The Best Coffee Cake Recipe Ever image

Grab a cup of coffee and get ready for the best coffee cake ever! Soft vanilla cake with a sweet cinnamon layer inside, topped with buttery crumb topping!

3/4 cup light brown sugar
3/4 cup all purpose flour
2 teaspoons ground cinnamon
6 tablespoons butter, melted
1 cup light brown sugar
1 1/2 tablespoons ground cinnamon
1 cup all purpose flour
1 cup butter, room temperature
1 cup granulated sugar
2/3 cup light brown sugar
3 eggs
1 tablespoon vanilla extract
3/4 cup sour cream
1 teaspoon kosher salt
3 teaspoons baking powder
1 1/4 cup milk
3 2/3 cup all purpose flour
1 cup powdered sugar
2-3 tablespoons milk

Steps:

  • Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray. Set aside.
  • In a medium bowl prepare the cinnamon filling by whisking together the brown sugar, flour, and cinnamon until combined. Set aside.
  • To prepare the crumb topping, mix together the melted butter, brown sugar, cinnamon, and flour in a medium bowl until it resembles coarse crumbs. Use your hands to mix to form larger crumb pieces. Set aside.
  • For the cake, mix the butter, granulated sugar, and light brown sugar in the bowl of your stand mixer fitted with the paddle attachment on medium speed for 2 minutes until light and fluffy.
  • Add in the eggs, vanilla, sour cream, salt, and baking powder and mix for 1 minute until combined and smooth, scraping the sides of the bowl as necessary.
  • Turn the mixer to low and add in the flour and milk in alternating portions, beginning and ending with flour. Mix until just combined and smooth, again, scraping the sides of the bowl as necessary.
  • Spread half of the cake batter into the prepared pan. Sprinkle the cinnamon filling evenly on top of the batter. Carefully spread the remaining cake batter on top of the cinnamon layer. Evenly sprinkle the crumb topping on top.
  • Bake for 40-45 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
  • Remove cake from oven and place pan on a wire rack to cool completely.
  • Whisk together the powdered sugar and milk until smooth and drizzle on top of the cooled cake. Or alternately sprinkle with powdered sugar instead of making the icing.

This was one of my favorite recipes that my mother-in-law made when we would go visit her. My mother-in-law was a wonderful cook. It reminds me of the "famous Racine Kringle Coffee Cakes" from Racine. Wi.

Number Of Ingredients 8

4 cups flour
3/4 cup milk
1 package dry yeast
1/4 cup warm water (110 on candy thermometer)
1 cup margarine
1 tablespoon sugar
1 teaspoon salt
2 (12 ounce) cans solo pie filling, of your choice or 2 (12 ounce) cans preserves (if you don't have "SOLO" fillings inyour area.)

Steps:

  • Mix flour, salt and sugar in a large mixing bowl.
  • Add margarine and beat just until crumbly, like for pie crust.
  • Dissolve yeast in warm water.
  • Pour yeast and milk into flour mixture and mix, it will come together quite radidly.
  • You can wrap in wax paper and put it in the refrigerator overnight or you can cut it in half and roll it out thin and fill with the"SOLO" filling, Fold front third to the center and then the back third over.
  • Fold the ends over and pinch to seal.
  • Place on cookie sheet and let rise for 30 min.
  • It doesn't rise a lot.
  • Bake at 325 degrees for about 30 min.
  • Make a frosting with butter, powdered sugar, and milk.
  • Can be frozen and frosted later if you wish.

This was given to me from a dear friend of my mother's. Everytime I've made these cookies they turn out, the first ones setting up before I've spooned out all othe the others. Do not double this recipe. And using Splenda instead of sugar won't turn out as well.

  • Heat over medium until the mixture comes to a full boil.

This chocolate cake is absolutely thee best we have ever had. It is so moist and rich, I never make anything else (unless I am short on time :) The frosting recipe included goes perfectly with this cake, but you can use any frosting you like. Try this once and you'll see why I call it "The Only Chocolate Cake Recipe You'll Ever Need"!! Adding 2/18/06: I want to note that I recently used sweetened whipped heavy cream with vanilla and it was just as fabulous as the frosting recipe listed, plus much easier. I also used hazelnut coffee in the cake and it added even more of a little extra something!

1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup unsweetened cocoa powder

1 cup vegetable oil
1 cup hot coffee
1 cup milk
2 large eggs
1 teaspoon vanilla
1 cup milk
5 tablespoons all-purpose flour
1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 325°F.
  • In a large mixing bowl, sift together dry ingredients. Add oil, coffee and milk and mix at medium speed for 2 minutes. Add eggs and vanilla and beat 2 more minutes. Expect batter to be thin.
  • Pour into a 9" x 13" greased and floured pan or 2- 9" round pans. Bake 9 x 13 pan for about 45 minutes or 9" pans for about 30 minutes. Cool in pans for about 15 minutes and then cool completely on racks.
  • While cake is cooling make the icing: Combine the milk and flour in a saucepan and cook over low heat until thick, whisking constantly. Cover and refrigerate until chilled.
  • In a medium bowl, beat butter, shortening, sugar and vanilla until creamy. Add chilled milk and flour mixture and beat for 10 minutes. Frost cooled cake and enjoy! The frosting sounds intimidating, but it is worth it! By the way, for some reason, we prefer this cake chilled, right out of the refrigerator. The rich chocolate and cool frosting just seem to taste best this way.

1/2 cup shortening
1 1/2 cups flour
1/2 cup sour milk (you can sour sweet milk by adding 1 tsp. vinegar)

1/4 teaspoon salt
1 teaspoon baking soda
1 cup sugar
1/2 cup boiling water

Steps:

  • Put all ingredients in a bowl (don't mix till last item has been added).
  • Pour into greased cake pan (can be made layer or sheet cake).
  • Bake at 350°F for 30 minutes.
  • When cooled spread with your favorite frosting.
