BOLOGNESE SAUCE



Bolognese Sauce image

A classic Bolognese Sauce should be in every home cook's repertoire! My version is smooth, rich, hearty and slow cooked to perfection. The very essence of Italian comfort food!

1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion (finely chopped)
2 large carrots (finely chopped)
2 celery stalks (finely chopped)
3 cloves garlic (chopped)
4 ounces pancetta (diced)
1 pound ground beef ((20% fat))
1 pound ground pork
Salt and freshly ground pepper (to taste)
1 cup dry white wine
1 (28 ounces) can peeled San Marzano tomatoes ( hand crushed)
1 cup whole milk
½ teaspoon freshly grated nutmeg
1 cup heavy cream (optional (see notes))
1 cup grated parmesan cheese (Parmigiano Reggiano is the best!)
½ cup chopped parsley

Steps:

  • Heat olive oil and butter in a large Dutch oven, over medium high heat, until the butter is melted. Add onion, carrots, and celery, and sauté until softened and beginning to caramelize, 5 to 8 minutes. Add garlic and sauté for another couple of minutes, until fragrant. Season with salt and pepper and, using a slotted spoon, remove the soffritto to a plate and reserve.
  • Add more olive oil, if needed, and add the pancetta. Cook until golden brown, about 5 minutes. Remove pancetta and reserve. Working in 2-3 batches so not to over crowd the pot, add ground beef and pork. Season with salt and pepper and cook, breaking lumps with a wooden spoon but resisting the urge to stir too often, until browned, about 10 - 15 minutes. We want the meat to caramelize and the brown bits to stick to the bottom of the pot, as that's where all the flavor is! (See notes.)
  • Return the reserved soffritto and pancetta to the pot. Add the white wine and deglaze the pan, scraping all the browned bits stuck to the bottom. Cook until the wine is mostly evaporated, about 2 to 3 minutes. Stir in the crushed tomatoes, milk, nutmeg and a pinch of salt and pepper. Bring to a boil and then lower the heat to a simmer.
  • Cover and cook, stirring occasionally, for 3 to 4 hours or until the liquids have reduced and the sauce is thick. If, by then, the sauce is still too liquid-y, you can turn the heat up and boil - stirring frequently - until it reduces.Some of the fat will separate and float to the top, making it easier to skim it off with a spoon. Discard.
  • Stir in heavy cream, parmesan cheese and parsley. Stir vigorously to emulsify. Taste for seasoning and adjust salt and pepper, if necessary.
  • Serve, tossed with a wide pasta, like tagliatelle or pappardelle.

1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped

One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano

Steps:

  • In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

PASTA WITH MEAT SAUCE

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

HEARTY MEAT SAUCE



Hearty Meat Sauce image

Season beef with dried herbs, and simmer it low and slow with tomatoes until the flavors meld to perfection.

2 tablespoons extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes
1 small onion, chopped
1 carrot, finely chopped
3 cloves garlic, minced
2 tablespoons tomato paste
Two 28-ounce cans whole peeled tomatoes, coarsely crushed
1 1/2 teaspoons sugar
Kosher salt and freshly ground black pepper
8 ounces ground beef
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 cup freshly grated Parmesan, plus more for serving
[For Serving:] Hot cooked pasta

Steps:

  • Heat the oil in a medium Dutch oven or pot over medium heat. Add the red pepper flakes and stir for 15 seconds. Add the onion and carrot and cook, stirring occasionally, until the onion is golden brown, 10 to 15 minutes. Stir in the garlic and cook until soft, about 1 minute. Stir in the tomato paste and cook until brick red, about 1 minute. Add the crushed tomatoes with their juices, the sugar, 1 teaspoon of salt and a few grinds of pepper. Bring to a simmer. Partially cover the pot and continue to simmer the sauce for 15 minutes, adjusting the heat as needed to maintain a simmer.
  • Meanwhile, heat a large nonstick skillet over medium-high heat. Add the beef, oregano, rosemary and thyme. Sprinkle with salt and pepper. Cook the meat, breaking up with a wooden spoon, until it browns, about 5 minutes. Stir the meat into the sauce and continue to simmer, partially covered, stirring occasionally, until thickened and the flavors have blended, about 1 hour. Add a splash of water if the sauce becomes too thick. Stir the Parmesan into the sauce and adjust the seasoning with additional salt and pepper. Serve over hot pasta with extra cheese for topping.

