CLASSIC APPLE PIE

Time 3h20m

Yield 8 to 10 servings

Number Of Ingredients 16

4 pounds mixed apples (such as Granny Smith, Gala and McIntosh)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter
2 tablespoons all-purpose flour, plus more for dusting
1 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
2 disks Pie Dough, recipe follows
1 large egg, beaten
Coarse sugar, for sprinkling (optional)
2 1/2 cups all-purpose flour
4 tablespoons cold vegetable shortening
2 teaspoons sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces

Steps:

  • Peel and core the apples; slice 1/4 inch thick. Transfer to a bowl and toss with the granulated sugar and lemon juice. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until softened, 12 to 15 minutes. Add the flour, cinnamon and salt and stir until the juices thicken, about 2 minutes. Remove from the heat and let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Add the cooled filling and dot with the remaining 2 tablespoons butter.
  • Roll out the remaining disk of dough into a 12-inch round. Lay the dough over the filling and press the two crusts together around the edges. Fold the overhanging dough under itself and crimp with your fingers. Brush the top crust with the beaten egg and sprinkle with coarse sugar. Cut a few slits in the top crust to let steam escape. Chill 1 hour.
  • Put a baking sheet on the bottom oven rack and preheat to 425 degrees F for at least 30 minutes. Put the pie directly on the hot baking sheet and reduce the oven temperature to 375 degrees F; bake until the pie is golden and the filling is bubbly, 1 hour to 1 hour, 10 minutes, rotating the pie as needed. (Cover the edges with foil if they are browning too quickly.) Transfer to a rack and let cool until the filling is set, about 3 hours.
  • Pulse the flour, shortening, sugar, vinegar and salt in a food processor until it looks like fine meal. Add the butter and pulse until it is in pea-size pieces. Sprinkle in 1/4 cup ice water and pulse until the dough begins to come together. Pinch the dough with your fingers; if it doesn't hold together, add up to 4 more tablespoons ice water, 1 tablespoon at a time, and pulse again.
  • Divide the dough between 2 sheets of plastic wrap and pat each into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or preferably overnight, or freeze up to 2 months.

FLAT APPLE PIE WITH PERFECT PIE CRUST

Flat Apple Pie with Perfect Pie Crust image

Categories     dessert

Time 1h

Yield 2 pies

Number Of Ingredients 15

5 Granny Smith apples, peeled and sliced
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
Juice of 1/2 lemon
1 recipe Perfect Pie Crust, recipe follows
6 tablespoons butter
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 sticks cold butter
3/4 cup vegetable shortening
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar

Steps:

  • Preheat the oven to 375 degrees F.
  • In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
  • With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it'll take a little time to get the dough completely rolled out.
  • If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.
  • Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.
  • Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic - the more rustic the better. Dot the tops of the pies with chunks of the butter.
  • Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminum foil for the remaining baking time.
  • Allow to cool slightly, then slice into wedges with a pizza cutter. Eat 'em on the go!
  • Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
  • Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl.

OPEN FACE APPLE PIE

Open Face Apple Pie image

Provided by My Food and Family

Categories     Recipes

Time 1h

Number Of Ingredients 11

Dough:
1 1/2 cups all-purpose flour
1/2 tsp salt
8 Tbsp (1 stick) butter
3-4 Tbsp ice cold water
Filling:
3 apples of your choice
3 Tbsp sugar
Cinnamon (optional)
2 Tbsp butter
Sugar

Steps:

  • Dough: (Note: All the ingredients should be kept very cold. Try not to use your hands as they will warm the ingredients -use a spoon to mix the ingredients.) Mix the flour and salt. Grate the butter into the mix using the side of the grater with the largest holes. Mix gently - the mixture will be lumpy (The pockets of butter within the dough will help make the crust fluffy). Now add ice cold water 1 Tbsp. at a time until the dough just comes together.
  • Form the dough into a ball, wrap with plastic wrap, and place in the refrigerator for 20 minutes. (The dough can be made ahead of time and stored in the refrigerator for several days if needed.)
  • Pie: Preheat the oven to 400 degrees F. Roll out the dough into a circle until the dough is about 1/4" thick. Peel and core the apples and cut into slices 1/4" thick. Place the apple slices onto the dough, slightly overlapping the slices, and leaving an edge of dough about 2" wide all the way around. Sprinkle the apples with sugar, cinnamon (optional), and dot with butter. Fold over the edge of dough onto the slices, pinching the dough at the corners. Sprinkle the edges with a little water and sugar.
  • Using a spatula place the open face pie onto a baking sheet and bake on the middle rack for 30-35 minutes. When the edges of the crust are golden brown and the filling is bubbly, remove from the oven and let cool.
