Here's what you need: pad thai noodle, sesame oil, eggs, chicken breast, shallot, pad thai sauce, bean sprout, peanuts, green onion, fresh cilantro

8 oz pad thai noodle, or noodles of your choice
2 tablespoons sesame oil, divided
2 eggs
1 chicken breast, diced
¼ cup shallot
¾ cup pad thai sauce, we used 2 tablespoons each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha
1 cup bean sprout
½ cup peanuts, crushed, plus more for garnish
¼ cup green onion, plus more for garnish
¼ cup fresh cilantro, plus more for garnish

Steps:

  • Cook the noodles according to the package instructions.
  • Toss with 1 tablespoon of sesame oil and set aside.
  • Add ½ teaspoon of sesame oil to a pot with the lightly beaten eggs. When the eggs are finished cooking, set aside.
  • Pour the remaining ½ tablespoon of sesame oil into the pot and add the diced chicken breast. Cook until no longer pink in the middle, then set aside.
  • Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back into the pot.
  • Pour in the pad Thai sauce and toss to coat.
  • Top with the bean sprouts, crushed peanuts, green onions, and cilantro, and stir until well blended.
  • Dish up and garnish with extra peanuts, green onions, and cilantro.
  • Enjoy!

12 ounces rice noodles, uncooked
2 cups cooked chicken, shredded or thinly sliced
1 cup carrots, grated
1 yellow or green bell pepper, thinly sliced
1/2 cup green onions, finely chopped
3 cloves garlic, minced
3 tablespoons soy sauce
2 tablespoons honey
2/3 cup creamy peanut butter
1 tablespoon chili sauce
1/2 lime, juiced
32 ounces chicken stock
1 1/2 cups water
1 tablespoon olive oil
1 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes

Steps:

  • Heat water and chicken stock in a large stockpot and bring to a boil. Reduce heat to medium and add in peanut butter, soy sauce, honey, chili sauce, oil, garlic, red pepper and ginger, and stir until everything is evenly combined. Rinse rice noodles under water, then break them in half and submerge completely in boiling stock. Add carrots, green or yellow pepper and half of green onions to the pot, and reduce the heat to medium-low. Cook for 12-15 minutes or until everything is tender and the sauce has thickened. Remove pot from heat and stir in chicken and lime juice. Garnish with remaining green onions and serve hot.

5 ounces flat rice stick noodles (linguini size)
3 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons tamarind paste or tamarind concentrate (see Cook's Note)
1 to 3 tablespoons sriracha (depending on desired heat level)
1 tablespoon lime juice
3 tablespoons vegetable oil
1/4 cup cubed extra-firm tofu (1-by-1/2-inch cubes)
6 ounces chicken breast, cut into 1/2-inch cubes
1 shallot, thinly sliced
1 large egg, lightly beaten
1/2 red bell pepper, cut into thin strips
1 cup mung bean sprouts
3 thin scallions, cut diagonally into 1-inch pieces (see Cook's Note)
1/4 cup roasted peanuts, chopped
1/4 cup fresh cilantro leaves
Lime wedges, for serving

Steps:

  • For the noodles: Cook the noodles according to the package instructions.
  • For the sauce: Stir together the fish sauce, brown sugar, tamarind, sriracha and lime juice in a small bowl until well combined.
  • For the stir fry: Heat the oil in a large nonstick skillet over medium heat. Add the tofu and cook, stirring occasionally, until lightly browned, 4 to 5 minutes. Push the tofu to the side, allowing the excess oil to drip down into the middle of the skillet. Add the chicken and shallots and cook, stirring occasionally, until the chicken is opaque and cooked through, 4 to 5 minutes. Push to the side with the tofu, allowing the excess oil to drip down into the middle of the skillet. Add the beaten egg to the skillet and cook, stirring occasionally and chopping to break up, until cooked through, about 30 seconds. Push the egg to the side with the tofu and chicken. Add the peppers to the skillet and cook just to soften slightly, about 2 minutes. Add the noodles, bean sprouts, scallions and sauce to the skillet. Combine the tofu, chicken and egg into the ingredients and stir fry, coating the ingredients with the sauce, and simmer to thicken, 3 to 5 minutes.
  • Pile the stir fry onto a serving plate and top with chopped peanuts and cilantro leaves. Serve immediately with lime wedges.

