Acorn squash are such a treat this time of year, especially when dressed up for the holidays with a special stuffing. I found this recipe in an old cookbook that was handed down to me.

3 small acorn squash, halved and seeded
1 large egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon chicken bouillon granules
2 tablespoons boiling water
1/4 cup chopped onion
2 tablespoons butter
1 cup crushed sage stuffing mix

Steps:

  • Invert squash in a greased 15x10x1-in. baking pan. Fill pan with hot water to a depth of 1/4 in. Bake, uncovered, at 400° for 30 minutes or until tender. , When cool enough to handle, scoop out pulp, leaving a 1/4-in. shell (pulp will measure about 3 cups). Place shells cut side up in a greased 15x10x1-in. baking pan; set aside. , In a large bowl, combine the pulp, egg, salt and pepper. Dissolve bouillon in water; add to squash mixture. In a small saucepan, saute onion in butter until tender; stir in stuffing mix. Set aside 1/4 cup for topping; add remaining stuffing mixture to squash mixture. , Bake, uncovered, at 400° for 20 minutes or until heated through.

Great vegetarian version of stuffed acorn squash, full of stuff most people would have in the fridge.

1 large acorn squash
2 tablespoons butter
2 tablespoons onions, chopped
1/2 cup broccoli floret, chopped
1/4 cup mushroom, chopped
2 tablespoons celery, chopped
2 tablespoons walnuts, chopped
1/2 teaspoon brown sugar
1/2 teaspoon soy sauce
1 tablespoon fresh basil, chopped
1/4 cup muenster cheese, grated

Steps:

  • Heat oven to 400°F.
  • Cut squash in half and remove the seeds.
  • Rub the cut flesh with salt and place flesh side down in a baking dish and bake for about 35 minutes.
  • While the squash is baking, sauté onion in butter until clear and add chopped broccoli florets, mushrooms and celery.
  • Sauté about 4 minutes.
  • Stir in walnuts and fresh basil, then sprinkle with brown sugar and soy sauce, adjust seasoning to taste. Toss to mix well.
  • Check baking squash with a fork to see if it glides through the flesh.
  • Stuff with vegetable mixture, top with equal amounts of grated cheese and return to oven for about 5 minutes.
  • NOTES : Baked acorn squash halves stuffed with sautéed broccoli, cheese and walnuts.

Found this recipe in a very old cookbook. Somewhat tweaked this recipe, and have tried it. Worth trying.

Number Of Ingredients 10

3 small acorn squash, halved and seeded
1 egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon beef bouillon granules
2 tablespoons boiling water
1/8 cup chopped onion
1/8 cup ground beef
2 tablespoons butter
1 cup sage seasoned stuffing mix

Steps:

  • Invert squash in a greased 15x10x1 baking pan.
  • Fill pan with hot water to a depth of 1/4 inch.
  • Bake uncovered at 400 degrees for 30 minutes, or until tender.
  • Cool, and when cool enough, to handle scoop out pulp, leaving a 1/4 inch shell. ( There should be about 3 cups).
  • Place shells cut side up in a greased 15x10x1 baking pan, and set aside.
  • In a large bowl, combine the pulp, egg, salt, and pepper.
  • Dissolve bouillon in the 2 tablespoons water, and add to squash mixture.
  • In a small saucepan, saute onion and beef in butter until tender, then stir in the stuffing mix.
  • Set aside 1/4 cup of this for topping, and add remaining stuffing mixture to the squash mixture.
  • Bake at uncovered at 400 degrees for 20 minutes, or until heated through.

1/4 cup dark brown sugar
1/4 cup margarine
1/4 cup water

Steps:

  • Preheat oven to 350.
  • Cut the acorn squash in halves and take out seeds.

  • Place 1 tbsp of margarine and brown sugar in each half.
  • Divide the apples among squash halves.

