1 tablespoon olive oil
1 ½ lb boneless, skinless chicken breast, cubed
salt, to taste
pepper, to taste
½ white onion, chopped
2 cloves garlic, minced
1 cup yukon gold potato, cubed
2 cups frozen pea and carrot
4 tablespoons butter
4 tablespoons all-purpose flour
2 cups chicken broth
1 frozen prepared pie crust, thawed
1 egg, beaten

Steps:

  • Heat the oil in a cast-iron skillet. Add the chicken, season with salt and pepper, and cook until the meat is golden brown on the outside and no longer pink in the center. Remove chicken from the pan and set aside.
  • Preheat the oven to 400˚F (200˚C)
  • To the same skillet, add the onion and garlic. Sauté until translucent. Add the potato cubes and sauté for about 5 minutes. Add the peas and carrots and stir. Add the butter and allow it to melt. Sprinkle the flour on top, covering the vegetables, and quickly stir to avoid lumps. Pour in the chicken broth and bring to a boil to thicken the sauce. Season with salt and pepper and remove from the heat.
  • Place the pie crust over the chicken and vegetable mixture and carefully seal along the edges of the skillet with your fingers. Brush the pastry with the egg, and cut 3 slits in the top to release steam. Bake for 25-30 minutes, or until golden brown.

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat. Add chicken; cook 6 to 8 minutes, turning once, until chicken is no longer pink in center. Using slotted spoon, transfer to bowl; cover and keep warm. Add bell pepper, green onion whites, pepper and salt to butter and drippings in pan; cook over medium-high heat 3 to 5 minutes, stirring frequently, until softened.

Steps:

  • In a dutch oven or large saucepan, saute chicken, onion, carrots, celery, and garlic in olive oil over medium-high heat until veggies are tender and chicken is no longer pink. 1 ½ cups uncooked rotini pasta (about 4.5 ounces dry)
1 cup frozen mixed vegetables (not thawed)

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish (such as an 8-inch square pan or a small rectangular dish like I used) with cooking spray and set aside.
  • In a large bowl, whisk together condensed soup, milk, chicken broth, and thyme. Stir in onion, raw chicken, and uncooked pasta.

Steps:

  • Heat the oil in large wide pot over medium-high heat. Add the chicken and Cajun seasoning and cook, stirring occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes.
  • Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes. Stir in the garlic and cook until softened, 1 minute.
  • Add the pasta, chicken broth and tomatoes and bring to a boil over medium-high heat. When it boils, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, about 15 minutes.

6 cups chicken stock
1 teaspoon thyme
16 ounce box of pasta (I used rotini)
1 1/2 cups half and half or whole milk
24 ounces mixed frozen vegetables
1/2 cup sour cream

Steps:

  • Put oil in the bottom of the dutch oven and heat over medium heat. Add the cubed chicken and season with salt and pepper. Cook, stirring occasionally until the chicken is browned. It's ok if it isn't cooked all the way through yet.
  • Add the onion and garlic powder, continue to cook and stir occasionally until the onion is translucent. It should just take a couple of minutes.
  • Stir in the chicken stock, being sure to scrape up any bits on the bottom of the pan as you add the stock. Bring to a boil.
  • Stir in the pasta and continue to boil for 7-8 minutes. When the stock is mostly absorbed, drop the heat to medium low.
  • Stir in the half and half or milk, thyme and vegetables. Simmer, stirring frequently until the vegetables and pasta are cooked through and the mixture is thickened. (if it gets too thick, add a little more stock.)
  • Just before serving, stir in the sour cream and adjust your salt and pepper to taste.

3 tablespoons olive oil, divided
1 lb boneless chicken breast, cut into cubes
coarse salt and fresh black pepper
1 teaspoon italian seasoning, divided
1 small yellow onion, diced

1 big stalk celery, diced

Steps:

  • Preheat oven to 400 degrees F. Butter a 9x13 casserole dish or baking pan.
  • In a large skillet heat 1 tablespoon oil over medium heat. Season the chicken well with salt, pepper and 1/2 teaspoon Italian seasoning. Add to skillet and cook through, stirring often. Remove to a large bowl and set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons oil, the onion, carrots, celery, garlic and 1/2 teaspoon Italian seasoning. Cook 7-8 minutes, stirring often, stir in the peas and cook 2 more minutes. Remove the mixture from the pan to the bowl with the chicken.
  • With heat on medium-low melt 3 tablespoons butter in the pan, whisk in the flour and cook 3 minutes. Slowly whisk in chicken broth then the milk. Turn heat up to medium-high and bring to a simmer for 3 more minutes, stirring often.
  • Add the chicken broth to the bowl with the chicken/vegetables and mix well, then mix in both cheeses.
  • Pour the mixture into the buttered casserole and spread out evenly.
  • Roll the pie crust out on a lightly floured surface to about 10-inches in diameter and cut circles out of it with a biscuit or cookie cutter. Arrange them over top of the pasta.
  • Bake 30 - 35 minutes until the casserole is hot in the center and the crust is golden brown, if the crust starts to darken too much cover with aluminum foil. Let set 5 minutes before serving.

1/3 cup dry white wine, ((or chicken stock/broth))
8 ounces (250 g) brown or Cremini mushrooms, (sliced)
1 quart (1 litre) chicken broth, ((or stock))
12 ounce (375 ml) can evaporated milk*
1/3 cup milk
Extra salt and pepper, (to taste)
10 ounces (300 g) uncooked penne pasta ((just over 4 cups))
1 cup fresh grated parmesan cheese
A handful of fresh parsley, (chopped)

Steps:

  • Season chicken thighs with dried basil, salt and pepper. Heat 2 teaspoons of oil in a large saucepan or pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown, cooked through and no longer pink. Remove and set aside.
  • Add the remaining oil to the pot. Fry the onion and garlic until the onion becomes transparent, stirring occasionally (about 2 minutes). Pour in the white wine and allow to simmer for 5 minutes, or until beginning to reduce down.
  • Add the mushrooms and cook for a further 3 minutes, while stirring occasionally. Then, add the broth, milks (or cream if using), salt and pepper, and bring to a gentle simmer. Add the pasta and simmer until pasta is al dente, about 15 minutes, while stirring occasionally.
  • Stir in the parmesan cheese until it melts through the sauce. Remove from heat and allow to sit for 5 minutes to allow the sauce to thicken. Slice the chicken into strips and stir through the pasta.

  • In a large saucepan over medium heat add 2 TBS olive oil.

  • Finally add 1 cup of the Sargento Chef Blend shreeded 6 Cheese Italian, stir in and let melt.
