Steps:
- In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
- Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Preheat a 12-inch oven-safe skillet over medium-high heat, rotating occasionally, until hot, 5 to 8 minutes. Add ground beef and onion; cook and stir until meat is browned and onion is soft, 5 to 7 minutes. Drain grease.
- Reduce heat to medium and add kidney beans, black beans, tomato sauce, water, chili powder, brown sugar, cumin, cocoa powder, salt, oregano, garlic powder, onion powder, cayenne pepper, black pepper, and paprika. Bring to a simmer and cook until heated through, about 5 minutes.
- While the chili is heating, whisk flour, cornmeal, sugar, baking powder, and salt for together in a small bowl. Mix in milk, egg, butter, and vanilla extract. Dollop cornbread mixture over top of chili.
- Bake in the preheated oven until cornbread is crisp and golden brown, about 20 minutes.

- Microwave method: Combine all ingredients in microwave-safe 2 quart casserole. Cover, microwave on high 5 minutes. Stir to break up meat. Microwave additional 20 minutes, stirring every 10 minutes. Note: If beef is less lean. Microwave first and drain off excess fat.
- Stovetop method: Brown beef with green peppers, onions, and spices. Drain excess fat. Add beans, tomatoes, and tomato paste and simmer until peppers and onions are tender, or longer. Use water or (salt free) beef broth if additional liquid is needed.
- Vegetarian variation: Swap 1 lb. frozen vegetable mix (such as California blend) for the ground beef. Sauté peppers and onion in 1 tablespoons vegetable oil along with the spices. When onions are clear, add vegetables along with tomatoes and tomato paste. Use vegetable broth or water if additional liquid is needed.

- In a large Dutch oven or soup kettle, brown ground beef and pork; drain well. Add water, tomato sauce, salt and pepper. Cover and simmer for 1-1/2 to 2 hours, adding more water if necessary. Stir in dried onion, chili powder, cumin, cayenne pepper, garlic, paprika and oregano. Simmer another 30 minutes. Combine cornmeal, flour and enough water to make a thin paste. Stir in chili. Simmer 10-15 minutes longer until slightly thickened. Thin with additional water if desired.

Steps:
- Brown beef in shortening.
- Add beef broth and tomato sauce.
- Combine the remaining ingredients.
- Add to the beef mixture; bring to a boil.
- Reduce heat, cover and simmer for 1 hour.
- Combine spices and add to chili.
- Cover and simmer for 45 minutes.
- Add more water if necessary if the chili gets too thick.
- Combine ingredients and add to chili. (True Texas chili does not contain beans, but if you really want to you can add a can of chili beans here.)
- Cover and simmer for 30 minutes.

- In a 6-qt. stockpot, cook beef and onion over medium-high heat until beef is no longer pink and onion is tender, 8-10 minutes, breaking beef into crumbles; drain., Stir in tomato juice, water, Worcestershire sauce and seasonings; bring to a boil. Add spaghetti. Reduce heat; simmer, covered, until pasta is tender, 9-11 minutes. Stir in beans; heat through. Top servings with sour cream and cheese. ONE POINT HEARTY CHILI
A delicious Chili recipe that my DDIL shared with me. She got the recipe from a friend. This is a very easy to make chili using turkey, veggies, black beans & a packet of dry chili seasoning-I used McCormick-mild. Note: We like our chili more like soup, the recipe she gave me said to leave lid off, to let it cook down.This makes 20 one cup servings.

Steps:
- Spray a large nonstick skillet with nonstick spray and set over medium-heat; add turkey and onions, saute until browned, about 5 minutes.
- Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, yellow squash, beans, broth, celery, bell peppers, and chili seasoning.
- Bring to a simmer over medium heat; continue to simmer until the vegetables are tender, about 30 minutes.