2 ¼ cups water
1 ½ cups whole wheat couscous
2 tablespoons chopped fresh cilantro
1 bunch fresh spinach, trimmed and coarsely chopped
1 tablespoon margarine
½ small onion, chopped
½ teaspoon seasoned salt, or to taste
salt and ground black pepper to taste
¼ cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place acorn squash cut-side down on baking sheet.
  • Bake squash in the preheated oven until tender when pierced with a fork, about 45 minutes. Flip to face up and let cool slightly.
  • Bring 2 1/4 cups water to a boil in a saucepan; remove from heat and stir in couscous and cilantro. Cover saucepan and let stand until water is absorbed completely, about 10 minutes. Fluff couscous with a fork.
  • Bring a large pot of water to a boil. Add spinach and cook until wilted, 3 to 5 minutes. Drain; use paper towels to squeeze out excess moisture. Fold into couscous.
  • Melt margarine in a skillet. Add onion; cook and stir until browned, about 10 minutes. Mix onion into the couscous mixture. Stir in seasoned salt, salt, and pepper.
  • Stuff acorn squash halves with couscous mixture. Sprinkle feta cheese on top.

3 medium acorn squash, halved and seeds removed
1 cup lentils
2 cups chicken broth
3/4 cup uncooked orzo pasta
1 pound bulk pork sausage
1/2 cup crumbled feta cheese
2 teaspoons Greek seasoning
2 tablespoons all-purpose flour
1 cup french-fried onions
Additional crumbled feta cheese, optional

Steps:

  • Preheat oven to 350°. Place squash halves, cut side up, on a large baking sheet; roast until they can just be pierced with a fork, about 40 minutes. Remove to a wire rack to cool. Meanwhile, place lentils in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, until tender, 20-25 minutes. Drain. Remove and set aside. In the same saucepan, bring chicken broth to a boil. Add orzo; cook according to package directions for al dente. Drain, reserving broth., In a large skillet, cook sausage, crumbling meat, until no longer pink, 6-8 minutes; drain. Add lentils and orzo to skillet; remove from heat. Add 1/2 cup feta cheese and Greek seasoning; mix well., Pour reserved chicken broth back into saucepan. Over medium heat, whisk in flour until thickened, then pour into sausage mixture., When cool enough to handle, quarter squash and return to baking sheet. Top with sausage mixture. Bake until squash are tender, about 30 minutes. Before serving, sprinkle with french-fried onions and, if desired, additional feta.

1 cup brown rice, rinsed

½ red onion, diced
1 clove garlic, minced
1 bell pepper, diced
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon paprika
¼ teaspoon onion powder

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut off the ends of squash before cutting squash in half horizontally. Scoop out seeds and save for roasting.
  • Drizzle squash with olive oil and sprinkle salt and pepper. Place cut-side up on a parchment paper-lined baking sheet.
  • Bake for 40 minutes, or until tender.
  • In a medium saucepan, add vegetable stock and rice.
  • Stir and bring to boil over high heat.
  • Cover and simmer for 45 minutes. Remove saucepan from heat.
  • Heat olive oil in a large saucepan or skillet over medium heat.
  • Add onions, stirring frequently until translucent.
  • Add garlic and cook until fragrant.

2 slices bacon, chopped
1 onion, chopped
⅔ cup chopped dates
½ teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons chicken stock
1 butternut squash

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook and stir bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes. Use a slotted spoon to remove bacon and discard most of the drippings, leaving about 2 teaspoons bacon drippings in the skillet. Drain bacon on paper towels. Cook and stir onion in the hot drippings until translucent, about 5 minutes.
  • Stir cooked bacon, dates, oregano, and basil into onion; add chicken stock to thin the filling.
  • Cut the top and stem from the squash, jack o'lantern-style, and scoop out seeds and stringy pulp. Cut out and discard small button at the bottom of the squash. Stuff the date filling into the cavity and replace the top. Set squash into a baking dish, pour in 1/2 inch of water, and cover with aluminum foil.
  • Bake in the preheated oven until squash is tender, 40 minutes to 1 hour. Test for doneness by removing top and inserting a thin, sharp knife into the flesh at the bottom. Slice squash into wedges to serve.
