Oh so Creamy Sweet Potato (Or Yam) image

this is the creamiest yummiest pureed sweet potato you have ever eaten. you will need a blender/beater/food processor of some sort to make it.

4 large sweet potatoes
water, for boiling
1/2 cup whipping cream
1/4 cup butter
salt and pepper

Steps:

  • peel and chop potatoes.
  • add to pot of boiling water.
  • cook the potatoes till they are over cooked and really soft -- (about 35-45min).
  • strain the potatoes.
  • return the potatoes to the pot (if using blender then add the potatoes to the blender).
  • heat cream and butter in a large mug in the microwave for 60 seconds (watch the mug to make sure it doesn't over boil.
  • pour the cream mixture over the potatoes
  • beat till smooth (10min) -- if using a blender you may need to stir the mixture half way threw.
  • add salt and pepper to taste.

I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite. -Norma Poole, Auburndale, Florida

5 pounds sweet potatoes, peeled and cooked
4 large eggs, lightly beaten
1/2 cup orange juice
1/2 cup butter, softened
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
Dash salt
1 cup miniature marshmallows

Steps:

  • In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish. , Bake at 350° until set, 35-40 minutes. Top with marshmallows; return to oven until they just begin to puff and melt, 5-10 minutes.

2 tablespoons olive oil
1 1/2 lbs sweet potatoes, cut into 1-inch chunks
1 large onion, cut into large dice
1 tablespoon butter
1 pinch sugar
4 large garlic cloves, thickly sliced
1 1/2 teaspoons ground ginger
1/2 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
3 cups chicken broth
1 1/2 cups half-and-half (or heavy cream)
salt & freshly ground black pepper, to taste

Steps:

  • Heat oil over medium-high heat in a large, deep sauté pan until shimmering.
  • Add sweet potatoes, then onion; sauté, stirring very little at first, then more frequently, until vegetables start to turn golden brown, 7 to 8 minutes.
  • Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
  • Add ginger, nutmeg and cayenne pepper; continue to sauté until fragrant, 30 seconds to 1 minute longer.
  • Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until sweet potatoes are tender, about 10 minutes.
  • Using an immersion blender or traditional blender, puree until very smooth, 30 seconds to 1 minute.
  • Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.
