No bake chocolate marshmallow cereal bars are an easy and addicting treat for s'more fans!

1 10.5 ounce bag mini marshmallows, divided
3/4 cup semi sweet chocolate chips
3/4 cup milk chocolate chips
5 Tbsp butter or margarine
1/4 cup light corn syrup
1 tsp vanilla extract
8 cups Golden Grahams cereal

Steps:

  • Spray a 9x13" pan with non stick cooking spray; set aside. Spray a large mixing bowl with non stick cooking spray. Measure 1 cup of the marshmallows and set aside.
  • In a large glass bowl combine remaining marshmallows, chocolate chips, butter, and corn syrup. Cook in the microwave till melted, stirring every 30-60 seconds. Stir in vanilla extract.
  • Pour the cereal into your greased bowl. Quickly pour the melted chocolate mixture over the cereal with the reserved 1 cup of marshmallows. Stir gently till well coated.
  • Press the warm mixture into your prepared pan. I find that it works best to use wet hands, but you can use a spatula or wooden spoon.
  • You can let the bars sit for 5 minutes and serve them still warm, or you can let them stand at room temperature for at least 30 minutes for easier cutting.

2/3 cup sugar
1/2 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
2 1/3 cups graham cracker crumbs
1/3 cup Gold Medal™ all-purpose flour
1/8 teaspoon salt
1 bag (11.5 oz) milk chocolate chips (2 cups)
1 jar (7 oz) marshmallow creme
1 cup miniature marshmallows

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
  • In large bowl, beat sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon, until light and fluffy. Stir in graham cracker crumbs, flour and salt. Reserve 2 cups graham cracker mixture. Press remaining mixture in pan for crust.
  • Sprinkle chocolate chips over crust; press slightly. Drop marshmallow creme by tablespoonfuls over chocolate chips. Wet back of tableware spoon and use to lightly spread marshmallow creme. Sprinkle with marshmallows. Sprinkle with reserved crumb mixture; press lightly.
  • Bake 17 to 22 minutes or until marshmallows are puffed and light golden brown. Cool at least 30 minutes. For bars, cut into 6 rows by 4 rows.

  • In a food processor, pulse the graham cracker sheets until finely ground without any lumps. Combine it with the flour and salt and set aside.
  • Cream the butter and brown sugar until light and fluffy. Add the vanilla. Add the graham cracker and flour mixture and mix until incorporated.
  • Press 2/3 of the dough into the bottom of your 8x8 inch pan. Lay the Hershey Bars evenly across the bottom. Using a small spoon dollop the marshmallow fluff evenly on top of the hersheys chocolate pieces. Crumble the remaining dough on top. I would kind of pat the dough flat with my hands and lay it on top and spread it on top. Some of the marshmallow will peek through.