2/3 cup chicken stock
1/2 cup ketchup
1/4 cup fish sauce
2 tablespoons granulated sugar
2 tablespoons cornstarch
1 teaspoon grated lime rind
2 tablespoons lime juice
1 teaspoon hot pepper sauce
14 ounces wide rice stick noodles (about 1/2 package)
4 teaspoons vegetable oil
2 eggs, lightly beaten
1 lb boneless skinless chicken breast, sliced
4 carrots, thinly sliced
1 red bell pepper, sliced
2 garlic cloves, minced
1 tablespoon minced ginger
2 cups bean sprouts
2 green onions, sliced
1/4 cup chopped unsalted peanuts

Steps:

  • In large bowl, soak noodles in warm water for 20 minutes; drain and set aside.
  • Meanwhile, in small bowl, whisk together stock, ketchup, fish sauce, sugar, cornstarch, lime rind and juice and hot pepper sauce; set aside.
  • In wok or large skillet, heat 2 tsp (10 mL) of the oil over medium heat; cook eggs, stirring often, for 2 minutes or until scrambled and set. Transfer to plate.
  • Wipe out wok; add remaining oil. Brown chicken, in batches, over medium-high heat. Transfer to separate plate.
  • Add carrots, red pepper, garlic and ginger to pan; cook, stirring, for about 3 minutes or until slightly tender. Add noodles; stir gently for 1 minute.
  • Return chicken to pan. Stir sauce and pour into pan; cook, stirring, for 3 minutes or until thickened, noodles are tender and chicken is no longer pink inside.
  • Return egg mixture to wok along with bean sprouts; toss gently for 1 minute or until heated through. Serve sprinkled with green onions and peanuts.

250 g chicken breasts, trimmed of fat and cubed
1 teaspoon sesame oil
1 tablespoon plain flour
2 teaspoons soy sauce
2 teaspoons ginger paste
100 g mange-touts peas, chopped
100 g baby sweetcorn, chopped
1 carrot, grated
1 onion, chopped
50 g shiitake mushrooms, sliced
1/2 red pepper, sliced thinly
1/2 yellow pepper, sliced thinly
225 g bamboo shoots
225 g water chestnuts
50 g bok choy, shredded
50 g bean sprouts
2 tablespoons fresh coriander, chopped
2 tablespoons unsalted peanuts, crushed
1 vegetable stock cube
1 tablespoon sherry wine
1 tablespoon rice wine vinegar
1 tablespoon tomato puree
1 teaspoon crushed dried red chili
100 ml water
150 ml Thai sweet chili sauce
1 tablespoon lemon juice
125 g udon noodles or 125 g rice noodles

Steps:

  • Mix the chicken with half the sesame oil, flour, half the soy sauce and half the ginger paste and leave to marinade as long as possible (overnight if you can).
  • Combine the remainder of the soy sauce, stock cube, sherry, vinegar, tomato puree, dried chilli, water and lemon juice in a jug.
  • Fry the chicken until brown then set aside.
  • Stir fry the onion, mange tout, baby sweetcorn and red and yellow peppers with the rest of the sesame oil and ginger paste for 2-3 minute.
  • Add half the carrot, the bamboo shoots and water chestnuts and stir fry for a further 2 minute.
  • Add the chinese leaves and half the beansprouts.
  • Add the sauce mix from the jug and the thai sweet chilli sauce and mix well.
  • While you are stir-frying, boil the noodles in a pan of water (usually about 5 min).
  • Drain the noodles and add to your stir fry and mix well.
  • Serve in bowls and garnish with the remainder raw carrot and beansprouts and the coriander and peanuts.

This is another 'whip up at the last minute' ideas... I made it with all organic ingredients and sauces (other than the Sriracha- a spicy 'Asian Ketchup' which, if you don't have- you MUST get- and the jiff, which you will NEVER get me off of- I will never do organic peanut butter- that is the one thing I REFUSE to give up- haha). It's a pretty easy rendition, but it went over really well at a last minute dinner party!

8 ounces Thai rice noodles (Thai Kitchen Brand- 1/2 box)
2 eggs
3 (6 -7 ounce) boneless chicken breasts
1/2 cup paad Thai sauce ("Thai Kitchen" Brand)
1/2 cup organic peanut sauce
2 tablespoons creamy peanut butter (Jiff)
6 scallions, diced
1/4 teaspoon garlic
1 lime (quartered)
1 cup bean sprouts
1 teaspoon red pepper flakes
2 -3 tablespoons sriracha sauce
1/2 cup chopped dry roasted peanuts
6 tablespoons diced scallions (to garnish)

Steps:

  • Either grill chicken on your Foreman grill and transfer it to a large sauté pan, or sauté the chicken, cut it into cubes and replace into pan --.
  • in a separate pan, scramble two eggs and set aside.
  • Add COOKED chicken, garlic, scallions, red pepper flakes, peanut butter, and both sauces, siriracha, and squeeze 1/2 of lime into sauté pan. Simmer 5-10 minutes.
  • boil a large pot of water and when rapidly boiling, drop in 1/2 package of rice noodles. Remove from heat and stir occasionally- letting sit 10 minutes. When finished, drain and rinse noodles with cold water.
  • Add noodles to sauce and chicken mixture. toss and cook noodles and sauce 3 minute.
  • Add bean sprouts and egg and cook another 2 or 3 minutes. (IF NECESSARY, ADD EXTRA PAD THAI SAUCE OR PEANUT SAUCE TO GET IT TO THE SAUCE CONSISTENCY THAT YOU NEED, I AM GUESSING ON THE MEASUREMENTS- I PRETTY MUCH EYEBALL EVERYTHING).
  • Serve garnished with lime wedge and sprinkle with extra scallions and crushed peanuts.
