Our Sausage and Potatoes Skillet recipe is an easy recipe that's packed with flavor and is a cinch to prepare. It's made with creamy, baby gold potatoes, chicken apple sausage, bell peppers, onion, and Italian seasonings.

2 Tablespoons Unsalted Butter
1.5 Pounds Baby Gold Potatoes, cut into ½-inch thick cubes
1 Tablespoon Avocado or Olive Oil
12 Ounces Sausage Links, cut into ½-inch thick pieces (We used chicken apple sausage.)
½ Cup White Onion, diced
½ Cup Green Bell Pepper, diced
½ Cup Red Bell Pepper, diced
½ Teaspoon Italian Seasoning
½ Teaspoon Garlic Powder
¼ Teaspoon Onion Powder
Salt and Pepper, to taste

Steps:

  • Heat a large skillet over medium heat. Add the butter, and allow it to melt. Once the butter melts, add the potatoes in an even layer. Allow them to brown on one side, the flip so the opposite side is able to brown. Continue to cook the potatoes until brown, crispy, and fork tender, about 12 to 15 minutes.
  • Push the potatoes to one side of the pan, and add the oil and sausage. Cook the sausage until lightly browned, about 5 to 7 minutes.
  • Stir in the onion, green bell pepper, red bell pepper, Italian seasoning, garlic powder, onion powder, salt and pepper. Cook for 3 to 5 minutes until they begin to soften.
  • Serve hot with fresh fruit. Store leftovers in the refrigerator for up to 3 days.

700g / 1.4 lb baby potatoes (, halved)
3 carrots (, peeled and cut into 2"/5cm pieces)
2 red onions (, each cut into 8 wedges)
2 garlic cloves, minced
2 tbsp olive oil
2 tsp dried thyme
1 tsp dried oregano
Salt and pepper
8 - 10 sausages (500-700g / 1-1.4lb) ((Note 2))
Oil spray ((optional))
2 tbsp / 30g melted butter, unsalted
2 1/2 tbsp flour ((plain / all purpose))
2 cups / 500 ml beef broth (or chicken) ( (Note 3))
Fresh thyme (, for garnish (optional))

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan / convection).
  • Place Vegetable ingredients in a large bowl. Toss well to coat.
  • Add sausages and toss briefly.
  • Transfer into roasting pan. Pan should be of a size so the vegetables are stacked about 2 deep - see photos and video. Rearrange sausages so they are on top.

This delicious slow cooker sausage curry is so easy to make, and perfect as an easy weeknight dinner. Curried sausages is a retro recipe, and a flavorful twist on the classic sausage stew. Serve it over mashed potatoes or rice for a tasty meal.

Number Of Ingredients 12

1 pound pork sausages
1 pound potatoes
3-4 carrots
1 cup peas ((frozen or canned))
1 1/2 cup beef broth ((or chicken stock))
1 cup coconut milk
2 tablespoons tomato paste
2 tablespoons cornstarch ((UK: cornflour))
2 onions
3 garlic cloves
2 tablespoons curry powder
1 teaspoon olive oil ((optional, for cooking))

Steps:

  • Heat up a little olive oil in a frying pan or skillet over medium heat. Add the sausages, and sautee for a few minutes until they are brown on all sides. Remove them from the pan, cut them into large pieces, and transfer to your slow cooker.
  • To the same frying pan, add diced onion and garlic. Sautee for a few minutes until the onion is soft and translucent. Add more olive oil if the onion starts sticking to the pan.
  • Add curry powder and tomato paste to your frying pan. Stir to combine, and sautee for about a minute, or until the mixture becomes more fragrant. Turn off the heat, and transfer this to the slow cooker.
  • Wash and peel the potatoes and carrots. Cut them into large bite-sized chunks.
  • Add the potatoes and carrots to the slow cooker along with the sausages and onions, and pour over your broth or stock. Stir to combine. Cover the crockpot with a lid, and cook for about 4-5 hours on high, or 6-8 on low.
  • Combine the cornstarch with a teaspoon of cold water in a small bowl to form a paste, and add this to the slow cooker. Then, add your peas and coconut milk. Stir to combine, then cover the crockpot with a lid again and allow it to cook on low for 15-30 minutes until the curry has thickened.

400g pack sausage
1 onion, finely chopped
1 garlic clove, crushed
1 red pepper, sliced
250g lentil (we used puy lentils)
150ml vegetable stock
125ml red wine or extra stock

Steps:

  • Heat oil in a pan, cook the sausages until browned, then remove. Tip in remaining oil, onion, garlic and pepper, then cook, about 5 mins more until softened. Add lentils and sausages to the pan with the stock and wine, if using.
  • Bring up to the boil, then simmer for 20 mins until lentils have softened and sausages are cooked through. Serve with plenty of crusty bread.

1 tbsp oil
1 onion, roughly chopped
1 large potato, chopped into small chunks
1 aubergine, trimmed and chopped into chunks
250g button mushrooms
2-4 tbsp curry paste (depending on how hot you like it)
150ml vegetable stock
400ml can reduced-fat coconut milk
chopped coriander, to serve

Steps:

  • Heat the oil in a large saucepan, add the onion and potato. Cover, then cook over a low heat for 5 mins until the potatoes start to soften. Throw in the aubergine and mushrooms, then cook for a few more mins.
  • Stir in the curry paste, pour over the stock and coconut milk. Bring to the boil, then simmer for 10 mins or until the potato is tender. Stir through the coriander and serve with rice or naan bread.
