ONE PAN CHICKEN AND BROCCOLI
One Pan Chicken and Broccoli is sweet and juicy; perfect for any night of the week!

Steps:
- Preheat oven to 400 degrees. Line a baking sheet with foil and spray with non-stick cooking spray.
- Whisk together 2 tablespoons olive oil, melted butter, honey, brown sugar, mustard, garlic, oregano and basil, a dash of salt and pepper in a small bowl. Set aside.
- Place the potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil, and season with salt, pepper, and garlic powder. (no need to measure, just sprinkle across the top)
- Toss to coat and arrange in a single layer on one side of the baking sheet.
- Reserve 1/4th cup of the honey garlic sauce for later use.
- Lay your chicken on the other side and brush both sides with the remaining honey garlic sauce.
- Bake in the oven for 30 minutes.
- While the potatoes and chicken are baking, mix 1 tablespoon of olive oil with the 1/4th cup of the honey garlic sauce and toss to lightly coat the broccoli.
- Remove the chicken and potatoes after 30 minutes and pour the broccoli on top of the potatoes. Using a large spoon, carefully mix the broccoli and potatoes together.
- Bake for an additional 15 minutes or until the chicken is no longer pink, and the potatoes are fork tender. (depending on the sizes of your chicken breasts, you may need to remove one or two before the potatoes are done)
- After 15 minutes, turn the oven to broil and broil for 3 to 4 minutes or until things are a bit caramelized.

- Place baking sheet in oven and preheat to 500°F for at least 15 minutes
- Season the chicken and potatoes: Combine the chicken and potatoes in a bowl. Sprinkle with 1/2 tablespoon of oil, paprika, garlic granules, onion granules, 1/2 teaspoon of the salt, pepper, and cayenne. Use your hands to toss the chicken and potatoes with the oil and spice, mixing until everything is evenly coated.
- Add the broccoli: Toss the broccoli in a clean mixing bowl with the remaining 1/2 tablespoon of olive oil and sprinkle with the remaining 1/4 teaspoon salt. Remove the pan from oven (and close the oven door so the heat doesn't escape). Use tongs to flip the chicken and potatoes. Arrange the broccoli on the pan around the chicken. Roast for another 15 to 20 minutes until the chicken is cooked through and registers at least 165F in the thickest part of the thigh. The potatoes and broccoli should also be tender.

ROSEMARY CHICKEN WITH BROCCOLI AND POTATOES
This is sooo healthy and tastes sooo good! And a one-dish meal to boot! Boneless chicken breasts work just as well as bone-in (same cooking time), and don't worry if you don't have any vermouth or wine, I hardly ever make this using alcohol and I never feel like there is something missing. Green beans or asparagus can be used instead of broccoli.

- In a medium pot of boiling water, cook the potatoes for 5 minutes to blanch.
- Drain well and set aside.
- Meanwhile, on a sheet of waxed paper, combine the flour, 1/4 tsp black pepper, 1/4 tsp sale.
- Dredge the chicken in the flour mixture, shaking off the excess.
- Set aside.
- In a large nonstick skillet, heat the oil until hot but not smoking, over low heat.
- Add the garlic, rosemary, and red pepper flakes, reduce the heat to low and cook, during the garlic frequentl, until the garlic is golden, about 4 minutes.
- Increase the heat to medium, add the chicken, and cook until golden brown, about 2 minutes per side.
- Add the vermouth to the pan and cook until the liquid is reduced by half, about 1 minute.
- Add the broth, potatoes, remaining 1/4 tsp of salt and black pepper, and bring to a boil.
- Reduce to a simmer, cover and cook until the chicken is almost cooked through about 17 minutes.
- Add the broccoli and cook, uncovered, until the broccoli is crisp-tender and the chicken is cooked through (about 3 minutes longer).

- Cut broccoli and potatoes into small pieces and place on either side of a sheet tray.
- Place two whole chicken breasts in the middle of the sheet tray. Drizzle the vegetables and chicken with olive oil (all but 1 tablespoon).

- For the base, melt the butter in a saucepan, stir in the flour and cook for a few mins, stirring all the time. Now, using a whisk or spatula, carefully stir in the milk, a little at a time, making sure the sauce stays smooth. Bring the mixture to a simmer and cook for a couple of mins until it thickens - it will be very thick. Turn the heat right down and keep cooking for 5 mins, stirring often.
- Meanwhile, heat the oil in a non-stick frying pan and fry all of the chicken in batches until it starts to colour lightly at the edges. Scoop out each batch of chicken and put it on a plate. Add the onion to the pan if you are using it, and cook over a low heat until soft. Add the chicken and any juices and the onion to the white sauce, fold it in and cook the mixture for a further 15 mins or until the chicken is cooked through. If you're making the base ahead of time, you can leave it to cool at this stage then freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)
- Heat oven to 180C/160C fan/gas 4. Cook the potatoes in boiling water for 10 mins, then drain and cool a little before slicing thickly.
- Meanwhile, cook the broccoli until tender, then drain. Heat the chicken base with the stock in a pan until it is just beginning to bubble, then stir in the tarragon (if using) and the mustard. Fold in the broccoli and peas. Tip the chicken mixture into a dish and arrange the potato slices on top, then dot the butter over. Bake for 30-35 mins or until golden.

- Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. Pour in 900ml boiling water, then add the stock cube and pasta along with some seasoning. Bring to the boil, then cover and simmer for 8 mins.
- Stir in the peas and broccoli for the last 4 mins of cooking time, and replace the lid. You might need to increase the heat slightly to get the temperature back up to a simmer. Add a splash more water if the pasta is looking dry. After 4 mins, remove the lid and reduce the heat to low, then stir in the crème fraîche. Taste for seasoning. Remove the pan from the heat and stir through the lemon juice, parmesan and mint leaves. Finish with some extra parmesan, if you like.
