2 medium Yukon Gold potatoes (3/4 lb), peeled, cut into 1/4-inch slices
1/2 lb bacon, cut into 1/2-inch pieces
1 1/2 cups chopped sweet onions
1 can (8 oz) refrigerated seamless dough sheet
4 oz Gruyère cheese, shredded (1 cup)
1/4 cup sliced green onions (4 medium)
1 egg
1/4 cup whipping cream
1/2 teaspoon pepper

Steps:

  • Heat oven to 375°F. Line 15x10-inch pan with cooking parchment paper. In medium saucepan, place potatoes and enough water to cover. Heat to boiling. Boil uncovered 5 to 8 minutes or just until tender; drain well.
  • Meanwhile, in 10-inch nonstick skillet, cook bacon over medium-high heat 6 to 8 minutes, stirring frequently, until crisp. Drain on paper towels. Reserve 1 to 2 tablespoons drippings in skillet. Add sweet onions; cook over medium heat about 8 minutes, stirring occasionally, until tender and lightly browned.
  • Remove dough sheet from can; unroll in pan. Gently stretch or roll dough to 14x8-inch rectangle. Leaving 2-inch border around edges, layer potatoes, sweet onions, bacon, 1/2 cup of the cheese and the green onions on dough. Fold up sides of dough to partially enclose filling, pleating as necessary and pressing to seal.
  • In small bowl, beat egg, whipping cream and pepper with whisk until blended. Slowly pour over filling. Sprinkle with remaining 1/2 cup cheese.
  • Bake 20 to 25 minutes or until crust is golden brown.

  • Heat oven to 400 degrees F (205 degrees C). Grease a 10-inch glass pie plate.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Pat dry on paper towels and crumble the bacon. Sprinkle bacon, cheese, and onion in the pie plate.

1 pie crust, 9 inch (23 cm)
3 cups onion, sliced
2 cups pumpkin, or butternut squash
½ lb bacon
¼ teaspoon ground sage
oil, for frying
2 eggs
½ cup sour cream
¼ cup milk
salt, to taste
pepper, to taste
1 egg, for egg wash

Steps:

  • Preheat oven to 325˚F (170˚C).
  • Saute bacon in a medium-sized frying pan. Add squash and onion, until the onions are translucent and the squash golden brown. Season with sage, salt, and pepper. Set aside to cool.
  • Roll out pie crust into an even thin layer. With a 6-inch (15 cm) diameter bowl, cut out 6 circles. Fill a 6-cup cupcake tin with the cutouts.
  • Mix eggs, sour cream, and milk. Season with salt and pepper.
  • Add the onion-pumpkin-bacon mixture into the cups.
  • Carefully pour egg mixture into every cup. Decorate pies with leftover pie crust, if desired.
  • Cover edges and decoration with egg wash.

1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bacon into a skillet, and cook over medium heat until browned. Remove bacon from skillet, reserving 4 tablespoons bacon fat, and drain on paper towels.
  • Place the onions into the same skillet with the bacon fat, and cook over medium-high heat until evenly browned, about 8 minutes. Season with salt and pepper. Combine the milk and cream in a bowl. Sprinkle the flour over the onions, and stir to blend. Stir in the milk mixture. Cook and stir over medium heat until the mixture thickens. 1 cup unbleached all purpose flour
1/4 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
2 tablespoons chilled solid vegetable shortening, cut into 1/2-inch cubes
2 tablespoons (or more) ice water
Filling
3 thick-cut bacon slices, chopped
1 large onion, thinly sliced
Pinch of sugar
1 cup whipping cream
1 large egg
1 large egg yolk
1/4 teaspoon ground black pepper
Generous pinch of salt
Generous pinch of ground nutmeg
1/2 cup (packed) coarsely grated Gruyère cheese

Steps:

  • For crust:
  • Blend flour and salt in processor. Add butter and shortening; using on/off turns, cut in until mixture resembles coarse meal. Add 2 tablespoons ice water and process until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill at least 1 hour.
  • Preheat oven to 400°F. Roll out dough on lightly floured work surface to 11-inch round. Transfer to 9-inch tart pan with removable bottom. Press dough onto bottom and up sides of pan. Pierce crust all over with fork. Freeze 10 minutes. Line crust with foil; fill with dried beans or pie weights. Bake crust 10 minutes. Remove foil and beans. Bake until crust is set and partially cooked through, about 15 minutes longer. Cool crust while making filling. Maintain oven temperature.
  • For filling:
  • Sauté bacon in medium skillet over medium heat until crisp, about 4 minutes. Transfer bacon to paper towels to drain. Add onion and pinch of sugar to drippings in skillet and sauté until onion is deep golden brown, about 20 minutes. Whisk cream, egg, egg yolk, pepper, salt, and nutmeg in small bowl to blend. Spread onion over bottom of baked crust; sprinkle bacon over, then cheese. Pour cream mixture over.
  • Bake until tart is puffed and filling is set, about 25 minutes. Cool tart on rack 10 minutes. Remove pan sides. Serve warm or at room temperature.

1 Tbsp butter
3 large eggs
2 c half-and-half cream
4 slice bacon, cooked and crumbled
1/2 c cheddar cheese,shredded (sometimes i use 1 cup of cheese)

pastry for double crust pie, 9 inches

Steps:

  • 1. In a skillet, saute onions in butter until golden brown. In a bowl, beat eggs and cream. Add the onions, salt and pepper. Line a deep dish pie plate with bottom pastry. Add egg mixture; sprinkle with bacon and cheese. Roll out remaining pastry to fit top of pie;place over filling. Seal and flute the egdes; cut slits in top. 1/4 cup Unsalted butter
6 Cooking onions (sliced)
1 tsp Kosher salt
1 tsp Black pepper
3/4 cup Beer (Pale Ale or IPA)
1 lb Gruyere cheese (grated)
0.5 lb Cheddar cheese (grated)
2 Eggs
5 tbsp Sour cream
1 tsp Worcestershire sauce
1 tbsp Dijon mustard
3 cups All purpose flour
1 tbsp Dried mustard powder
3/4 tsp Kosher salt
1 cup Unsalted butter
1/3 cup Milk
1 Egg (beaten with 1 tablespoon of milk)

Steps:

  • Melt butter in a large saucepan over low heat. Add sliced onion, salt, and pepper and stir to coat. Cook for 5 minutes, stirring frequently.
  • Pour in the beer, stir well, and raise the heat to medium and cook, stirring until the onions are soft, around 8 minutes. Set aside to cool or cover and chill in the refrigerator.
  • In a mixing bowl, stir together the cooled onions, cheeses, eggs, sour cream, Worcestershire sauce and mustard until combined. Set aside filling to make pastry dough.
  • Preheat oven to 375 F. Line a springform pan or casserole dish with parchment paper and set aside.
  • In a large bowl, whisk together the flour, mustard powder, and kosher salt. Make a well in the centre of the flour and set aside.
  • Place a large saucepan over medium heat. Gently bring the milk and butter to a gentle simmer. Pour the hot liquid into the flour well. Use a rubber spatula to mix together until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead until smooth, about 2-3 minutes.
  • Divide dough in two. While the dough is still hot, roll each piece between two pieces of parchment paper or plastic wrap to the size of the base of your pan. Place one of the rounds of dough into the prepared pan. Starting at the centre of the dough press outward, gently working the dough outward and up the sides of the pan.
  • Scrape the filling into the crust and position the second crust over the filling, trimming the excess away and pinching the seams where the bottom and top crusts meet together.
  • Brush the top crust with the egg wash and use a sharp knife to cut three vent holes. Place your pie crust on a cookie sheet and bake for 60 to 70 minutes. The Onion and Cheese Pie is done baking once the exterior is a glossy brown and filling bubbles.
  • Allow the pie to cool until warm or room temperature before slicing. Garnish with chopped parsley and serve with a fresh salad.

2 1/4 lbs potatoes, peeled and cubed
1 tablespoon vegetable oil
9 ounces bacon, cut into strips
2 ounces butter
4 onions, finely sliced
1 pinch sugar
5 ounces cheddar cheese, grated
2 tomatoes, sliced
salt & freshly ground black pepper

Steps:

  • Bring a pan of salted water to the boil and cook the potatoes until soft. Drain and mash.
  • While the potatoes are cooking, heat and cook the bacon in half the butter and the oil in a frying pan until just beginning to brown and crisp. Remove from the pan with a slotted spoon.
  • Add the onions to the pan. Add seasoning and the sugar. Fry gently until the onions are soft and caramelized. Take care not to allow them to burn.
  • Return the bacon to the pan and stir evenly through the onions. Add a little broth or water to de-glaze the pan and then tip the mixture into a heatproof dish.
  • Add the remaining butter and 4oz of the cheese to the potato. Season and mix well. Preheat the broiler to high.

