One Pan Salmon and Asparagus with Garlic Herb Butter image

This one pan salmon and asparagus is so quick and easy to prepare and you'll have dinner on the table in 25 minutes!! The garlic-herb-lemon butter melts coating the salmon and asparagus with amazing flavor. You'll savor every bite!

1 1/2 to 2 lb salmon filet
2 bunches (2 lbs asparagus)
Salt and Black Pepper
1 Tbsp Olive Oil (to drizzle asparagus)
1/2 large lemon (sliced into rings for garnish)
6 Tbsp 85 grams* unsalted butter, softened (**see quick softening tip)
2 Tbsp fresh lemon juice (from 1/2 large lemon)
2 garlic cloves (pressed)
2 Tbsp fresh parsley (finely chopped, plus more to garnish)
1 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 450˚F with oven rack in top third of oven. Line a large rimmed baking sheet with parchment paper and trim paper so edges to fit the pan, otherwise it can char in the oven, especially when broiling.
  • In a small bowl, mash together all flavored butter ingredients, mashing and stirring until lemon juice is incorporated into butter then set aside. It takes a couple minutes but it will come together.
  • Place salmon filet skin-side-dow in the center of your baking pan. Rinse asparagus and break off fibrous ends by holding the base end and breaking it wherever it snaps. Arrange asparagus around salmon, drizzle asparagus lightly with olive oil. Roll asparagus to coat lightly in oil and sprinkle both asparagus and salmon with salt and pepper.
  • Spoon and spread 3/4 of butter mixture over salmon. Dot asparagus with remaining herb butter. Scatter with slices of lemon and bake at 450˚F for 10-12 mins (smaller 1 1/2 lb thinner fillet will take 10 min and a larger 2 lb fillet will take 12 min), then turn the oven to Broil on High and broil 2-3 minutes to give the salmon a golden glow. Bake until salmon is flaky and cooked through.

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Line a rimmed 9x12-inch baking sheet with parchment paper and grease with cooking spray. Place salmon fillets and asparagus in a single layer.
  • Combine olive oil, lemon juice, and garlic in a bowl. Drizzle garlic mixture over salmon and asparagus. Season with salt and pepper. Place lemon rounds on top.
  • Bake in the preheated oven until salmon flakes easily with a fork, 15 to 20 minutes.

1 1/2 lbs medium uncooked peeled de-veined shrimp
1 lb thin asparagus
1 tablespoon olive oil, split
3 -4 fresh garlic cloves, minced and split
1/4 teaspoon salt, asparagus
1/2 teaspoon salt, shrimp
1/4 teaspoon pepper, split
1/4 teaspoon paprika
1/8-1/4 red pepper flakes
2 lemons
3 tablespoons butter
brown rice

Steps:

  • Preheat oven to 400 degrees F.
  • Line a cookie sheet with foil. Clean asparagus, trim ends and place on foil. Mix 1 tablespoon olive oil, 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon pepper. Drizzle over asparagus and toss until evenly coated then line asparagus in a single layer. Roast for 4-6 minutes depending on thickness.
  • Clean and remove tails from shrimp.
  • Remove pan from oven and push asparagus to one side of the pan (keep in a single layer). Mix 1 tablespoon olive oil, 2-3 minced garlic cloves (or more to taste), 1/2 teaspoon salt, 1/4 teaspoon paprika, 1/8 teaspoon pepper, 1/8-1/4 teaspoon red chili flakes and fresh parsley. Toss shrimp in mixture until evenly coated then line shrimp in a single layer.
  • Melt butter and drizzle over shrimp and asparagus. Roast for 6 minutes or just until shrimp is opaque.
  • Remove pan from oven and drizzle with lemon juice. Season with additional salt and pepper to taste. Serve with pasta, rice, etc.

4 boneless skinless salmon fillets
salt and pepper to taste
1 pound asparagus, ends trimmed
1 lemon thinly sliced ( plus additional wedges for garnish )
1/2 cup butter, at room temperature ( I used parkway stick )
3 teaspoons Italian seasoning
3 teaspoons minced garlic
fresh thyme or parsley, for garnish

Steps:

  • Season salmon generously with salt and pepper on both sides. Arrange one salmon fillet and 1/4 of the asparagus in the center of a foil pack. Repeat with remaining salmon and asparagus on 3 other foil packs. ( I only used 2 pieces of salmon and 1 pound of asparagus and only 1 piece of foil it was just 2 of us ). Spray the foil lightly with cooking spray. Lay a few thin slices of lemon top with salmon and asparagus. In a small bowl mix butter, Italian seasoning, and garlic. Drop large dollops of the herb butter on top of the salmon and asparagus. Fold the foil tightly. Grill over medium high heat for about 15 minutes, or bake at 400 for 20 minutes, until asparagus is tender and salmon is flaky. Drizzle fresh lemon juice over top and serve with thyme or parsley.

400g new potato, halved if large
2 tbsp olive oil
8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets, about 140g/5oz each
handful basil leaves

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

This recipe is so easy!! I have made the garlic herb butter for years. I experimented with the butter and skinless salmon filets. My friend loved the leftovers and asked for the recipe so I thought I would share it.

4 salmon steaks (skin removed)
5 tablespoons garlic butter (recipe below)
1 small onion, diced
1 garlic clove, minced
2 lemons, juice of or 1/4 cup bottled lemon juice
kosher salt
pepper
1/4-1/2 cup heavy whipping cream or 1/4-1/2 cup milk
1/2 cup unsalted butter, softened
2 garlic cloves, finely minced
1/2 teaspoon paprika
1/8 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon kosher salt

Steps:

  • For butter, mix all ingredients in a food processor or by hand with a rubber spatula and store covered in the refrigerator until ready to use.
  • Salt and pepper both sides of salmon.
  • Melt butter in non-stick pan. Saute onion and garlic until soft, approximately 3-4 minutes.
  • Add salmon steaks to the pan, pushing onions and garlic to the side and around the salmon. Cook salmon approximately 4-5 minutes and then flip.
  • Add the lemon juice, squeezing over the salmon as it cooks.
  • Cook salmon an additional 4-5 minutes or until it flakes easily. Remove salmon from the pan and keep warm.
  • Add another 2-3 Tablespoons of butter to the pan. Allow to melt before adding cream or milk.
  • Bring butter/onion/milk mixture to a simmer. Simmer 1 - 2 minutes until slightly thickened. Pour over salmon steaks and serve. Garnish with parsley if desired.
