SKINNY BANANA BREAD (LOW SUGAR + LOW FAT)



Skinny Banana Bread (Low Sugar + Low Fat) image

Number Of Ingredients 10

3 ripe bananas (medium-large)
1 egg
1 Tbsp. vanilla extract
3 Tbsp. brown sugar
3 Tbsp. granulated sugar
1 1/2 C. flour (AP or whole wheat)
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 Tbsp. butter (melted)

Steps:

  • 1. Preheat oven to 350 degrees and prep a loaf pan (9x5 or 8x4) by greasing it or lining it with parchment paper.
  • 2. In a medium bowl add bananas and use a fork to mash well.
  • 3. Add egg, vanilla, brown sugar and granulated sugar. Stir well.
  • 4. In a separate bowl combine flour, baking soda, baking powder and salt.
  • 5. Add dry ingredients into the wet slowly as you stir. Before the two are incorporated add in melted butter. Stir just until barely combined, DO NOT OVER MIX.
  • 6. Pour into pan and bake for 30-45 minutes or until an inserted knife or toothpick comes out clean.
  • 7. Serve warn or cooled. As with any banana bread/cake, it always tastes better the next day! Store in an airtight container.

ALMOST NO FAT BANANA BREAD

¾ cup white sugar
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
¼ cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

4 large ripe bananas
2 large eggs
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon vegetable oil
2 ounces fat free cream cheese, cut into 4 pieces and chilled

Steps:

  • Adjust oven rack to middle position and heat oven to 325 degrees. Bake bananas on rimmed baking sheet until skins are completely black, about 20 minutes. (Do not turn off oven.) Cool bananas completely, peel, and mash with potato masher until smooth. Measure 1 1/2 cups mashed bananas and discard any excess.
  • Grease a 9 by 5-inch loaf pan. Whisk eggs and vanilla in small bowl. With electric mixer on medium-low speed, mix flour, sugar, baking powder, baking soda, and salt in large bowl until combined. Add oil and cream cheese, 1 piece at a time, and mix until only pea-sized pieces of cream cheese remain, about 1 minute. Slowly mix in egg mixture, then add mashed bananas and beat until incorporated, about 30 seconds.
  • Scrape batter into prepared pan and bake until golden brown and toothpick inserted into center comes out with a few crumbs attached, 50 to 60 minutes. Cool for 10 minutes, then turn out onto wire rack and let cool at least 1 hour. Serve. (Bread can be stored at room temperature for up to 3 days.).

1 cup white sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
2 tablespoons applesauce

Steps:

  • Mash bananas in a bowl.
  • Add all other ingredients and mix well.
  • Pour into 2 greased loaf pans (or you can pour it all into one, but it rises enough that you can split it in half).
  • Bake at 350 degrees for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.

  • Beat the egg in a mixing bowl. Whisk in the mayonnaise, bananas, and vanilla extract until evenly mixed. Stir in the flour mixture until no dry lumps remain. Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This is my version of a traditional banana bread with a twist! Its very sweet, moist and down right delicious. While its not a fat free food it is low-fat compared to its traditional counter-part. Recipe makes 2 loafs, 6 serving per loaf. Tastes good cold or hot. With or without topping. Its super easy, and great for kids to help make! Try adding nuts or dry fruits to the mix right before baking for an extra texture and flavor element. == Note: When I made this recipe I used a kitchen aid stand mixer, if you don't have one; take a plastic bag, mush your bananas and pears together then add to a bowl and whisk all the materials together. 1 3/4 cups flour

I make this each and every time we have bananas that are over-ripe. I toast slices to have along with my coffee for breakfast. I also use toasted slices to make peanut butter sandwiches for the kids' lunches. Who says if it's good for you it can't taste good too? The original recipe, which I have adapted quite a bit, came from Nick Malgieri's book "How to Bake."

1 cup flour
1 cup oat flour (you can use a food processor to finely grind rolled oats if needed)
1/2 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 cup packed brown sugar
3 egg whites
1/2 cup unsweetened applesauce
2 tablespoons vegetable oil
1 teaspoon vanilla extract
2 cups mashed ripe bananas (about 3-4 bananas)

Steps:

  • Preheat oven to 375 degrees F, set rack at middle. Grease and flour one 8 1/2 x 4 1/2 x 2 3/4 - inch loaf pan.
  • In a mixing bowl, combine both flours and oat bran, baking powder and soda, allspice and cinnamon and stir well to mix.
  • In a separate bowl, whisk together the sugar, egg whites, applesauce, oil, vanilla and bananas.
  • Fold the flour mix into the wet mixture, be careful not to overmix.
  • Scrape the batter into the prepared pan. Bake for 45-55 minutes, until well risen and a skewer into the thickest part of the bread comes out clean.
  • Cool on a rack 5 minutes, then unmold and finish cooling.
  • Freezes well.

1 cup oatmeal
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup egg substitute or 1 egg
1/2 cup non-fat vanilla yogurt
1 cup fat-free buttermilk
1 1/2 cups bananas (smashed about 3)
1 teaspoon vanilla

Steps:

  • Sift first 6 ingredients (flour through cinnamon) together in a large bowl.
  • Mix remaining ingredients in a small bowl.
  • Mix wet ingredients into dry ingredients.
  • Spray a loaf pan with cooking spray. Pour mixture into pan.
  • Bake at 350 for 40 to 45 minutes or till tests done with a cake tester or toothpick. This will rise very high. If necessary, cover the top slightly with foil if top starts to brown too fast.
  • Allow to cook in pan 10 minutes. Remove from pan and cool completely before slicing. Slices can be toasted in toaster oven or microwaved for about 20 seconds.
