HAWAIIAN CHICKEN BOWL

1 tablespoons olive oil, plus extra for the grill pan
3/4 cup teriyaki sauce
2 tablespoons sweet chile sauce
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 pineapple, peeled, cored and cut into rings
12 mini sweet peppers, left whole
2 cups cooked jasmine rice, warm
2 avocados, diced
1/2 cup fresh cilantro leaves
1 tablespoon toasted sesame seeds
2 limes, sliced

Steps:

  • Preheat an oiled grill pan over medium heat.
  • Mix the teriyaki and sweet chile sauce in a bowl and set aside.
  • Brush the chicken with 1 tablespoon olive oil and lightly sprinkle with salt and pepper. Place the chicken on the grill. Brush the tops with the teriyaki-chile mixture and cook for 4 to 5 minutes, then flip. Brush the tops with the rest of the sauce and cook until cooked through, 4 minutes more. Just before they are done, flip them over again for a final minute to caramelize. Remove the chicken to a plate.
  • Oil the grill pan again if necessary, then add the pineapple and peppers. Cook until nice grill marks have formed, about 2 minutes per side. Remove.
  • Add the rice to the bottoms of 4 bowls. Slice the chicken and fan along the edge of each bowl. Fill the open space with the grilled peppers, pineapple and diced avocado. Garnish with the cilantro, sesame seeds and a slice of lime.

This Hawaiian Chicken is a quick and easy stir fry recipe made with chicken, red bell pepper, pineapple and delicious sweet and sour sauce! The best part it takes only 30 minutes to make the whole dinner.

2 teaspoons olive oil
1 pound boneless skinless chicken breast (cut into 1-inch pieces)
salt, pepper to taste
1 red bell pepper (diced)
15 oz pineapple chunks (juice and fruit separated)
1/3 cup chicken broth
1/4 cup soy sauce
2 tablespoons light brown sugar
1 clove garlic (minced)
1 teaspoon ginger (grated)
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
sesame seeds (for topping)
green onion (for topping)

Steps:

  • In a mixing bowl, add pineapple juice from the can (about 1 cup), 1/3 cup chicken broth, ¼ cup soy sauce, 2 tbsp brown sugar, 1 clove minced garlic, and 1 teaspoon grated ginger. If you like your food a bit spicy, you can add ¼ tsp red pepper flakes. Mix it together and set aside.
  • Preheat a large skillet over medium heat and add 2 teaspoons olive oil.
  • Add 1 pound chicken breasts cut into 1-inch pieces and season them with salt and pepper. Sear it for about 8 minutes, stirring occasionally, until the chicken is almost cooked through.
  • Add diced red bell pepper and cook for 2-3 minutes until it's softened.
  • Add pineapple chunks and cook for another 3-4 minutes.
  • Add the sauce mixture to the pan, stir everything and let it simmer for about 5 minutes.
  • Mix 1 tbsp cornstarch with 2 tbsp water. Add the slurry gradually to the pan, until the sauce thickens to the desired consistency. Cook for a couple of more minutes.
  • Sprinkle with sesame seeds and chopped green onion before serving.

One 20-ounce can pineapple slices in unsweetened juice
2 tablespoons lemon juice
1 tablespoon vegetable oil
2 teaspoons dried oregano leaves, crushed
1 teaspoon garlic powder
5 boneless chicken breast halves

Steps:

  • Combine undrained pineapple, lemon juice, oil, oregano and garlic powder in large, shallow, non-metallic dish. Add chicken, turning to coat all sides. Cover and marinate 15 minutes in refrigerator.
  • Grill or broil chicken and pineapple, brushing occasionally with reserved marinade, 10 to 15 minutes on each side or until chicken is no longer pink in center and pineapple is golden brown. Discard any remaining marinade. Serve the chicken with the pineapple.

1 1/4 lbs chicken tenderloins
2 tablespoons soy sauce
2 medium carrots, sliced
1 (8 ounce) can sliced water chestnuts
1 (8 ounce) can pineapple chunks
1/2 cup sweet and sour sauce
2 teaspoons cornstarch
1/2 teaspoon ginger
1 (9 ounce) package frozen oriental-style vegetables

Steps:

  • Combine chicken and soy sauce in slow cooker and mix to coat. Stir in carrots, water chestnuts, and juice only from pineapples.
  • Cook on Low setting for 3 to 4 hours. Refrigerate pineapples until later.
  • Twenty minutes before serving, turn heat to High setting. Whisk together sweet and sour sauce, ginger, and cornstarch. Add to crock pot, along with pineapple and vegetables.
  • When vegetables are tender, the dish is ready to serve or hold on low. I often serve with white rice.

6 skinless, boneless chicken breast halves
2 cups teriyaki sauce, divided
6 pineapple rings
½ cup butter, melted
¾ cup packed brown sugar
¾ cup soy sauce
¾ cup unsweetened pineapple juice
6 tablespoons Worcestershire sauce

Steps:

  • Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
  • In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

1 broiler/fryer chicken (3 to 4 pounds), cut up
1/4 cup butter, melted
1 can (20 ounces) pineapple chunks
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 teaspoon salt
1/3 cup ketchup
1/4 cup cider vinegar
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
Pinch ground ginger

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish; drizzle with butter. Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine brown sugar, cornstarch and salt; stir in reserved pineapple juice until smooth. Add the ketchup, vinegar, chili powder, Worcestershire sauce, soy sauce and ginger. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over chicken., Cover and bake at 350° for 1 hour. Uncover and bake for 30 minutes. Top with reserved pineapple; bake 15 minutes longer or until chicken juices run clear and pineapple is heated through.

  • Strain the pineapple chunks from the pineapple juice and store the chunks in an air tight container until you're ready to make the dish. Measure out 1/4 cup of the pineapple juice and add it to a plastic or reusable storage bag with the rest of the marinade ingredients. Store the leftover juice for later as well.
  • Add the chicken thighs to the marinade bag, close the lid and toss well to coat. Marinate in the fridge for 1-24 hours. The longer you can marinade the better, but even 1 hour will work. This makes a great recipe to prep the night before.
  • Heat the olive oil in a deep saute pan over medium-high heat. Once the oil is shimmering, add the chicken to the hot pan and discard the remaining marinade. Sear for 3-4 minutes on one side then flip it over and cook for another 1-2minutes. The chicken should have a crispy brown skin. Transfer it to a plate. It doe not need to be cooked all the way through.
  • Measure out the reserved pineapple juice in a large liquid measuring cup, then add the canned coconut milk to reach 3 cups. If there isn't enough coconut milk, top it off with water.
