bowl whisk together the eggs, sugar and orange zest until well blended. Add the orange and vanilla extracts to the melted butter ahd chocolate and stir into the egg mixture. Add the dry ingredients, mixing well. Spread the batter into prepared pan and bake 25 to 30 minutes until mixture is set, but not dry. Cool about 10 minutes.
  • Sift the sugar, flour and baking powder for the orange layer together in a large bowl. Whisk in the orange zest, orange and lemon juices, the orange flower water if using, and the orange extract. Whisk in the eggs, stirring until smooth. Pour over the pre-baked bottom and bake another 40 to 50 minutes, until the filling puffs up. The top should be light golden brown and the filling set. Cool completely. Refrigerate until cold before cutting. You will need to wipe the knife between cuts, as necessary -- to serve dust with confectioner's sugar if desire.

Steps:

  • BROWNIE:.
  • Mix flour, sugar, and salt together.
  • Next add butter, eggs, orange extract, and orange zest.
  • Mix till well blended.
  • Pour into a greased 9X13 pan.
  • Bake at 350 degrees for 30 min, or until golden brown.
  • GLAZE:.
  • Mix together until smooth. While cake is still hot, poke entire cake with a fork. Pour glaze over top and spread. Cool and cut into squares.

½ cup bittersweet chocolate chips
½ cup unsalted butter
3 large eggs
1 cup white sugar
1 tablespoon orange blossom water
2 teaspoons grated orange zest

1 ¼ cups sifted all-purpose flour
¼ teaspoon baking soda
1 pinch kosher salt
1 ½ cups chopped fresh cranberries
sea salt to taste (optional)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line an 8x8-inch baking pan with parchment paper or grease with butter or shortening.
  • Place 1/2 cup mini semisweet chocolate chips in a large saucepan. Add bittersweet chips and butter and melt over low heat.
  • Remove from the heat. Whisk in eggs until thoroughly combined and the chocolate is smooth. Stir in sugar, orange blossom water, orange zest, and vanilla paste. Stir in flour, baking soda, and kosher salt until just combined. Fold in cranberries and remaining 1/4 cup semisweet chips.
  • Pour and spread the batter evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, 40 to 50 minutes. Sprinkle tops with sea salt immediately. Cool completely in the pan before cutting into 9 squares, wiping the knife clean after each cut.

1/2 cup all-purpose flour
1/2 cup semisweet chocolate chips
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
6 oranges, cut in half
1/2 cup vegetable oil
2 large eggs

Steps:

  • Combine the sugar, flour, chocolate chips, cocoa powder, baking powder and salt in a large heavy duty resealable bag at home.
  • At the campsite, scoop out the inside of the orange out being careful not to puncture the peel. Add the oil and eggs to the bag with the flour mixture, reseal and squish around until well combined. Fill each orange about 2/3 of the way and wrap twice in heavy duty aluminum foil.
  • Put in a bed of coals, cut side up, and cover with more coals. Cook until the batter is set, 20 to 25 minutes, depending on the heat of your coals.
  • Remove from coals and let sit a few minutes to cool.

1 egg yolk
1 cup orange juice
1 tablespoon butter
1/2 teaspoon orange rind, grated

Steps:

  • Mix sugar and corn starch in double boiler.
  • Add beaten egg yolk and orange juice. Cook for 10 - 15 minutes or until thick.
  • Remove from heat, add butter and peel.
  • Cool.
  • Lemon Cream Filling 1 egg yolk, beaten 1/2 cup sugar 2 Tbsp corn starch 1/4 cup lemon juice 1/8 tsp grated lemon peel 1/2 tsp butter 1/2 cup water.
  • Combine yolk, sugar, corn starch, 1/2 cup water, lemon juice, lemon peel and cook in double boiler for 15 minutes. Add butter.
  • Cool.

This recipe started out as the Lemon Blossoms from "Paula Deen & Friends" cookbook. I didn't have the lemon or lemon pudding called for so I improvised. A word of warning - do not try this with a hand mixer. The dough is unbelievably stiff and I nearly burned out the motor on mine. The finished cupcakes are light as a feather though. I was truly amazed that such a thick batter would bake up so light.

1 (18 1/2 ounce) package orange cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
4 large eggs
3/4 cup vegetable oil
4 cups confectioners' sugar
1/3 cup water
3 tablespoons vegetable oil
1 -2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray miniature muffin tins with cooking spray.
  • Combine the cake mix, pudding mix, eggs and oil and blend with a stand mixer for about 2 minutes or until smooth.
  • Pour about a tablespoon of batter into each spot in the muffin tin. I used a mini ice cream scoop about the size of a melon baller.
  • Bake for about 12 minutes. Remove from pan immediately and set aside to cool slightly.
  • Sift the confectioner's sugar into a mixing bowl. Add the water, oil and vanilla and mix until smooth.
  • Dip the warm cupcakes into the glaze and place them on a wire rack with waxed paper underneath to cool and for the glaze to set. This could take a while especially if it's humid.
  • When the glaze has set completely the cupcakes can be stored in an airtight container until it's time to serve them.