1 1/2 cups flour
1/4 teaspoon salt
1/2 cup chilled butter, cut into pieces (4 ounces)
3 tablespoons sour cream
1 -2 tablespoon water
3 slices bacon
1 lb vidalia onion, thinly sliced
3 eggs
1/2 cup milk
1/2 cup sour cream
1 tablespoon flour
1/4 teaspoon nutmeg

Steps:

  • MAKE THE PASTRY: In a large bowl, combine the flour and salt. With a pastry blender or two knives, cut the butter in until the mixture resembles coarse meal. Blend in the sour cream. Sprinkle on 1 tablespoon of the water and work it into the dough, adding up to 1 more tablespoon of water to form a dough that can be gathered into a ball. Pat the dough into a disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • On a lightly floured surface, roll the dough into a 12-inch circle, then fit it into a 9-inch pie pan. Trim the overhang to an even 1/2-inch all the way around. fold the overhang over and crimp the dough to form a decorative border. Prick the bottom of the crust lightly with a fork.   • Preheat the oven to 400 degrees. Line the pie shell with foil and fill with dried beans or pie weights. Bake for 8 minutes.   • Meanwhile, in a medium bowl, whisk together the eggs, milk, sour cream, flour, nutmeg, and pepper.
  • Spread the onions evenly over the bottom of the pie shell. Sprinkle the reserved bacon and the cheese evenly on top. Pour the custard mixture into the pie shell and bake for 20 minutes, or until the custard has set and the top is golden brown.

1 generous knob of butter chopped
1 heaped tbsp of flour
1 pint of milk
110g of mushrooms finely chopped
1 medium onion or 5 shallots finely chopped
salt and pepper
herbs
a few splashes ofworcestershire sauce (optional)
1 egg beaten
3 chicken breasts chopped into bite size pieces
16 rashers of bacon or good quality ham chopped
100g of frozen petits pois

Steps:

  • cook the chicken and bacon in a wok. to make the sauce melt the butter in a saucepan and soften the mushrooms and onion stir in the flour cook for two minutes then gradually pour in the milk stiring constantly bring to the boil then add the cheese worcestershire sauce and season with the herbs and salt and pepper
  • mix the chicken and bacon into the sauce then add the peas
  • roll out the pastry if needs be then cut out the shape for the pie lid. tip the sauce into a pie dish then top with the lid, make some holes in the top to let steam escape use a pastry brush to glaze the pie with the egg cook the pie for 10-20 minutes on 170c/fan 150c/gas or until lightly brown on top serve with veg and enjoy

1kg floury potatoes (eg, Maris Piper), peeled and cut into chunks
2tbsp olive oil
1 onion, peeled and finely chopped
About 500g leeks, trimmed and finely sliced
75-80g diced pancetta
30g butter
250ml milk, single cream or crème fraiche
1 medium egg, beaten
Large handful of curly or flat-leaf parsley leaves, chopped
½-1tsp smoked paprika
100g Gruyère or Cheddar cheese

Steps:

  • Put the potato chunks in a pan, cover with cold water and add salt. Bring to the boil and simmer for about 20 minutes until tender.
  • Meanwhile, warm the oil in a large frying pan, add the onion and leeks and fry, covered, over a low heat for 8 minutes until softened. Add the pancetta and fry for 2-3 minutes.
  • Set the oven to 190°C/374°F/Gas Mark 5. Drain the potatoes well, put back in the pan to dry off over a low heat. Add the butter and milk, cream or crème fraiche. When it starts to bubble, take off the heat and mash the potatoes roughly. Add the egg, season well and mix in.
  • Stir in the onion and leek mixture, parsley, paprika and half the cheese. Spoon into the dish. Sprinkle the rest of the cheese over. Bake for 35-45 minutes until well-browned.

Bake the tart in the center of the oven until golden brown and the center is just set, about 25 minutes. Cool on a rack for 15 minutes, then carefully remove the tart ring and serve warm.