This is a recipe that you can throw together in 10 minutes and then go and do whatever you want for 1 hour. It is not the thickest sauce, but it is delicious.

2 teaspoons olive oil
1 medium yellow onion (diced (about 1 heaping cup))
4 cloves garlic (minced)
2 pounds ground beef chuck (sirloin or round (your choice))
2 teaspoons italian seasoning
1/4 teaspoon basil
2 (15 ounce) can tomato sauce
1 (8 ounce) can tomato sauce
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Steps:

  • In a deep sided 12-inch skillet, heat 2 teaspoons olive oil over medium-low heat.
  • Add in the onion and a pinch of kosher salt. Cook until soft and translucent, about 8 minutes.
  • Then stir in the garlic and cook 1 to 2 minutes before adding in the ground beef.
  • Increase the heat to medium and use a wooden spoon to break up the beef and cook until browned. Use a spoon to remove the fat from the pan and discard.
  • Season the ground beef mixture with Italian seasoning and basil. Pour in the sauce and stir in the salt, pepper and sugar.
  • Simmer for 20 minutes on low heat before serving.

4 ounces guanciale, pancetta or uncured bacon
Black pepper
4 cloves garlic, thinly sliced
2 onions, chopped
1 large fresh bay leaf
1 cup dry white
4 cups Beef and Tomato Base, recipe follows
Salt
1 pound bucatini
2 tablespoons butter
1 cup Parmigiano-Reggiano or pecorino, plus more for serving
2 to 3 tablespoons canola oil
3 pounds ground beef sirloin, at room temperature
Salt and coarse black pepper
Salt and coarse black pepper
1/2 cup tomato paste
4 cups beef stock

Steps:

  • Heat the EVOO in a large skillet over medium to medium-high heat. Add the guanciale, and cook to render the fat, 2 to 3 minutes. Season with black pepper, and then add the garlic, onions and bay leaf and cook until the onions are soft and sweet but not brown. Add the wine and reduce by half, then add the Beef and Tomato Base. Cool and store for a make-ahead meal.
  • When ready to serve, reheat over medium heat and remove the bay leaf before serving.
  • Bring a large pot of salted water to a boil for the bucatini, and cook the pasta to al dente. Reserve a cup of the starchy cooking liquids. Drain the pasta, and return it to the pot with the butter and half of the reheated sauce. Toss with the cheese to combine, and serve in shallow bowls. Top with additional sauce and cheese.
  • Heat the oil in a large pan over medium-high heat. When the oil is very hot, pat the meat dry with paper towels and add half of the beef to the pan. Crumble the beef with a potato masher or wooden utensil. Cook to develop a deep brown color, season with salt and pepper, and then remove to a plate. Repeat the process with the remaining beef. Add the tomato paste to the pan and stir until fragrant. Then add the stock and the browned beef. Stir to combine, then reduce the heat to a simmer.

3 pounds ground beef (I used ground round)
2 pounds sausage
3 tablespoons olive oil
2 large yellow onions, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine or stock (your choice)
Two 28-ounce cans crushed tomatoes
One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

1 teaspoon white sugar
½ teaspoon paprika

1 slice dark rye bread, torn into pieces

Steps:

  • Melt the butter in a large skillet over medium heat. Add onions, cook and stir until lightly browned. Sprinkle in the sugar, and continue cooking until onions are deep golden brown, about 10 minutes. Stir in the chicken broth and vinegar and season with paprika. Mix in the bread until dissolved. Bring to a boil, then simmer over low heat for 3 minutes.
  • Transfer the mixture to a blender or food processor, and blend until smooth. Serve with pork or beef.
