2 hard boiled eggs
2 TBS butter or ghee, softened
unrefined sea salt (I use this one), to taste

Steps:

Mash peeled hard boiled eggs with butter (or ghee) with a fork until eggs are broken up and mixture is spreadable. Salt to taste.
Serve on your favorite bread, crackers, or salad. Or do what I do and eat it off the fork. ENJOY!

This is a Finnish appetizer, and it is exactly what it sounds like, hard boiled eggs mashed with butter. The west has their egg salad with mayo, the Finns and Estonians use butter. This is surprisingly good!

2 hard boiled eggs, peeled and chopped
2 Tbsp butter, softened
sea salt
black pepper, as desired
butter crackers, as needed

Steps:

1. Mash together the eggs and butter with a fork until the mixture is spreadable, as you can see the yolks will mash and the whites are finely minced from the fork. Season with sea salt as desired.
2. Spread on your favorite crackers, bread, or even place on top of several lettuce leaves. Sprinkle some black pepper on if desired, enjoy.

This is a tasty syrup for biscuits, pancakes or waffles. It also goes well on Angel Food Cake. You can keep it in the refrigerator for a few days if needed.

1/2 cup butter
1 large egg, well beaten (a must)
1 1/2 cups sugar
3 tablespoons light corn syrup
1/4 cup water
1 tablespoon mexican vanilla

Steps:

Melt butter in a medium sized sauce pan and cool.
Stir in the egg, sugar, corn syrup & water.
Bring the mixture to a boil and cook for
1 minute.
Remove from heat and stir in the vanilla.
Cover and set aside to cool while preparing pancakes or waffles or biscuits.
