I came across this sauce in recipe #80287 for Shaker Bread Pudding with Oozing Caramel Sauce. I plan to try it out as a fat-free topping for vanilla frozen yogurt.

1 cup corn syrup
1 pinch salt
4 tablespoons skim milk powder

Steps:

  • In a saucepan, combine brown sugar, corn syrup and salt. Bring to a boil. Cook for one minute and stir in milk powder.

Steps:

  • Combine all the ingredients in a saucepan set over a low heat, and stir until the sugar has dissolved. Turn the heat up and bubble the sauce for 2-3 mins until golden and syrupy. Leave to cool for 10 mins before serving. Can be made up to 3 days in advance and chilled - gently reheat to serve.

1/2 cup skim milk
3/4 cup sugar
1/2 cup applesauce (optional)
1 teaspoon vanilla
1 tablespoon lemon juice
2 teaspoons ground cinnamon
1/4 teaspoon salt
10 slices fat-free bread, cubed
1 cup brown sugar
1 cup corn syrup
1 pinch salt
4 tablespoons nonfat dry milk powder

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, mix egg whites, skim milk, sugar, applesauce, vanilla, lemon juice, cinnamon and salt.
  • Lightly coat a loaf pan with cooking spray.
  • Place bread in pan and top with egg mixture.
  • Bake for 70 minutes.
  • Meanwhile, in a saucepan, combine brown sugar, corn syrup, and salt.
  • Bring to a boil.
  • Cook for 1 minute and stir in milk powder.
  • Serve bread pudding topped with caramel sauce.

250g caster sugar
142ml pot double cream
50g butter

Steps:

  • Tip the sugar into a heavy-based frying pan, stir in 4 tbsp water, then place over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 mins until you have caramel. Take off the heat, then carefully stir in the cream and butter. Leave the sauce to cool, then tip into a squeezy bottle.
  • Tip the sugar into a heavy-based frying pan, stir in 4 tbsp water, then place over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 mins until you have caramel. Take off the heat, then carefully stir in the cream and butter. Leave the sauce to cool, then tip into a squeezy bottle.
