The trick to Alton Brown's moist Swedish Meatballs recipe, from Good Eats on Food Network, is white bread soaked in milk.

Yield approximately 30 meatballs, 4 to 6 servings

Number Of Ingredients 14

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

½ cup butter, melted
7 slices French or Italian-style bread
4 ½ cups chicken broth

Steps:

  • Place sliced onions and butter into slow cooker, and mix until onions are thoroughly coated. Stir in bread and chicken broth.
  • Cover, and cook on LOW for 10 to 18 hours or on HIGH 4 to 5 hours, stirring occasionally. Stir well during last hour.

1 tablespoon butter
1 pound sliced fresh mushrooms
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 envelope Lipton beefy onion soup mix
1 package (24 ounces) frozen fully cooked Swedish meatballs or 1 package (26 ounces) frozen fully cooked homestyle meatballs
2/3 cup sour cream
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
Optional: Hot cooked noodles or mashed potatoes

Steps:

  • In a large skillet, heat butter over medium-high heat; saute mushrooms until tender, 4-5 minutes. Transfer to a 4-qt. slow cooker. Stir in broth, cream of chicken soup and soup mix. Stir in meatballs. Cook, covered, on low until flavors are blended, 5-6 hours., Stir in sour cream and parsley. Cook, covered, until heated through, about 15 minutes. If desired, serve with noodles or mashed potatoes.

1 large egg
2 cups half-and-half cream, divided
1 cup soft bread crumbs
1 small onion, finely chopped
1-3/4 teaspoons salt, divided
1-1/2 pounds ground beef
1 tablespoon butter
3 tablespoons all-purpose flour
3/4 teaspoon beef bouillon granules
1/2 teaspoon pepper
1/8 to 1/4 teaspoon garlic salt
3 cups water
1 pound red potatoes, cubed
1 package (10 ounces) frozen peas, thawed

Steps:

  • In a large bowl, beat egg; add 1/3 cup cream, bread crumbs, onion and 1 teaspoon salt. Crumble beef over mixture and mix lightly but thoroughly. Shape into 1/2-in. balls. , In a Dutch oven, brown meatballs in butter in batches. Remove from the pan; set aside. Drain fat. , Add flour, bouillon, pepper, garlic salt and remaining salt to pan; stir until smooth. Gradually stir in water; bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Add potatoes and meatballs. , Reduce heat; cover and simmer for 25 minutes or until potatoes are tender. 2 lbs ground beef or 2 lbs ground pork, mix
1 cup half-and-half
1 1/4 ounces Lipton Onion Soup Mix (1 envelope)
1 cup plain breadcrumbs
3 eggs
salt & freshly ground black pepper
2 (10 3/4 ounce) cans Campbell's Cream of Mushroom Soup
1 3/4 cups milk

Steps:

  • Whisk eggs, add ground meat, half&half,onion soup mix, breadcrumbs,salt&pepper.
  • Will be sticky, so wet hands & shape into meatballs.
  • Fry or bake in olive oil until lightly browned.
  • If baking bake at 425* for 20 minutes.
  • Drain on paper towels.
  • Whisk soup and milk together in oven proof casserole dish.
  • Add meatballs.
  • Bake at 325* for 1 1/2 hours.
  • Cook noodles, drain.
  • Add butter and parsley.
  • Serve meatballs over buttered noodles.
  • I use cream of chicken soup for the sauce because my husband does not like mushrooms.

7 tablespoons butter, divided
1-1/2 cups cubed day-old bread
3 large onions, quartered and thinly sliced
1-1/2 cups water
4-1/2 teaspoons chicken bouillon granules
1/4 cup all-purpose flour
1-3/4 cups milk, divided
1-1/2 cups shredded Swiss cheese, divided
Pepper to taste
Fresh minced chives or parsley

Steps:

  • Melt 3 tablespoons of butter; toss with bread cubes. Place on a lightly greased baking sheet. Bake at 350° for 7 minutes; turn and bake 7 minutes longer or until toasted. , Meanwhile, in a large saucepan, saute onions in remaining butter until lightly browned, about 12 minutes. Stir in water and bouillon; bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Combine flour and 1/2 cup milk until smooth; gradually stir into onion mixture. Stir in remaining milk. 1 package (12 ounces) frozen fully cooked Italian meatballs
2 large sweet onions, sliced
2 garlic cloves, minced

5 cups beef broth
1 bottle (12 ounces) pale ale or additional beef broth
18 slices French bread baguette (1/4 inch thick)
12 slices Muenster or cheddar cheese

Steps:

  • In a 4-qt. slow cooker, combine the first 9 ingredients. Cook, covered, on low until onions are tender, 8-10 hours., Ladle soup into 6 broiler-safe 16-oz. ramekins. SWEDISH MEATBALL SAUCE

I was looking for a swedish meatball recipe and couldn't find one that I liked, so I made my own. [I highly recommend using Kittencal's Italian Meatball recipe (#69173) for the meatballs preparing without the oregano and adding to this sauce. Use the baking method and remove from oven 10 minutes before done.] But you can always use your own meatballs, frozen or homemade. This isn't the traditional sauce, but if you like a rich, creamy, mushroomy sauce over egg noodles, please give this a try!! Even though it has cream of mushroom soup in it, the extra ingredients make it taste like homemade and less like it came from a can. My family loved it! Hope yours does too!

1 (10 1/2 ounce) can cream of mushroom soup
1 cup heavy cream
3/4 cup French onion dip
1 (4 ounce) can sliced mushrooms
1 teaspoon beef bouillon granules
1 teaspoon dried parsley
any drippings from meatballs or 2 tablespoons butter

Steps:

  • Take the drippings from your meatballs that you baked in the oven, or if you did not bake any meatballs, melt two tbsps of butter in a large sautee pan. Warm the drippings or butter over medium heat until drippings start boiling or butter melts.
  • Add cream of mushroom soup, heavy cream, sliced mushrooms, parsley and beef buillon granules. Bring to a boil over medium heat. Add french onion dip and mix well. Let mixture warm through over med to med low heat .
  • Add cooked meatballs and cook for another 10 minutes or so to warm up meatballs. If adding frozen, follow package directions to prepare meatballs and warm up in sauce until warmed through.
  • Enjoy over buttered noodles!
