Open-face sandwiches deliver more flavor and more melty cheese. (No top bread getting in the way!) You can feed a crowd with these sandwiches, just like my grandma did with her eight kids!

8 slices sourdough bread
1/2 cup plus 2 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
3/4 cup ketchup
3 tablespoons whole grain mustard
4 tablespoons honey
4 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 teaspoons hot sauce
3 cups shredded chicken (from 1 rotisserie chicken)
8 ounces pepper jack cheese, shredded
8 ounces red cabbage (about 1/4 small head), thinly sliced
4 ounces green cabbage (about 1/8 small head), thinly sliced
Dill pickle spears, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Spread both sides of each slice of bread with 1/2 cup of the mayonnaise, dividing evenly, and place on a baking sheet. Sprinkle with 1/2 teaspoon salt and a few grinds of black pepper and bake until the bread is crispy and the mayonnaise is starting to bubble up and turn a light golden brown, about 11 minutes.
  • Meanwhile, whisk the ketchup, mustard, 3 tablespoons of the honey, 2 tablespoons of the vinegar, the Worcestershire sauce, 1 teaspoon of the hot sauce, 1/2 teaspoon salt and a generous amount of pepper (10 to 15 grinds) together in a medium bowl until smooth. Reserve 1/4 cup sauce, then fold the chicken into the remaining sauce in bowl and toss to coat well.
  • Top each piece of bread with a heaping 1/4 cup chicken mixture and about 1/4 cup shredded cheese. Return to the oven and bake until the cheese is melted, chicken is heated through and bread has turned golden brown, 7 to 8 minutes.
  • Meanwhile, combine the red and green cabbage with the remaining 2 tablespoons mayonnaise, 2 tablespoons vinegar, 1 tablespoon honey and 1 teaspoon hot sauce in another medium bowl. Add 1/2 teaspoon salt and a few grinds of black pepper and toss until cabbage is evenly coated.
  • Drizzle the reserved sauce over the sandwiches and serve with the cabbage slaw and a dill pickle.

3 cups cubed cooked chicken breast
3 celery ribs, finely chopped
1 cup fat-free mayonnaise
1 small onion, finely chopped
1/2 cup dried cranberries
1/4 cup chopped pecans
2 tablespoons white wine vinegar
2 tablespoons Creole mustard
1 tablespoon lemon juice
1/4 teaspoon pepper
6 slices sourdough bread
Butter-flavored cooking spray
3/4 cup sugar-free apricot preserves
6 slices Brie cheese (1/2 ounce each)

Steps:

  • In a large bowl, gently combine the first 10 ingredients. Place bread slices on a baking sheet; spritz with butter-flavored cooking spray. Broil 4 in. from the heat for 2-3 minutes or until golden brown., Spread preserves over untoasted sides of bread slices. Top each with 2/3 cup chicken salad and a slice of cheese. Broil 2-3 minutes longer or until cheese is melted.

6 small boneless skinless chicken breasts (1-1/2 lb.)
1 can (10-1/2 oz.) chicken gravy
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups hot water
6 slices white bread
3 cups frozen peas, cooked

Steps:

  • Cook chicken in large nonstick skillet sprayed with cooking spray 3 min. on each side. Add gravy; cook 5 min. or until chicken is done (165ºF). Meanwhile, mix stuffing mix and water.
  • Spoon stuffing over chicken; cover. Cook 5 min. or until stuffing is heated through.
  • Top bread with chicken and gravy. Serve with peas.

1 pound fresh mushrooms, sliced
1 large sweet onion, sliced
1 cup fat-free mayonnaise
1/2 cup crumbled blue cheese
1/4 teaspoon pepper
8 slices French bread (1 inch thick)
1 pound boneless skinless chicken breasts, grilled and sliced
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cut bread into eight 1-in. slices and toast slices. Meanwhile, in a large nonstick skillet coated with cooking spray, saute mushrooms and onion for 15-20 minutes or until onion is tender and golden brown; set aside., In a small bowl, combine the mayonnaise, blue cheese and pepper. 2 bone-in skinless chicken breast halves, (about 1 1/2 pounds)
4 cups water
2 tablespoons kosher salt
1/4 cup non-fat yogurt
1/4 cup low-fat mayonnaise
1 tablespoon freshly squeezed lime juice
1 1/2 teaspoons Madras-style curry powder
1 teaspoon grated fresh ginger
1/3 cup chopped flat-leaf parsley
3 tablespoons sliced almonds
1/4 fresh pineapple, diced (about 1 1/4 cups)
1 bunch watercress, stems trimmed
4 slices wheat bread or 2 whole wheat English muffins, split and toasted

Steps:

  • Put the chicken in a saucepan along with the water and salt. Bring just to a boil then reduce to a gentle simmer. Cook, covered, just the chicken is just firm, about 15 minutes. Set chicken aside off the heat, to cool and finish cooking in the liquid. When cool, pull apart by hand into shredded bite-size pieces.
  • Whisk yogurt, mayonnaise, lime juice, curry, grated ginger and parsley in a bowl. Add chicken, almonds, and pineapple, and fold to coat evenly. Make open faced sandwiches with the salad and watercress on the bread or muffins. Serve.

I made this one day when I was craving Chicken Parmesan but trying to stay on a diet as well. It is really delicious and can be made very fast too! If I want to sneak in more veggies, I sauté a little spinach and put it on right before the sauce.

1 boneless skinless chicken breast
3/4 cup marinara sauce
1/2 cup part-skim mozzarella cheese
2 slices whole wheat bread
1 teaspoon italian seasoning
salt and pepper

Steps:

  • Cut the chicken breast in half.
  • Sprinkle the outside of the chicken breast halves with salt, pepper, and italian seasoning.
  • Cook on medium-high heat until juices run clear.
  • While that is cooking, toast two pieces of whole wheat bread.
  • Place the toast on an oven-proof pan, then put the chicken on top of that, and then the mozarella cheese.
  • Put the sandwiches in the oven on the broil setting until the cheese is melted.
  • While that's browning, heat the sauce in the same pan that the chicken was heated inches Pour this on top of the sandwiches.

4 teaspoons Dijon mustard
4 slices bread, hearty country type
1 cup thinly sliced apple, peeled (Ambrosia or Fuji )
1/4 cup chopped onion
2 1/2 cups fresh spinach leaves
2 cups shredded rotisserie cooked chicken breasts
4 slices muenster cheese

Steps:

  • Preheat broiler.
  • Combine preserves and mustard. Spread 1 side of each bread slice with 2 teaspoons of mustard mixture. Place bread slices with mustard side up on a baking sheet.
  • Heat a large skillet over medium high heat. Coat skillet with cooking spray. Saute apples and onions for 3 minutes or until tender.
  • Add spinach; cook 1 minute or until spinach wilts.
  • Layer each of the 4 bread slices with 1/4 cup spinach-apple mixture, 1/2 cup shredded chicken and 1 cheese slice.
  • Broil 1 1/2 minutes or until cheese is bubbly. Remove from heat and serve immediately.
