Steps:

  • Whisk together the mayonnaise, sour cream, blue cheese, buttermilk, chives and garlic. Season to taste with salt and pepper in a small bowl. Cover and refrigerate until ready to serve.

I got this recipe from "The Barbecue Bible", by Steven Raichlen. Haven't tried this yet, but wanted to save it with my recipes, as my family loves wings. Time does not include 4 hour marinading time.

12 chicken wings, whole (about 2 1/2 -3 lbs)
1/4 cup peanut oil
1/4 cup fresh lemon juice
1/4 cup Worcestershire sauce
1/4 cup australian beer, such as Foster's
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons peanut oil
1 onion, finely chopped (small)
1 garlic clove, minced
2 teaspoons fresh ginger, minced (fresh)
1/2 teaspoon red pepper flakes
1 cup ketchup
1/3 cup australian beer, such as Foster's
2 tablespoons fresh lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
1 tablespoon dark brown sugar, firmly packed
1 tablespoon honey
2 teaspoons soy sauce
1 teaspoon dry mustard
1/2 teaspoon black pepper

Steps:

  • Rinse the wings under cold running water, then drain and blot dry with paper towels. Make 2 or 3 deep slashes, to the bone, in the meaty part of each wing. Place the chicken in large nonreactive bowl and then stir in next 6 ingredients. Cover and let marinate, in the refrigerator, for 4 hours, turning the wings occasionally.
  • Meanwhile, prepare the barbecue sauce. Heat oil in a medium-size heavy saucepan over medium heat. Add onion, garlic, ginger and hot pepper flakes and saute, stirring with a wooden spoon, until the onion and garlic are lightly browned, about 5 minutes. Stir in remaining ingredients and bring to a boil. Reduce heat to low and simmer the sauce gently until thick and richly flavored, 10 to 15 minutes, stirring occasionally. Remove from heat and measure out about 1 cup. Set it aside for serving.
  • Preheat the gril to medium-high.
  • When ready tto cook, oil the grill grate. Drain the wings and arrange them on the hot grate, pulling them open to expose as much skin as possible to the flames. Grill, turning several times with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all. Start brushing the wings with sauce the last 5 minutes, then transfer to a platter and brush with sauce again.
  • Serve accompanied by the reserved sauce.

2 cups root beer
2/3 cup ketchup
1/2 cup packed light brown sugar
2 tablespoons fresh lime juice
2 cloves garlic, grated on a rasp (not minced)
One 2-inch piece fresh ginger, cut into 1/4-inch discs
1 ghost pepper or habanero pepper, pierced with the tip of a knife
1 1/2 cups all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground black pepper

12 chicken wings, tips intact and not trimmed
Peanut or vegetable oil, to fry
2 lime wedges, for garnish
2 to 3 tablespoons black sesame seeds, for garnish

Steps:

  • For the glaze: In a pot on medium-high heat, add the root beer, ketchup, sugar, lime juice, garlic and ginger. Whisk together until the mixture begins to boil and the ketchup and sugar are dissolved into the root beer. Lower to a simmer and when it begins to reduce in volume and thicken, turn off the heat and add the pepper. Allow to steep in the residual heat for 10 minutes, then discard the pepper and stir the glaze.
  • For the wings: In a large paper bag, add the flour, cornstarch, a nice pinch of salt and a few grinds of black pepper. Crimp it shut and gently toss it to mix the contents. In batches, add a few wings and toss them from side to side to fully coat. Remove to a wire rack and allow to rest until the flour soaks into the skin, about 15 minutes. Repeat the process for 2 dry coats. After the second resting period, the wings are ready to fry.
  • In a deep fryer or deep heavy pot, add enough oil to fill to about 4 inches. Heat the oil until a deep-fry thermometer registers 350 degrees F. Add the wings in batches to keep the temperature and fry each batch 12 minutes. Remove the wings to a paper towel-lined plate and sprinkle immediately with a pinch of salt.
  • In batches, add a bit of the glaze to a large bowl and a few wings, then toss them to coat. Remove the wings to a platter, top with a spritz of lime and a sprinkle of sesame seeds and serve.

Another recipe I found in Steven Raichlen's "The Barbecue Bible" and this is what he states about the recipe: "The United States isn't the only place where beer and barbecue are inextricably interwoven. In Rio de Janeiro, I came across this savory grilled chicken, which owes its exceptional succulence to a two-day bath in beer. Try, if possible, to find a Brazilian beer if you can: Antarctica (a pilsener-style brew) will produce a mild-flavored chicken; Xingu Black Beer (a dark bitter stout) will produce a bird with a rich, malty flavor. Serve with Crazy Rice or Brazilian Black Beans with Bacon. Note: Time doesn't include the 6 - 48 hours for marinating.

1 chicken (3 1/2 to 4 pounds)
salt, coarse (kosher or sea)

Steps:

  • Combine the beer, oil, mustard, paprika, and pepper in a large nonreactive bowl and whisk thoroughly to blend. Stir in the onion, garlic, and bay leaves.
  • Rinse the chicken pieces under cold running water, then drain and blot dry with paper towels. Add to the marinade in the bowl and turn to coat. Cover and let marinate, in the refrigerator, for 6 hours or up to 2 days (the longer the better), turning the pieces occasionally.
  • Preheat the grill, using the two-tiered method.
  • When ready to cook, remove the chicken pieces from the marinade, reserving the marinade, and blot dry. Season the pieces generously with salt. Oil the grill grate and arrange the chicken, skin side down, on the grate over the hotter section of the grill and cook until the skin is golden brown and the meat is cooked through without any trace of red at the bone, 8 to 12 minutes per side. If you get flare-ups, move the chicken to the safety zone until the flames die down. During the first 10 minutes only, brush several times with the reserved marinade.
  • Transfer the chicken pieces to serving plates and serve immediately.

2 cups ketchup
1 1/2 cups molasses
1/3 cup apple cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons sugar

black paste food coloring
blue paste food coloring
green paste food coloring

Steps:

  • Preheat the oven to 350 degrees. Boil the chicken wings for twenty minutes in a large pot. While the wings are cooking, prepare the sauce. Whisk together the ketchup, molasses, vinegar, Worcestershire sauce, sugar, hot sauce, salt, and pepper until smooth in a large roasting pan. Add enough black, blue, and green food colorings to the sauce to make a dark black sauce. Place the pan in the oven and bake for 10 minutes, stirring once.
  • Drain the wings well and add them to the sauce and toss to coat evenly, poking the wings liberally with a fork.
  • Bake for 20 minutes, then increase the temperature to 450 degrees. Toss the wings in the sauce again to coat evenly. Bake until the sauce is thickened and slightly blackened, flipping the wings over occasionally, about another 15 minutes. Serve hot or at room temperature.
