GRILLED ITALIAN SAUSAGE, PEPPER AND ONION QUESADILLA WITH SWEET 100 TOMATO RELISH

- Preheat grill to high. Grill the sausages until golden brown on all sides and cooked through, about 10 to 12 minutes. Remove, let rest for 5 minutes and slice into 1/4-inch thick slices. Lay 8 of the tortillas on a work surface. Divide the cheeses, sausage, onion peppers, garlic and parsley among them. Stack to make 4 and top with the remaining 4 tortillas. Brush the tops with the olive oil and grill for 2 to 3 minutes until golden brown. Brush with more oil, turn over and continue grilling until golden brown and the cheese melts. Remove the quesadilla, quarter and top with the relish.
- Combine all ingredients in a medium bowl and season with salt and pepper to taste.
QUESADILLAS WITH SAUSAGE AND PEPPERS

- Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon and stirring occasionally, until browned and mostly cooked through, about 5 minutes.
- Add the bell peppers, onion, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes. Add 1/3 cup each marinara sauce and water and cook, stirring, until the vegetables are lightly coated and the skillet is mostly dry, 3 to 5 minutes. Transfer to a medium bowl and carefully wipe out the skillet.
- Lay the tortillas on a work surface. Top one side of each tortilla with 1/4 cup mozzarella, 1/2 tablespoon Parmesan, one-quarter of the sausage-and-peppers mixture and another 1/4 cup mozzarella and 1/2 tablespoon Parmesan. Fold the tortillas over the filling and gently press.
- Brush the tortillas with the remaining 1 tablespoon olive oil. Working in two batches, cook the quesadillas in the reserved skillet over medium heat until browned, about 2 minutes per side.
- Warm the remaining 1 cup marinara sauce in a small saucepan or the microwave. Cut the quesadillas into wedges. Serve with the sauce for dipping.
WAFFLED CHORIZO-CHEESE QUESADILLA
With super-crisp edges, these quesadillas also borrow some of nachos' best features. Quick-pickled onions add a tart kick to the rich chorizo and gooey melted Cheddar.

- Combine the lime juice, onions and salt in a small nonreactive bowl, tossing occasionally. Let sit at room temperature until the onions are pink, about 15 minutes.
- Heat the oil in a medium nonstick skillet over medium-high heat. Add the chorizo and cook, breaking up with a wooden spoon, until browned, about 3 minutes.
- Preheat a waffle iron to medium-high. Brush one side of 2 tortillas with oil and lay dry-side up on a work surface. Scatter each with 1/3 cup cheese, then the pickled onions. Sandwich with the remaining tortillas and brush the tops with oil.
- Place 1 quesadilla in the waffle iron, close gently (don't push down) and cook until golden brown and the cheese is melted, 4 to 6 minutes. Repeat with the remaining quesadilla. Cut the quesadillas into wedges and top with the chorizo. Serve with salsa, sour cream and avocado.

SAUSAGES WITH STICKY ONION GRAVY

- Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
- For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

SAUSAGE CHEESE QUESADILLAS (OAMC)
THE BEST quesadillas!!! These are very popular with my family and we have them for breakfast, lunch, dinner or snack. The recipe is easily doubled or tripled for the freezer and microwaved later. The melting cheese....yum, yum!

- Fry sausage until browned and crumble into small pieces.
- Melted butter on a griddle or skillet. Place tortillas on top of melted butter on low heat.
- Place crumbled sausage by teaspoonfuls on one-half of tortillas. Sprinkle cheese on top of sausage. Fold tortilla in half.
- Press with fork to allow heat to melt cheese inside and cook approximately 3 minutes for on each side until light brown. Lift to a serving dish.
- Serve with sour cream and salsa while hot. For OAMC: When cool, place in ziploc bags and place in freezer. Remove later and microwave.

- Set a skillet on stove top over medium-high heat. Add 1 tbsp olive oil and let heat. Meanwhile, dice half an onion. After 2-3 minutes, lower heat to medium and add garlic. Brown for approx. 20 seconds, then add diced onion and stir. Cover and let saute for about 1-2 minutes.
- Slice each sausage lengthwise and remove the casing from each. Add to pan with the onions. Using tongs or a wooden utensil, break up sausage into small crumbles. Turn up heat to medium-high.
- Occasionally stir sausage and onions to ensure the pieces on the bottom of the skillet do not burn. Return heat to medium after a few minutes. Cook until sausage is fully cooked and brown throughout (no pink remains). The total cooking process for me took about 7-8 minutes. Once done, remove sausage/onion/garlic mixture from pan and drain off the grease.
- Heat a skillet over medium heat and spray with cooking spray. Take two tortillas, and on each, sprinkle 1/4 cup + 2 tbsp mozzarella cheese, half of the sausage/onion/garlic mixture, 1/4 cup roasted red pepper slices, 2 tbsp chopped basil leaves, and another 1/4 cup + 2 tbsp mozzarella cheese. Top each with another tortilla.
